之前見到有不少報道,說得天花亂墜,好不威風。今天晚上有車剛好到了堅尼地城,經過此店,心血來潮,也好久沒吃過炸雞髀了。店是小店,店主年輕有禮,兩個人做,小食十款八款,看似都有心做。生炸雞髀,$35,說貴不貴,確也不便宜。晚上六點左右,客三兩個,生炸要等,是常識吧。等了十分鐘就有了,到附近體育館吃,步行5分鐘左右。體積不過不失,目測其實估到有點乾身。有一說一,成隻脾就表面有味而已,個心無味,唔知係無醃定刻意唔做咁夠味?你問我,脆又唔係好脆,汁又唔係話好有汁,味又唔係話好夠味,想點SIZE 又唔大脾,想點😅?$35一隻咁嘅質素,對我嚟講,都幾有落差。有興趣自己試吓。我就無下次啦。…Read More

從「海底」到鍋底,值得「撈」光所有的火鍋料理

自第五波疫情以來,都不知有多久沒吃過好。今日來個山頂短線遊,中環皇后大道就終結了,信步走到銅鑼灣。已不知多少年月沒有踏步此地,好生懷念。惜日光景原來都不知變了多少天。以前時代廣場有一書店是日常消閒之地,卻已不知退出香港幾多年了。走到利園附近,口淡淡想打個邊爐,附近幾乎都是中高食店,確實劉姥姥入觀園,大開眼界。逛了一會兒,還是選了海底撈,從未曾光顧卻又耳熟能詳的店。坐上電梯,開門就有迎賓小姐招呼,好生熱情。店門裝潢亮麗氣派。還好中午前來不用等位。甫坐下負責枱號的店員就招呼周到。先是介紹點餐飲品,餐廳佈局走向,不時提供茶水熱毛巾。如此服務,的確少見。豆漿加$15/位任飲,平心而論還是可以的。先是到自助區自取醬料盤,都頗為滿意。自然少不了自行搭配味碟,當中的調味牛肉醬和素菌醬很朂出色,單買來吃都值。四格湯底先上。竹荀鮮爽。黑毛豬甘香。陸續上菜。幾乎都有指示烹煮時間,如無特殊情況,跟著做就好吃。墨魚膠爽滑。雞肝爽脆。蘿蔔清甜。唯二比較失色的鴨舌。牛小排,價高貨靚,可惜處理失當稍靱。油條,其實不錯的,只是後來有點上火。自助區的水果,大致上都新鮮好食偷影的洗手間,除了洗手液護手液外還有香精,可比酒店級了。後上的饅頭。味道正常,現點現炸就不差,可惜就欠一點火喉。整類而言,以性價比而言,出品需未達完美,但大致上不令人失望。而服務方面令人深有體會,服務業的典型模樣,請間其他店該當如何?…Read More

從「河內」走到大圍,由「越式」Bánh mì到茶記的三文治「料理」

最近跟越式事情結緣了,大開眼界,從沒想過這個曾被殖民統治的國度,經歷分裂後又統一的地方,菜式的特徵是如此鮮明味美。東南亞的香料清新卻又別樹一幟,跟鄰近的泰國柬埔塞等又互相影響,同時又有如法國混血兒的味道身影。今天癮起,到大圍的「河內越式料理」,滿足一下。正值下午茶時間,價錢相宜,配餐飲也很優惠。店內環境尚算整潔,店內裝潢稍有越式味道。記得以前就只有一間店,不經意已發展成幾間店,看來經營有道。招牌越式三文治Vietnamese sandwishes $42首先來到的是Bánh mì ,但這邊賣的是「三文治」。基本上該有的都有,豬肝醬,牛油,青瓜絲,甘荀絲,扎肉,生菜,沙律醬。以外型上,確實無懈可擊。一份兩件,外形有如雄糾糾般的法國男兒。作為下午小吃,兩人分享最滋味。細心一睇,豬肝醬就有點太孤寒了,口感軟滑,但肝醬的味道不明顯,沒能成為整體的擔當。Bánh mì 的靈魂在此,因為越南承襲自法國部分飲食文化,後又改良成為適合當地人的口味。其中法式的法包加入米粉改變硬度。又將法式肝醬改成便宜的豬肝做法,以扎肉替代火腿,以酸甜醃菜替代酸瓜,完美地將法國貴族三文治,易容更衣成道地的Bánh mì ,放下歴史的血腥,感謝文化的沖擊,滿足現在的味蕾。然後扎肉,生菜都是正常發揮。可惜當中的甘荀絲沒有醃漬過,生甘荀的草青味和爽口,在言裡感覺有如萬綠叢中一點紅一樣,格格不入。聰明地再加上沙律醬,就很貼近香港人口味了,越式香茅豬扒 $22(追加小食)追加了豬扒。大件上埸,面頭小許蔥油點綴,已經萬分吸引。質感是稍薄,味道方面香茅味濃,口感上偏向港式豬扒軟淋。三文治內抺上人造牛油,口味方面較膩口。從左到右分別是萬能調味魚露Nước chấm,主要配Phở的甜醬和辣醬此時正好想到枱上的越式調料。心血來潮,自製我的OMAKASE。將豬扒夾入法包內,作為我的豪華版三文治,再加上調味魚露Nước chấm,以彌補生甘荀的草青味,如此一來確實神來之筆。豬扒的油脂滋潤了法包,魚露的鮮爽酸甜又平衡了油膩感同時帶了味道上揚的感覺,一切起承轉合,盡在小盤子上。最後來一點辣醬,豐富味蕾。口味上近似泰式雞醬,口感上卻似茄汁,還是初似認識,日後請多多指教。賣單只是$64,就讓我游走了一趟旅行,心情好不快哉。回望過去,誰又想到法包這個貴族,漂洋過海後在越南落地生根結合成Bánh mì,輾轉又來到香港,結合而成三文治。依我而言,人生也不過一個越式法包,起承轉合,夾在心中的都是甜酸苦辣。…Read More

