不過佢開放式廚房有d嘈 聽到d大廚好大聲講野出菜 仲有個無戴口罩

Overall 嚟講 我能同佢期望太高 感覺又唔好真係講到咁好食 可能我揀左d唔好食嘅野🥲 不過環境係靚海景嘅

excellent!excellent!excellent!excellent!Must try if you are a foodie....from complementary appetizers to petit fours! The pigeon was very impressive and photo omitted don't want to spoil it.Their Four Seasons Tea is highly recommended.The staffs were friendly and willing to ask chef to adjust to dietary needs.

来🇭🇰一年多了还没有正儿八经试过一次fine dining朋友认识caprice的chef就帮忙定了周日晚餐 6点半先到了bar喝一杯 当然要选seasonal的cockatail啦 菜单很有趣(图11)但是我的guava比较甜 没有很喜欢 但是cold cuts很好吃(图13)还一人送了一小杯nuts跟olive 服务也是有在水准的dinner time来了(凭记忆随便写写):因为有chef特别安排所以上来就送了一瓶香槟 starter1有标配的鹅肝 salmon 前菜(图1):牛蒡 海胆 鱼子酱 (图2):蟹肉色拉加金箔配鱼子酱 (图3):土豆泥配鱼子酱 简直是实现鱼子酱自由的一晚 三款鱼子酱是不一样产地的 如果没记错第三个是国产的 吃到这里已经撑了其实 主食:(图4):白松露多宝鱼 我问:为什么这个多宝鱼这么厚实 经理答:这个多宝鱼有半个你那么大 (图5):烤乳鸽 这个是放在越南的cocoa里考出来的 可可味很香 上菜前经理端上了整个放在cocoa里的鸽子给我们闻 太赞 甜品:(图7-9):massive dessert...每人两道还有petit最后打包了 而且还有各种Fre

This Michelin three stars restaurant didn’t disappoint me. It was quite an amazing dining experience from the start till the end. Enjoyed a 3 courses lunch menu ($745pp) this time. It was so filling and contented. Really like the harbour view and interior decoration. I love their bread selection so much. You can choose from 4 types of bread: chestnut sourdough, brioche feuilletee, chilli bread, and baguette. I like the brioche feuilletee the most! Love their unsalted and salted butter as well🧈 t

/Green asparagus, coriander cream and Brittany oyster/
Tbh I would rather prefer to have fresh oyster with a few drops of lemon juice😂🙈 the oyster itself was fresh and briny, but personally think that it doesn’t make the best match with green asparagus and coriander cream. I think their 草腥味 make the fishy smell more obvious🥲🤔

我哋個日既開胃小食係 Jerusalem Artichoke 耶路撒冷雅枝竹
巧合地上次去過米芝蓮一星嘅Épure 開胃菜同樣都係雅枝竹
相比起Épure用雪葩做出酸酸甜甜嘅感覺Caprice就有少少相形見絀🥲
廚師將雅枝竹去左個頂 只係留番根部做前菜 個底配一層魚湯啫哩 再配上少少黑松露
味道黎講 其實雅枝竹係偏淡既 個texture似蓮藕 不過就會帶一點淡淡的黑松露味🤣
而下邊既mousse 加埋既味道就好奇特 有少少鮮味又有少少咸味
作為一個開胃菜來講都算係相當Heavy

呢個頭盤擺得真係十分靚 靚到幾乎唔忍心食🤤呢一個絕對係加分位
呢一碟菜主要分咗兩層
👉Toppings 有d燒過既粟米同爆谷 中間粉紅色既就係大黃根 係一種類似西芹嘅植物
👉上層黃色既係粟米燉蛋 帶點微甜
👉下層係鴨肝蓉 有少少似Mousse嘅感覺
鴨肝伴粟米呢一個配搭我都係第一次嘗試
一入口就會食到濃郁嘅鴨肝味 再加一浸甜甜嘅粟米味 非常特別
有別於傳統鴨肝用煎嘅方法 呢一種冷盤上嘅形式會冇咁油膩
但個人認為鴨肝本身已經係一樣比較Heavy嘅嘢 再配埋甜野就有少少overloaded 🤏
雖然廚師已經巧妙咁樣配上大黃根 但係呢一浸小小嘅酸味實在唔能夠中和鴨肝再加粟米甜膩嘅感覺

