On ramen quest. This tasting brings me to Jordan, an area close to heart. Lunch today was around 2pm. But I wasn't very hungry. It is good I wasn't so hungry because I am getting fat and need to lose some. Sigh. Environment:Very tight space, like any other ramen joint. If I were a bit fatter I wouldn't have been able to squeeze through that crevice between the tables to access my bench. Sigh. We had to scoot over to the adjacent table after we were seated to accommodate a party of 4. No biggie.

Low expectations, no disappointments. Saw one employee shelling those soft-boiled eggs in a large metal basin right in front of me...outside the kitchen. Not that I care/mind. People who come in just want to sit down, get served, quick fix, leave.

There was a rather extensive selection of ramen combos and side dishes. I read up before I came so I knew what I wanted - the signature dark soy ramen with 2 slices of pork, half an egg, seaweed, scallions, kelp, and this other chinese root veg.

I asked the chef to omit the oil that is usually poured on top to keep heat and improve flavour. Yes, that can be done. I tasted the broth. It was hot, peppery (white pepper), quite salty, but lacked depth.
Not saying it's not a good broth. I'm sure lots of ingredients went into it but...when you compare it with Nagahama, you can immediately tell which broth received more time and attention. I don't think the ramen master here was Japanese...
just saying. The broth is supposed to flavour the ramen and turn every mouthful a memorable event but it just didn't happen here.

The ramen itself, however, was quite well-cooked. Softer than 'al-dente', if such comparison is helpful. White ramen. Didn't go all mushy even at the end of the meal, good.


The fatty pork was...really fat. You can see the thick layer of fat snuggling comfortably between the meat. I do not like fat and managed to remove most of the trimmings but discovered that the meat itself had a very high fat content - it is melting in my mouth. Ahhh. Very tender. How it can be improved: more coloring on the inside, or the rim. Maybe broiling it or putting it under the flame for a bit before serving would give it a nice color and char-grilled flavour.

As for the soft-boiled egg, the yolk wasn't very runny, there were some coddled/cooked bits. I discarded that part and ate the white. The white was supple, and very smooth, quite delicate.


I wanted more scallions. They are naturally very tasty.

Omit oil: check.

S had this. I had a spoonful of the toppings and did not find it particularly tasty, nor was the texture particularly pleasing - cooked cucumber and bbq pork are quite similar in terms of texture. But I guess as a dish it worked because you could have a bit of topping with each slurp of ramen. Each bite is more exciting than if you only have 2 slices of fatty pork.

Conclusion:
Not too impressed...won't make a deliberate trip here. Got loads more choices on the island. But, kudos to you for the competitive price!
