We used to live in Hangzhou, about one hour south of Shanghai and we picked up a taste for xiaolongbao.  Shanghai is full of great little family owned places that do mind-bendingly great ones.  The first time we visited DTF was in Hangzhou and we thought that their XLB were pretty good, but not the best.

Fastforward a year or so later to DTF in TST.  We arrived at about 6.20 and had a 15 minute wait.  When we left, people were waiting a whole lot longer.  The good thing is that they give you the menu and order card, so that you can make your choices before being seated.  We did this and the three of us ordered some classic xiaolongbao, crab roe XLB, green vegetable dumplings, pork and vegetable spicy wontons, a zongzi and some green beans with pork mince.

After being seated we received good service throughout our meal and our cups of oolong tea were kept filled at all times.  First came the green beans.  They were as you would expect and had a salty umami from the pork.  It is the kind of thing we used to get all the time in mainland China and this was on the money.  The zongzi came out next.  This is a glutinous rice triangle, stuffed with fatty and lean pork, wrapped in bamboo leaf and then steamed.  This was a good one, although quite stiffly priced at $40.  They are normally served in rest stops on bus routes on the mainland and sell for 10 RMB, so quite a hike, but ultimately worth the price.

The two kinds of xiaolongbao came next.  The classic ones were great - savoury soup contained within the perfect thickness wrapper.  Sharing is always so hard with good XLB.  The waitress mixed our vinegar/soy/ginger dipping sauce for us and after emptying the XLB of its soup, the mixture made a perfect refilling of the wrapper.  The crab roe XLB were fine, although I found them a little too crabby.  The balance wasn't quite there between roe and pork.  The wontons were good, as were the other dumplings, but didn't reach the heights of the XLB.

All in all, Din Tai Fung is a reliable option for XLB and other steamed dumplings.  It is not too heftily priced, and delivers where it counts.
