I noticed this shop name on the tram months ago and its always sat on my mind as a must try 1 day, but they were really packed before! So it took me half a year later just quite recently, before I convinced others to come all the way to try their Chickens! 太爺雞 ($50 半隻) -
Previously, my personal belief from my research is that 太爺雞 is similar to a Sweetened Soy Sauce plus some Herbs-Spices plus Rose/Rose Wine Poached Chicken - then to be Smoked on the outside afterwards. To me, its kind of a glamourised name for 煙燻玫瑰豉油雞!
However, one of my dining circle's Uncle's told me that the original, authentic 太爺雞 recipe has been lost already. So do you believe it or not? The version we got here had a Rose wine and Sweetish Soy based sauce that 'coated' the fatty chicken. This sauce was great and together with chicken oil was liberally spooned as our 撈飯 sauce. The chicken meat meanwhile did carry some fresh chicken taste! Disappointingly, there was virtually ZILCH of the Smokiness Effect one'd come to expect from a 太爺雞, and the sauce hasn't penetrated into the meat but remain confined externally to its flappy skin!
The chicken meat wasn't too juicy nor tender either, it was overcooked at high heat, although its deemed acceptable by the table. The version I ate at 得龍飯店 was much better yet quite different from here, especially the Smoking part of the Equation though that wasn't perfect too. A similar dish I ate at 金門莊 (娥姐私房菜) was better than here as well, especially with the smoky effect, but I wasn't too happy with that meat tenderness either. So to me personally, if this is the peak of the standard of their SIGNATURE dish at present - it's kinda slightly 雷聲大, 雨點少! This chicken is ok-good if you treat it as 玫瑰豉油雞 and at $50, its value for money.

南乳炸子雞 ($50 半隻) -
Ordered this other Serving Style to try their numerous chicken options available! The skin was slightly crispy but not enough. As expected, the chicken meat in this style was slightly more tenderer, due to the way its cooked and handled! The 南乳 flavour was slightly apparent on the skin but the meat flavour was too under-seasoned plain. The accompanying 南乳 sauce is great however. This chicken was ok only.
I've had a much much more better version at 利苑 earlier this year, that was nearly perfect! I've also had better elsewhere a few times! I would still rate here better than the dry fried chickens I ate on separate occasions at 彭氏 at Happy Valley's, as a comparison.

炒油麥菜 -
This was too oily even considering its expected. Luckily the vegies weren't fried to being 'chewy' but remained crisp.