在晚上五六點時間回到大圍,時間唔上唔落,想坐低食已經無可能,買個外賣係公園食最好。Let’s Burger就mark 咗好耐,今次係第一次,即管睇吓點。餐牌都幾簡單,有啲小食,有個羊堡比較少見。落完order 現場等,大概十分鐘可取。等等吓有蚊滋咬。現場有隻黑貓,相當好奇地望住我,都幾可愛。攞到就係出面食。個盒有設計有諗法,唔會整爛整濕個包又方便拎出,都幾好。個包正常樣子。望落都新鮮靚仔,應該唔差得去邊。失望之一包烘都無烘過,微溫帶乾身。汁醬似係沙律醬加辣椒茄汁,一般。酸瓜兩片。煙肉係奧運牌一類稍微煎過。肉餅大概4安士,稍細,點解咁多食評話大份?整體有肉汁係正常發揮嘅,只可惜肉餅無調味,又無乜肉味,對比麥當當安格斯贏唔到幾多。蕃茄新鮮,沙律菜用綠橡菜都幫到手,個汁醬真係爭啲,個包發揮唔到偏乾身救唔到。肉餅頗多筋。用筋唔係唔得,但要碎得細啲。整體而言,好就唔算得上,性價比都比較弱,最得歡心的是黑貓和外賣盒。…Read More

最後日子在荃灣,在外忙完到西鐵站,有點時間,來個早餐好了。廿一堂,海之戀開了咁耐都無乜食過,好幾間餐廳都有海景,幾好。主店都可以自助形式,自己點餐取餐收碗,但又唔係話好平嘅。出品都算係咁,豬扒個位都靚,調味可以唔鞋,炒蛋正常發揮。所謂肉碎,買之前問有無另上佢話無,我以為點咪又係一匙的多放係面。茄湯底係ok嘅,面就普通,可能跟通粉好啲。整體而言,貴又唔係貴,硬係差啲,你慳咁多人手都係落唔到個客度,食吓景食吓裝修,唔洗俾咩。…Read More

近來到了黃大仙工作,附近要找點吃的,發現商場店大概都不便宜了。勉強選了漁樂。坐低就有的水。暖,但有水銹味,飲了一啖最後洗餐具。點了扒餐,齋啡,多士走油。啡來無影,一來來咗有奶,同阿姐講,佢問我咁飲唔飲,我話唔飲,換咗佢。稍等來返杯啱嘅,呢啲都係連鎖快餐機出的,味道正常大杯嘅。雞扒餐,一來就俾咗油多,又同阿姐講,佢懶醒咁話走油即係齋多,我話係呀,都打咗落單都來錯我知係齋多,又行多轉,稍後來返個啱。雞扒煎都無煎過,炸到乾唒,可能炸得耐咗,稍鹹。調味有蒜味豉油味,其實調味可以始終工場貨唔衰得去邊,如肯正正常常咁煎應該好食。腸仔都正常炸腸啦。雞扒有啲位黑到咁。整體而言,食物肯正經咁整會好食嘅,又唔係咁忙。啲員工就無乜禮貌架啦,三幾十蚊而家都唔係錢。…Read More