呢一個馬賽魚湯嘅主角絕對係條魚 經waitress 介紹呢一條魚類似紅衫魚🤣
不論係外觀定係質感都真係同紅衫魚有幾分相似 但佢嘅肉質係非常嫩滑
個湯就稍咸 如果當個湯係汁同魚加埋一齊食嘅話就恰到好處💁🏻‍♀️
呢個湯比較特別嘅係左邊嗰粒圓形啫喱 佢個感覺就有少少似爆珠😂
咬開出面嘅啫喱之後入面就會有少少檸檬醬汁
可以話係幾特別嘅配搭不過我都係唔係太識欣賞😂

一講到湯大家第一時間都會諗起龍蝦湯蘑菇湯等
但其實呢一到嘅青豆湯都有佢嘅精妙之處 佢勝在層次非常之豐富
👉青豆湯打得非常幼滑creamy 一d渣都飲唔到
👉個底有一絲絲既薄荷葉 添加一份額外既清新感
👉有三個杏仁泡沫 會透出淡淡的nuts香味
👉 雲吞皮搓得好薄 煮嘅時間剛剛好令到佢嘅口感煙韌 入面羊奶芝士既羊奶味亦十分重
成個combination 配搭得幾好 個湯幾refreshing 👍
以至於加埋芝士雲吞食都唔會好Heavy balance得唔錯

可能對於主菜既期望都幾大 呢個質素會有少少失望🥲
👉肉質方面
魚肉煎得比較乾 而且個魚本身係偏瘦既品種🥲
肉纖維係比較長 似係柴魚咁 係先天缺憾
👉調味方面
海鮮汁不錯 應該就係拎番海鮮湯加莓類既果汁煮既
味道酸酸甜甜 後勁就食到海鮮既鮮味👍
魚肉上面一粒粒既柚子jelly 再配搭醬汁既味道 調味幾有風味
但都彌補唔到魚肉本身既不足 味道相對平淡
👉配菜方面
茄子煎得稍咸 而鷹嘴泥餅中間既調味就唔係好夠

幾惹味 配牛肉食更突出肉味👍
👉配菜方面
有甘筍 洋蔥 大蔥等 伴碟仲有南瓜泥💁🏻‍♀️
比較Surprise 既係佢甘筍有別於一般餐廳咁切粒上
大家細心啲留意其實佢係將甘筍切左薄片再卷埋放上牛肉
呢個做法令原本爽口既甘筍食落更有層次感
而且個南瓜泥甜甜地 食道菜食落好rich😋

👉開心果雪糕 非常nuttiness
👉焦糖忌廉清淡得來帶些許甜味 而且相當幼滑
👉朱古力軟心蛋糕有非常濃郁嘅朱古力味 蛋糕亦都好軟綿
雖然係三種味道 但係每一樣都可以獨當一面
成個甜品好rich 好balance 令人非常之難忘🤤

Caprice嘅甜品做得非常出色 呢一個亦都係一道非常之有層次感嘅菜式
無論口感同外觀都合乎三星米芝蓮嘅水準
👉頂層嘅係一塊焦糖脆片 帶點粟米味 左上角仲有一片小小嘅金箔 高貴感十足
👉跟住落嚟嘅係吉士醬 可以好清晰咁見到一點點嘅雲呢拿籽
👉而紅色呢一層就係呢一個甜品嘅主角 waitress 介紹嘅時候亦都有提到蘋果切片後經過反覆烹煮 足足煮咗三次🤣
可以好清晰咁樣食到一片片蘋果 但係同樣佢嘅質感都係非常之軟糯 就好似蘋果醬咁
👉最底層亦都有一層酥皮 好鬆脆👍
👉雖然旁邊有雲呢拿雪糕 但比啲雪糕更令我難忘嘅係佢上面嘅一小片朱古力
唔好以為佢只係裝飾用 佢係一塊少少果香味嘅白朱古力
酸酸甜甜嘅口感同蘋果非常之夾

