Passed by this acclaimed Michelin-one-star ramen shop in Tsim Sha Tsui and - overhearing a pedestrian comment on the rarity of a very short queue - decided to go in for a quick lunch. Passed by this acclaimed Michelin-one-star ramen shop in Tsim Sha Tsui and - overhearing a pedestrian comment on the rarity of a very short queue - decided to go in for a quick lunch. The restaurant operated on an "open kitchen" format and handled queues efficiently (by asking patrons to pre-order while queuing). I chose ramen in soy soup (shoyu) with onsen egg and 4 slices of pork. The fragrance of the soup base blended very well with the added black truffle, the ramen consistency was to my liking, the pork slices were tender though a bit fatty and the onsen egg was quite satisfactory. However, it was a very hurried repast due to the limited seats and the unseen pressure from the ever growing queue. One couldn't help feeling sorry for the chefs who got rudely summoned and interrogated about the noodle contents by mainlanders - there was of course a price to pay for earning tourist gold. The taste was not bad at all but the portions were too small and the meal was pricey with all things considered. Definitely a one-off try.
