We'd always wanted to try hand pulled noodles in HK and finally got to do so.After landing in HK and staying in Tsuen Wan for a couple of days, before heading onto Jordan, we decided to pop in after researching on OpenRice.There was a tiny queue being cleared as we turned up, so we were first in line.  However, we didn't have to wait long, despite being a family of 6.Once inside the smell was amazing.  We ordered the XLB in Omelette dish, which was quickly demolished by all as an entree. But you

There was a tiny queue being cleared as we turned up, so we were first in line.  However, we didn't have to wait long, despite being a family of 6.

Once inside the smell was amazing.  We ordered the XLB in Omelette dish, which was quickly demolished by all as an entree. 

But you really come here for the hand pulled noodles, and as a Gweilo family, to really see what the difference is between hand pulled and every other noodle joint in HK.

We weren't disappointed.  The difference between hand pulled and machine noodles is the same as between bread from a supermarket vs an artisan bakery.  I don't mind supermarket bread, but how much better is artisan bread.  The fatter noodles were bouncy and glossy without being stodgy.  The thinner noodles sucked up all the flavour and were al dente.  The sauces were a meal in their own right.

I would think that great noodles would be lost if the rest of the dish weren't of equal quality, but it was soooooo good.  Bouncy noodles in rich, meaty sauces and meals.
