I tried ramen at Hide-Chan tonight and love it very much. Indeed It is hard to find Hakata style ramen in Hong Kong. I saw some people compared Hide-Chan with Butao. Hakata ramen(IMG3) originates from Hakata district of Fukuoka city in Kyūshū. It has a rich, milky, pork-bone tonkotsu broth and rather thin, non-curly and resilient noodles. Often, distinctive toppings such as crushed garlic, beni shoga (pickled ginger), sesame seeds, and spicy pickled mustard greens (karashi takana) are left on tables for customers to serve themselves.

Kyushu style ramen is notibly different from other style of ramens because of it’s rich, cloudy and hearty broth that’s mostly done with Tonkotsu (pork bone) broth and sometimes combined with a chicken and/or vegetable broth. Kyushu broth is deep, flavorful and it is balanced nicely with a beautiful sheen of fat on top.

Tonight the service was fine even thought it is the first day of its operation, I definitely will bring all my tomodachi there.
