廚房最大的奧秘:稀有的快樂味度

乘著Hong Kong Tatler舉行「香港及澳門最佳食府頒獎典禮2018」,所有星級餐廳老闆及大廚整個星期都忙於四出應酬,我卻樂得去餐廳試菜。主腦人物不在場,有時反更能看出底蘊功夫。一間餐廳‧兩大奧秘一直想來Arcane,並非因為主廚Shane Osborn是首位在英國奪過二星的澳洲籍廚師,而是誠如其名──Arcane的意思就是「奧秘」。奧秘一:Arcane在香港仍未揀星,半低調的選址在中環的安蘭街,有點understated elegant的味道,當其他餐廳大叫生意難做時,Arcane卻其門如市,而且吃過的人總讚不絕口;奧秘二:更令人費解的是,在充滿土地問題、租金昂貴的香港,一般廚師都要每週企足六日、每天在煙燻刀火間賣命十三、四小時,請問還何來熱情和創意?!然而,Arcane卻肯讓廚師每週只返四天半工作天,這樣稀有的餐廳,我真要見識一下! 多謝餐廳特別為我安排坐Chef’s Counter,讓我一邊品嚐四道菜的tasting menu,一邊欣賞廚師們的功架。這晚Shane不在香港,Sous Chef又去了Tatler領獎,我和另一位年輕Sous Chef ── Neal傾計,看得出他是由衷的喜歡在這裡工作,既要睇住大局,又要不住的走位去幫其他同事出菜,舉手投足都充滿熱情。他說最開心的是:Shane雖然嚴格,但對每位同事都會傾囊相授;我問:「連commis (初級廚師)也親自教嗎?」他很大反應:「當然,這裡沒有一樣我們所學的,不是由Shane教的!」然後,我們相視而笑。平實的快樂味度今晚的testing menu很平實:頭盤是日本的fruit tomato、第二道是Shane的首本名菜gnocchi、主菜是以選用朱古力飼養著名的「Mayura」7+和牛、最後的甜品是以柚子、檸檬和柑桔為主調的Yuzu and lemon posset,再配兩杯Antinori的紅酒──可以說,這餐飯毫不吸睛;尤其今時今日市場要求食物要成為劇場 (food as theatre),各大美食頒獎典禮爭相追捧「奇觀」 (spectacle)、「新奇」 (novelty)及「驚喜」(surprise) 等指標時,這餐testing menu卻單純而大膽的呈現食物本身應有的味道。這不是我吃慣或期望的testing menu,它沒有塗脂抹粉去賣「媚」,但在平實中,我感受到廚師的熱誠及生命力。所以說,下廚者的心情如何,品嚐的人是感受到的──有快樂健康的廚師,才煮得出有感染力的料理。奧秘,其實是選擇Neal一邊上碟一邊跟我說:「這一行真的很辛苦,每一道菜都需要用很長時間去預備,若沒有熱情,便只是『cooking』。」我問他:「那你覺得你在做什麼?」他想了想,答:「只能說,有些人是live to cook,有些是cook to live吧。」離開前,我對他們的意大利經理Stefano說:「一間餐廳最大的資產除了食物,更是人才!你們有一隊great team!」Arcane的奧秘,說穿了其實是無數的「選擇」,起碼他們「選擇」讓廚師們有一個健康快樂、平衡生活的工作環境。但願這奧秘不是Arcane的專利,更是我們在品味食物時的關注和思量。…Read More

對自己好一點的法式殿堂選擇
Maison Eight

在九龍區的餐飲概念店中,若論grand和無敵景觀,我以前會若選Ritz Carlton 103樓的Cafe 103、北京道的Aqua,又或者半島的Felix; 但若論創新和多元化,我一定會選新開才個多月的Maison Eight。它不單兩面全落地玻璃,又有露台,最特別之處是分為四個concept spaces:法國餐廳 Esmé、由國際著名調酒師Salvatore Calabrese作顧問的酒吧Salvatore at Maison Eight、夜晚有DJ和live band表演的The Ballroom,和占士邦最愛飲的Bollinger Champagne在世界首間concept room──Le Club 1829。聽落咁巴閉,忍不住約朋友去食lunch。首先很impressive的,不單是The Ballroom那很有英國Convent Garden Victorian style的古銅天花板,還有staff的友善態度,其中的外藉經理是法國南部人,和他閒談幾句法文,知他對boutique wine頗有研究,未食已加分。我在Esmé坐下並ordered了set lunch:首先來的是餐湯──Cream of mushroom soup with whipped Brie,好喝的蘑菇湯我飲過不少,但我第一次飲加了Brie cheese的蘑菇湯,但效果卻出奇地好,既嚐到湯的絲滑、蘑菇的濃香,加上香味濃的化不開的Brie,叫人印象難忘。接著是頭盤──Grilled asparagus, garden salad with avocado,salad本身很低調,正好為濃湯和主菜中間作個調和。然後是主菜──Poached Scottish salmon, dill weed sauce, seasonal vegetables, 以三文魚的嫩滑度,實在烹調得很出色,每一啖都感受到魚脂的肥美。沒有很花巧的plating,但與蔬菜的配搭只覺恰到好處,看得出廚師是走典雅法國風格的路線。最後,當然不能少甜品──Orange and almond cake, orange syrup, 平平無奇的賣相,味道卻別有洞天,很exotic、很醒神,Orange and almond cake充滿熱情的aroma,叫人心情開朗;配上earl grey ice cream,絕對討人歡心!這餐飯最正的,是我還有幸和行政總廚Joe Chan和暢談廚道!據聞他曾任職文華東方,以及法國二星餐廳Hotel du Centenaire,對他由餐具到食材到烹調的一絲不苟,十分欣賞。去餐廳,最緊要讓人有再次光顧的意欲。Maison Eight做到了。…Read More

