Good soup dumplings 小籠包 were not something that you could easily find in New York. Joe’s Shanghai in Manhattan was very famous for their soup dumplings, yet I have never been quite impressed by their 小籠包. I had only tried the 鼎泰豐 in Japan when I worked there, and it was a long time ago. I had high hopes for the 鼎泰豐 in Hong Kong, given how Hong Kong excelled in dim sum and dumplings in general. We began our meal with the hot and sour soup 酸辣湯. The version was filled with 竹筍、肉絲、木耳、豆腐, 蛋絲, and a swirl showed that the consistency was just right, not too thick or too thin. The ample ingredients floated in the thick soup base made it a filling and palatable dish, as long as you didn’t mind the particularly strong black peppery note that dominated this hot and not-so-sour soup.
The most anticipated 小籠包 came in a hot basket. At this point I could no longer behold my eagerness to try these little gems and I quickly grabbed one and put it into my mouth. Yet, 抱有太大期望的我是沒有驚喜的感覺. 小籠包的皮雖薄, 但湯汁不多又不燙熱, 最失望是肉餡不夠鬆軟和欠缺鮮味. 整體素質雖屬中上, 但卻沒有想像中出色
擔擔麵的麻醬濃稠適中, 麵質不過淋. We were able to finish this in no time as the small bowl only provided a few delicious slurps.
蝦餛飩湯 was the biggest disappointment of the meal. 小小的蝦仁和死實的豬肉餡完全融合不來 . It’s far from what I considered as delicious. 不合格!
The last dessert, 荔芋小包, was actually our favorite. 芋頭餡是滑而不膩 , 甜味恰到好處, 值得一讚. If it wasn’t that the skin was slightly undercooked (especially the top) and that we needed to have it steamed for a second time, this would have been a perfect ending to the meal.
Service was exceptional and there was nothing to complain about.
While the soup dumplings didn’t reach my expectation, I still think that this is a worthy restaurant with other outstanding dishes. I will surely return in the future.
