Passed by this ramen shop in Shatin and went in simply because of the seat availability. Following the rage of shops serving customized ramen with all sorts of combinations, this place offered its patrons a menu of choices in ramen.
Being a first time customer, I chose the original pork soup base - which was rather rich even with the light and less oily options. The cabbage and seaweed was fresh and crispy and was not soggy. The soft thin ramen noodles were very smooth to the palate and soft to my liking. I chose the pork belly meat purely for its sinfulness, and it did not disappoint me with the melting rinds of fat and very tender texture. A word on the size though, with the default portions it is likely that most clients will have to order the extra $15 portion of noodles to achieve satiety.
The staff was polite and friendly, offering to help with the customized menu and quick to come to one's assistance. Though $83 for a nice but rather small ramen would be considered "not cheap", if not exactly expensive.