甜品比較令我難忘 不愧係三星米芝蓮餐廳嘅質素
雖然前菜同埋個湯稍微有少少令人失望 但整體嘅食物質素都可以👍
除咗高貴典雅開揚嘅環境之外 令人印象深刻嘅就係服務質素
不論係waitress 細心地用匙羹柄撥走枱面嘅麵包碎 定係即刻用餐巾去蓋住唔小心滴喺枱面嘅醬汁
都令人體驗到一絲不苟 賓至如歸嘅服務態度

普普通通 唔係好amusing
同上次去嘅時候嗰個summer plant同蝦嘅配搭比爭好幾皮

我覺得麵包係每一間fine dining嘅兵家必爭之地
Mono有佢嘅olive oil Gaddis有佢嘅bacon roll Tate有佢嘅sourdough
甚至牛油都可以爭餐死
但係今次成枱人都同意Caprice嘅麵包出晒事
唔熱 唔軟熟 味道同口感都唔討好 真係不了

佢個pear chutney就可以refresh到palate 味道出到個balance
個人覺得好食 但係應該見人見智唔係個個都鐘意佢咁濃味
家母拎咗gaddis嘅foie gras嚟比 話半島嘅lite啲好食啲 冇咁搶後面主菜嘅戲
(但係我覺得foie gras就係應該好rich好overwhelming先係...

Perhaps it’s lunch that I find it’s just mediocre. The best course for me today was the yellow chicken with beetroot variations and pomegranate, the chicken is tender and blends well with sweetness and sourness from the sauce. Other dishes are primarily with cream/heavy sauces which is very filling, I prefer a more thoughtful menu with alternation between lighter and heavier dishes. The warm water also taste like 水喉水,worse than some of the茶餐廳s. But this is a top Michelin restaurants, so I’m more

Seriously even coffee shop these days invest much more in their water filter systems! It’s these tiny little things make the difference between good and the best, and this is definitely not the best.

Service is good though, they are quite accommodating to requests.

湯就試左磨菇湯,磨菇味道好濃,但就無咩驚喜,中規中矩。魚既主菜就叫左時令鮮魚同法式魚肉慕絲,時令鮮魚好實淨,食得出係海魚。而法式魚肉慕絲真係好有驚喜,個慕絲魚味濃得黎又好清新,配埋青口同香檳汁,真係好衝擊味蕾,食完好想再食🤣🤣🤣。
肉類主菜叫左黃油雞同乳鴿,黃油雞好滑好有雞味,加埋紅菜頭食岩岩好唔濃唔淡。乳鴿外脆內軟,一啲都唔老,好嫩,食到廚師係處理火侯既功夫好到位,而且乳鴿食落有淡淡榛子味道,難怪係主打菜,真係好好食。😋😋😋
甜品方面我地order左mont blane 同朱古力焦糖夾心餅,兩款甜品擺盤都好靚,栗子慕絲既栗子味好濃但又唔會死甜,而朱古力焦糖夾心餅外皮好脆裡面既朱古力味好濃加埋焦糖食,岩岩好中和朱古力既苦味。好味到我地兩個人秒速KO左個甜品,食完真係有幸福感🥰🥰🥰。
最後用咖啡同petit four作結,為呢餐劃上完美句號。呢次用餐體驗真係好開心,侍應們真係好細心,每個位都做到剛剛好,令我地食得好自在,而且食物無論味道同擺盤都好出色,難怪可以得到米之蓮3星。

From the start until the end, it was absolutely amazing. I paid extra attention to the finer details - as expectations were high especially for a three Michelin stars restaurant, but they were met. The bread selection was amazing but bordier butter was my highlight - the last time I had this butter was in Paris at L’Avant du Comptoir. From the start until the end, it was absolutely amazing. I paid extra attention to the finer details - as expectations were high especially for a three Michelin stars restaurant, but they were met.


The bread selection was amazing but bordier butter was my highlight - the last time I had this butter was in Paris at L’Avant du Comptoir. There were four types of bread but I decided to try their baguette, brioche and chestnut sourdough, my favourites were the baguette and brioche which match perfectly with the bordier butter.


Amuse-bouche was not memorable to me, but my appetizer - the Foie gras terrine with pear chutney was fresh and flavourful, even better pairing with baguette and not so much the soft brioche that it came with. I had few bites of the beef and oyster tartare with kristal caviar, and the mushroom soup - I was pleasantly surprised by the soup and probably skip the tartare next time.