識食之人的法色家鄉風味飯堂

 食法國菜不單在於食物,更要講究dining experience和attitude。要享受to see and be seen的,你可以去Caprice和Amber; 要感受sense of heritage,我最愛Gaddi's 和Petrus;至於avant-garde的 molecular gastronomy cuisine, 還沒有一間餐廳令我感動過,就算L'Atelier de Joel Robuchon也不外如是。但gourmet cuisine總不能餐餐食,否則吃得多也會累。有時,我也很想念法國南部普羅旺斯那種帶鄉村風味的bistro,不造作、不賣弄,只求專注地演繹傳統的法國風情,讓餐桌上食物是食物,人輕鬆的做回自己。只是,在香港,這樣的法國小餐廳不多, 而煮得傳神的本地㕑師就更屈指可數。直至我在蘇豪發現Bistronomique,因見它掛在門外的餐牌有我至愛的Foie Gras Confit with sautemes gelee, Sauteed Frog Legs, Crispy Tete de Conchon等, 一看便知是功夫菜,於是我便即管入內一試,怎料一食,現在它便成了我的飯堂。Bistronomique賣的是傳統法國家鄉味,所以不要期望會有花巧的presentation,但勝在value for money、真材實料,幾個月下來,餐牌上的食物我已差不多試盡,今次精選幾道菜與大家分享吧:頭盤:Foie Gras Confit with sautemes gelee (即是Foie Gras Terrine),這不同煎鵝肝-煎鵝肝周圍都有得食,但Foie Gras Terrine因製作麻煩,很多餐廳都懶做。但其細滑香純,肉中透出淡淡的酒香,又卻是煎鵝肝所不能比的。Bistronomique 更有心思的配上用索泰爾納酒(sautemes)泡製的小啫哩粒,與一般配搭無花果的組合,又是另一種風味。Lobster Risotto: 雖然我揶揄他們的老闆:「這道不是法國菜喎!」但心想:只要好吃,這又何況呢?這道菜是off menu的special dish,要熟客才會介紹。他們用上很rich的lobster stock 加上香草,未食已香氣滿溢,加上用料十足,全隻龍蝦放在煨滿了肉汁的意大利飯上,邊吃邉品味著幸福。Main course: Pork Shoulder Steaks - 這也是很少餐廳做的傳統法國菜。雖然我不是特別喜歡吃豬,但他們用上黑毛豬,肉質tender、有肉味、又有咬口,加上濃濃的肉汁配上青豆,讓人有齒甲留香之感。Dessert: 這是最失色的地方,太mascular,沒有半絲法色甜品的浪漫和細膩。我已等了幾個月了,希望他們盡快改善吧。無論如何,Bistronomique都是一間超水準的daily bistro。加上他們常有off menu的special dishes,不管帶著什麼心情而去,總會有驚喜。…Read More

中環的租金狂升,大部份的餐廳不能密密加價,便唯有將貨就價;所以一般吃set lunch,我都不會吃牛排,上星期在Soho的Cecconi's不慎叫了碟sole fillet,上碟竟是超市$30的雪魚貨色,真是難吃之極。但來到American Club的The Clippers,見到有black sole fillet,便即管一試──相對於其簡約的自助沙律吧,這碟黑龍脷排無疑精彩得多,首先皮質肥美、魚肉嫩滑,只嫌creamy sauce太膩,若改用cauliflower foam就會無咁expected,和會match好多。The Clippers不是一間氣氛relaxing的餐廳,較適宜食生意飯;在這樣優雅的餐廳食飯,當日卻發生了令我瞪目一事:我和朋友未食完appetitzers,他們便已上main courses,我望著待應,真想問他是否很趕時間!總括來說,來Clippers不會是為他們的食物。然而,若想找一處exclusive而又有understated elegant感覺的地方用膳,這裡可能是你的選擇。…Read More

名過其實的超失望經驗

本來想試其Tasting menu,但後來好彩只order了a la carte,不然真是喊都無謂。首先,環境簡樸;除了我坐下後,他們才開冷氣,我注意到有些吊燈沒有燈泡,也沒補上,更驚訝的是:以他們收價錢的檔次,我難以想像桌椅上會用Ikea般級數的坐墊!心裡雖然咕嚕,但我還是按捺著點菜。Appetitizer點了他們的鎮店名菜──Fried eggs with black truffles──這個材料組合,其實是很難會煮得不好吃的,但實在談不上精彩囉!上碟的賣相okay,有蛋汁及數片薄黑松露,但選用的蛋卻是黃多白少,以致炒出來有硬實的感覺而不夠嫩滑。另外,也吃了waiter大力推薦的Fisherman Stew,即是茄汁香草煮海鮮。遠望見到頗大隻的硯殼,心想還不錯,但怎知細看下,其他的材料全是不堪入目,例如小到如一毫子的蝦毛、五角錢大的帶子......湯底也平凡無奇,毫無層次可言,更莫期望會齒甲留香。結果甜品都不吃,立刻埋單走人。每位$530。永不會再幫襯!…Read More
