本來想去芽莊食碗撈檬, on the way 見到呢個「八番」已由太古城 food court 搬到0黎灣仔, 仲變了獨立店 (而非 counter), 又0黎試試. 店員介紹話佢0地「招牌」係較粗身的麵條 (「平日好多時見到的都係用幼麵, 我0地 d 粗身麵條彈牙 d 0架!」), 結果揀了招牌 (?) 野菜拉麵 ($38) 配豬骨湯底, 加一份溏心蛋 ($8, 一隻).呢度係 food court 運作模式, 坐低睇 menu 就須自己去 counter 買飛, 拎個 number 等食... 溏心蛋個黃又真係幾溏心, 食落幾香甜, 幾乎拍得住九如坊「八千代」0既同類出品, 唔錯唔錯; 拉麵未食已聞到幾濃烈的豬骨湯味又帶點 MSG 的氣味, 正想暗罵之際, 飲落 d 奶白色0既湯又唔係咁 MSG 喎, 係幾真材實料的豬骨湯, 完全唔口渴, 意料之外; 拉麵又真係比起其他地方食到的粗身及扁身少少, 如果幼麵係 spaghetti, 呢度的就係 fettucine 咬落果然幾彈牙, 無鹼水味, 唔錯; 野菜即雜菜, 以椰菜最好食, 爽爽甜甜, 唔錯, 不過有幾多粒粒黑色0野 (炒

咬落果然幾彈牙, 無鹼水味, 唔錯; 野菜即雜菜, 以椰菜最好食, 爽爽甜甜, 唔錯, 不過有幾多粒粒黑色0野 (炒過菜後的「鑊屎」?), 感覺麻麻; 日式魚蛋上有個 8 字, 變晒形的 (!?), 仲有塊叉燒, 無乜味道, 不過有肥有瘦又唔韌, 算啦.

環境 ok, 裝修簡單好坐, 不過經常有小昆蟲0係身邊 / 食物範圍內飛來飛去, 好煩; service 唔錯, 店員們好禮貌, 態度亦殷勤.

$50 有找食一餐拉麵, 勁平. 雖然呢度出品一定唔係我0係香港食過最好食的拉麵, 但比起佢之前0係太古城 food court, 已經進步唔少了, 笑面及味道 4 分照俾新店啦 -- 即使拉麵唔算好得, 起碼隻蛋唔錯!

Reviewing on food is a deeply satisfying mission, often times readers prefer bad places with juicy writing -- the more mean and trashy the better (to read, at least). At a time when everyone can be a food reviewer, me and you and everyone else, bringing a camera with you has its effect, especially on new resturants like Hanchiban Ramen. The service you get may not be king and jester with or without the camera, but at the very least you will be treated differently, even if it's in the slightest bit.

3rd of its opening, with a camera in hand I strolled into this new noodle joint in QRE Plaza, soon to be occupied with a bistro downstairs and a burger joint next door, Hanchiban is one of friendliest of places. The staff smiled and nodded, flurried over the counter to introduce the place, its menu of mixed and match ramens. For soup base pork bone soup is a milky concoction that tastes rich without feeling like drinking butter! Miso soup is so-so while soy-sauce based soup is the color of coffee and may have tasted more than soy-sauce itself. The choice between Thick and thin ramen is difficult, given that I have never considered the thickness of it all, I even wondered if the Ramen I usually have is thick, or thin?!

I ordered a combo meal of vegetable ramen in pork bone soup and 3 pieces of deep fried chicken bites and a mug of green tea. ($46).The minute the ramen arrived it disappointed me as it looks nothing like the picture. And just as I held up my camera ready to shoot this moment of truth, the manager walked right over and nodded politely while carrying the sloppy tray away. Did it just happened, I wondered, that it was not my order? He returned with a new tray of noodles. The bowl is now filled with an architecturally sound pile of fresh vegetables consisting bean sprouts, carrots, bamboo shoots and cabbage. The noodles are right to the touch, and the soup tasted great. Vegetables are crunchy on the bite. Fried Chicken is lightly battered with a Sweet sauce for dip. Green Tea set the palate ready again for another slurp of steamy hot pork broth, also flavored with sesame seed oil. Important note on the piece of brased pork on the ramen. Unlike most noodle joints Hanchiman uses pork belly (rolled and tied up before braising) . The result is a scrumptious slice of interlayering fat and meat. Absolutely amazing.

The manager and staff will come in and check on you every now and then to make sure that you agree with your order. The table next to me ordered "Chinese noodles" with miso base only to realize that their soup base was too heavy for them after 2 bites. Sending it back is absolutely a right thing to do and don't feel embarassed if you absolutely must do.

Dining without the camera a few days after my initial visit was not so easy... I passed my the counter ordering a soy-sauce based thin ramen with minced pork with Gyoza and green tea. The gyoza (fried dumplings) are only satisfactory with chewy outside and the pork filling doesn't taste very pork like. The dumplings were slightly cold on the inside as well. The Noodles were slightly overcooked to mush but I returned it the waitress gave me a stare, one I did not expect to receive in return. The waitress turned to the manager and mumbled something and the manager stared at me too. I summoned the waitress back and returned to my now mushy noodles and slurpped my way through without another word. When I was set to leave the manager came over and reassured me that the noodles are not usually mushy and it could've been a result of too many customers and the staff has not been accustomed to SO MANY people to serve just yet, but things will improve in time. I lookdd over to 2 other tables of customers (with camera taking pictures), their noodles were steamy hot and looking pretty just like the pictures shown on the menu...

In time? I thought, how could a place not be ready when it opens? I took that thought and threw it out the window. Instead, I know now that if you intend to have exactly what you wanted based on the pictures, make sure you have a camera with you, and make sure you sit in one of the comfortable couches in the brown and green dining room and let the staff see you take pictures of your orders...A notepad and pan may help, even if you're just pretending to write something down...at least they may think you're from the press...