今午有事走到三坡坊附近,肚子餓了,發生好幾間餐廳都沒有堂食,有堂食的餵口又不合,想食焗豬扒飯,富華有,又未食過,不妨一試。舊舊地嘅茶餐廳,餐牌都係咁,即管睇吓點。有送湯,大路嘢,比較水。焗豬扒飯,最後等咗25分鐘。我知即焗,但一睇都知無乜焗啦,無啲色水,溶咗啲芝士就算。炒飯都算乾身嘅。豬扒普通嘢,煎都無煎過。梳打粉都嗱到無咩架啦。個汁又淡又無料。其實呢個係燴豬扒飯炒底囉唔該,熱就好夠熱嘅,但似係微波爐嘢,食咗一半就食唔落了。整體而言,無下次。順便講一講,疫情高峰,老闆(有客叫佢老闆)唔帶罩送餐收碟,廚房大佬食住煙煮飯,大家點睇?…Read More

午餐。新不如舊

三年前曾光顧nutmad 的前身,頗為驚艷的用餐體驗。行內人都知道近乎成本價的菜色,以同樣的價錢,附近難有對手能比擬。近來知道此店搬了新舖,進駐翻新商場,不知是何境況?首先裝修風格承襲著工廈韻味,場地大了不少,座位至少80,對於品質保證上已有難度。廚房依然開放,主廚和店經理依然,看得出在細心打點。時間是中午十二點,星期六,人不多,有幸被安排坐吧枱附近。餐牌簡單直接,相信走專門的路線。幾款主力如黑毛豬鞍,卡邦尼依然。飲品定價稍高,還是觀察一下才好。點了一份前菜,臘腸,雞肉,烤餅,一份黑毛豬鞍,一份鱸魚。等了大概十分鐘,途中聽到廚房裡的叫喊,過程來得真實,本應如此。沒想到先上的竟是豬鞍,隨後才到豬鞍,最後竟然是魚。看來廚部的走法是有乜出乜,出到當贏。我當然是前菜先食。整體味道好味,一啖過,最先出來的是是孜然的濃,還有帶酸的辣,走的是墨西哥風的沙律醬,加上蕃茄莎莎的清新,芝士的奶香,臘腸的甜,沙律菜苖的爽,成件事和諧合理,挑剔就係稍貴。再來就試黑毛豬。做法同三年前都相似,份量其實沒差(見有食評話細咗,平心而論有時差少少無辦法)。配菜都有成本,燒新薯好食但少許焦了帶苦味,迷你甘荀稍帶生,為了保存形狀而煮少了一分鐘吧?法邊豆可以,都是酒店用的薯菜。主角西班牙豬鞍,中間帶少粉紅,生熟度可以,肉質本應唔錯,只是少帶乾鞋,相信是煎定有單入爐,水份乾了。面頭有上叉燒醬一類,帶甜醬香味,但太甜了,幾乎嘗不到豬肉的味道,又為了平衡甜味而配帶甘苦的咖啡香料,到底在吃調味還是豬鞍?最後的鱸魚,配的是豆漿,黑醋,透過酸度和時間,令豆漿稍凝固而似是豆花,店員有作介紹,想法是好,效果卻不好。首先豆漿的味道不足,唔講真係唔知係豆漿。第二黑醋太酸基本上食到尾都只有酸味。鱸魚,和豬鞍一樣都乾水了,相信也因為提早準備關係,魚味不足,另外也沒有放鹽,連調味也沒有。魚的處理相信是輕煎焗熟,然後火槍炙燒,可惜皮又唔脆,燒又燒太濃,苦味出來了。而溫度方面,只有室溫到微暖階段,所以食到尾段,魚的腥味出來了,到我走後二十分鐘還在口中徘徊的腥味。魚的面頭放的是青蔥苖,我相信主廚想帶點中式味道,但各方面都平衡唔到。想試珍珠雞,此乃一種帶點野味的走地雞,可惜今天沒有。本來點餐前還打算要多半份西多和飲品,但至此也不算滿意,就此作罷。整體而言,睇到廚師出品有心,但徒勞,因為店太大,員工太多,已不能品控到每一個細節,就如此,每個細節爭一點就爭好遠了。埋單五百幾,無加一,還算不過不失。…Read More

