Signature seafood platter
For the price and you get all these seafood, not a bad idea. In general, it wasn’t the freshest seafood you eat, but it was alright.
The colour was much lighter than my first visit. I was very disappointed.
Lobster bisque
The second try of lobster bisque, definitely had a massive improvement. Great balance between alcohol and the lobster flavour. But 4 diners, 4 bowls of different volume of soup, I thought we were eating fine dining, these minor details count.
The lobster was lacked seasoning, rather tasteless. I quite like the idea of using herb butter sauce, but the idea wasn’t executed well.
No seasoning, tasteless. A rare steak was cooked as medium, rather unexpected at a 5-star hotel. The classic French sauce was nicely made, just slightly too watery. Nice blend between butter, egg yolks, wine and vinegar, the fresh tarragon gave the sauce a kick!
It is still one of the best Thermidor I ate in Hong Kong. It was more burnt than previously. The sauce was well balanced between egg yolks, crème fraiche, mustard and cheese. Again, it was lacking some fresh herbs.
Vanilla crème brulee on the top with chocolate crème brulee at the bottom, a 2 layer crème brulee, not a bad idea.