Mains were on point and enjoyable, but I was not blown away by them, perhaps I was getting too full or there is just room for improvements.


Lastly, I picked the seasonal chestnut mont blanc with cream brûlée and vanilla ice cream on the inside ~ it is very different from the usual mont blanc and ended my lunch on a wonderful note!


I would definitely revisit but how can I physically manage anything more than a three course lunch?

First main係魚🐟,都唔知原來法國菜有咁多ham and cheese 嘅ingredient🤔,與上邊嘅sauce又係用咗ham and cheese🧀,我就覺得唔係幾襯,反而隔離嘅蘑菇闊條麵roll🍝就幾好食,係手工pasta嘅口感,另一個魚嘅dish就做咗mousse,口感有啲似蒸蛋,呢個dish比較上我覺得好食啲

雖然係米芝蓮三星,食物不過不失,傳統法國菜嘅sauce都比較膩,而且portion都幾多,所以食到好滯,我未覺得係去到好驚艷嘅程度😌

You can feel the heart, passion and effort the chef put in the dishes. The preparation work is highly appreciated and you will be moved. If you are a tourist, highly recommend you to go to Caprice, it worths a journey to HK just to try this restaurant. If you had been to quite a few Michelin 3 stars restaurants in HK and around the world like me, this is a place that you would love to come again for fine dining and for special occasions)

--Foie gras, Salmon with Caviar, Crispy potato with Curry (The Crispy potato with Curry surprises us, innovative, but the taste is a bit strong as an appetizer)

-- Beef Tartare with 10g White Truffle – freshly arrived on the day
(If I am to pick on, the white truffle was claimed to arrived on the day. The white truffle had lost some of its scent and flavor compared to what I had ttried in the International Alba White Truffle Fair in Italy in which I tried the freshest white truffle first hand, I know I can’t compare what I had in Alba, Italy with that in Caprice. But still, best chef strive for the best)
- Foie gras with apple
- Live Alaskan King Crab with Caviar & Eatable Gold (Caviar not too salty, preserved and handled well with no fishy smell)

Another long leave to satisfy human resources demand for minimum leave. The good thing is weekdays are so much easier to reserve a table at these popular restaurants. It is quite natural to compare Caprice with L'atelier as both have 3 stars. I got a window seat and was able to enjoy the stunning view while having this lunch. The interior decor was also really lovely. This I have to give points to Caprice over L'atelier.As any Michelin restaurant, their bread was superb and they will kindly ask

As any Michelin restaurant, their bread was superb and they will kindly ask whether you need to refill it . I love their chili bread the most. I would recommend the salted butter for the chili bread while the non-salted one for the croissant.(just personal preference)

Since I was in no hurry, I went for the full 5 course. The server kindly recommended some of the dishes to me
The amuse bouche was quail egg with salmon and potato puree. The yolk was perfectly runny and it could have been a course of meal by itself.

The Brittany scallops were succulent but the celery definitely needs some mentioning. Their celery does not have the typical "grass" flavor that many people dislike.

The Lobster Bisque was extremely rich, almost acting like a sauce for the ravioli. Despite being soaked in the soup, the ravioli still remained al dente.

For the fish, I chose the Wild Caught Fish which was John Dory(something I never tried before). The fish itself was moist with a slightly firm texture. Alone it would have been a bit bland but the bread crumb sauce added a lovely aroma to it and the crust on top gave it its needed  extra flavor.

I initially ordered the pigeon but that day they actually served duck breast sirlon which they forgot to change the menu. It was fine for me. Unfortunately, like L'atelier, they had a miss in their meat. For Caprice, they got the sauce right. However, the duck breast was a bit tough, mainly the bottom part.

Again, it was saved by its dessert. The presentation and chrismassy. The clementine filling inside balanced the sweet chestnut and chocolaet outside and the vanilla ice-cream at the bottom brought both of these contrasting flavors together.

Coffee and Petit Four finally came. Despite the pear flavored puff, passion fruit cheese tart and pistachio chocolate were good, I have to say the petit four of L'atelier is slightly better.