路徳圍又一新頂手舖,上手好似係龍門?見好似有啲裝修,又主賣藥膳醉雞,好似頗有好評,一試無妨。下午五點來到,無客。主要都係配麵同睇個湯底嘅組合,亦有單點,咁行法都係好合理。有紙巾提供真係好評。點了醉雞,藥湯,加蛋,刀削麵。5分鐘左右到,合理時間。熱好夠熱,眼見有啲藥材,當歸,淮山,圓肉。顏色好奶白,無味精,但同時亦都無乜味。我諗應該係用啲浸完雞,起出來的雞殼再大火煲滾到爛晒,隔出來再煲啲藥材,所以本身湯無肉味,得當歸個苦味,簡單啲講,得個樣,自己加啲辣油先食到個麵。刀削麵,759貨式,正常發揮。溏心蛋,好夠溏心,黃夠紅,用嘅係紅心湖北蛋。但就無乜醉酒個味,如果你唔溝埋啲酒汁,隻蛋係無味嘅,唔知係浸唔夠時間定點。個酒汁係ok嘅。所謂醉雞,起咗大部分骨,原全唔掂。首先雞就無味啦,雞味又無,冰鮮就唔洗講啦,你浸佢都俾味丫。然後又原全唔入酒味,即係浸完雞,斬好一份份,有單就淋啲酒汁落去,咁叫醉雞咩?咁叫酒同雞咋喎。醉汁同蛋個個係同一隻味。同場加映廚房師傅上演籍著兩點說愛你😘明白廚房好多都又熱又污糟,廚房大佬食煙唔載口罩乜都有,不過大佬呀,你都搵嘢遮一遮丫,個個都知係污糟邋遢,但唔好俾人見丫嘛。整體而言,真係無改錯名,最弱雞,本來仲想試醉乳鴿,睇嚟都係唔洗啦,咁多好評?打手黎架?…Read More

生記粉麵都開店好一段時間,道聽途說是之前路徳圍雄記新店。之前雄記食過一次,體驗極差,出品差又貴,服務也似唔憂做。疫情當中上了報道話老店執笠可惜,我心諗執笠實在合理。但生記始終第二個名,或者無關?主力做幾樣,點了牛𦟌米線加魚肉。下午四點到,一兩枱客,唔洗等。上菜都好快,大致都正常。仲有少少腐皮。牛𦟌四塊大塊,炆得好食,入味入口即化。湯底都有心機,鹹酸辣有層次。佢無話自己邊門邊派,就係做自己味道,幾好。魚肉春卷。有魚味,有蛋香,當然都有粉啦,但比例合理,途中都有人買一兩條走。記得之前雄記都有,但難食又乾又爛都唔知擺咗幾耐,講真有呢個質素又點會執丫?鹹菜,都真係幾鹹,放少少就好。辣醬,重麻辣,惹味,都係有心機。整體而言,出色米線,價錢合理。…Read More

小食。雞髀包

今日到流水響,行完係粉嶺找點吃的,原來有一麵包店頗有名氣,特意一試。地點不難找。椰撻大大個都係五個半。雞髀包九個半,香港無幾多地方咁平啦。椰撻出色,餡又厚又多,皮又薄,真係好出色。又無出面做得咁甜,食多隻都得。個皮都好鬆脆。雞髀包。先滷好雞鎚再做包,工夫嘢。靚仔。首先個包又好,薄薄地又香又甜,咬一啖雞一啖包,真係幾好。雞髀都滷得好食,滷水好香有層次,真係就咁賣都十蚊啦,而家做埋包先係九個半。真係無言,好食。後尾買多個。整體而言,真係行過路過唔好錯過。唔好就係一盤一盤咁出,我買第二次時賣晒,企係門口等,等十五分鐘左右,一出爐想買,有個客行入去見到就要三個,賣嘢阿姐就執俾佢,我都話咗我黎先,等好耐,賣嘢阿姐又大大聲話我唔知我啱啱返工,三個俾錢。最後行入去想買三個個客表明佢唔知所以唔要唔好意思。其實都係小事,但睇到有時管理都好緊要,同埋排緊隊真係要出聲。…Read More

三多,雞髀界當中都可謂無人不知。大埔店一直都無機會去,早幾年不知道是特許經營權定點,突然多咗好多分店,但單賣雞髀,行唔到好耐,一年多啲又全部執唒。今日又見到名號落户荃灣,睇嚟諗過更新過餐牌,成件事合理得多。有幾款午餐,大路茶餐廳嘢,但要維持日常,係必須的。而家疫情,下午茶8折,算抵食。大餐廳都好似有折。叫咗個下午茶炸脾拼炒麵。炒麵都炒得幾香,係爭啲豉油香。會俾包辣椒油,係幫到手嘅。炸脾等咗一陣,要辣。係上粉脆炸一類,size唔係最大,但啱架啦,起碼入到味又唔會炸咁耐。有汁,即來即炸其實都唔差得去邊。支籤就無乜用,幼得濟你又唔會就咁揸嚟食。調味都係咁,蔥薑蒜咁,算醃得入味。奶茶,本身又無咩期望,但入口又算係咁。俾錢時會折返。整體而言,下午茶想食少少嘢啱唒,無折都可以。…Read More
