To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. Unwilling to serve table for one person. Staff were rude. They called ALL tables for two, skipped tables for one. If you look inside, table for 2 and for 1 basically use the same kind of tables. It was after 2pm, not peak hours. Totally unfair queuing system.

如何難食?

燒賣:豬肉不新鮮,不夠彈牙。

黃沙豬潤腸:豬潤不夠沙,不夠爽;腸份皮軟而鬆散,筷子一夾即散。

陳皮牛肉球:無牛肉味,不吃也罷。

添好運從前用心做點心的那種心機去了哪裡呢?開店經營但出品難吃,對顧客的禍害有多大,有多深遠,開店的人知道嗎?

從此,我的用餐名單中已經刪除了「添好運」了。

抵食,但難食,我都係唔會食;
貴,但好食,再貴我都會食。

Heard a lot about this place, it's noisy, staff aren't the most polite, but the cha siu buns are really worth it. I have had better dim sum elsewhere but not the cha siu buns. A must try.  There wasn't much of a wait when we got there at 8pm.

第一次寫食評,見到Jackall.wai 4日1前標題為“服務態度差”既食評,確切地講出本人今天2016年12月26日下午2點左右到此店既遭遇。接待安排入座果住肥肥地既女職員,態度真係好有問題,登記安排入座混亂。問多句就鬧人。另外,講返食物質素,不錯,夠熱。可惜被這位登記安排入座既職員完全影響品嚐美食既心情。希望老闆或者管理層留意一下。環境方面,地方整體乾淨,衞生。總結,此店食物質素高而且環境衛生地點方便,理應好評如潮。唯獨有部分職員態度必須改善。

最後筆者想談幾點 添好運的優與劣:

添好運作為著名點心鋪,雖然是連鎖經營,但並沒有采用中央廚房的運營模式,而是每店派駐壹名廚師長,由其進行示範及指導。這樣的好處是杜絕了分店大量采用中央廚房的凍點心半成品,新鮮現造,出品的點心品質更高。而不足就是各分店的點心品質難免會層次不齊,無法做到口味及感受的壹致性。

添好運海外拓展飛快,似乎想采取臺灣 “鼎泰豐” 的海外制霸方針。2016年底在紐約市場插旗,並且已有進軍中國國內市場的打算。作為企業,這樣肯定可以取得更好的收益,但是同壹城市過多的店鋪堆積,難免會引起視覺及味覺疲勞,新鮮感不在,很難保證生意仍會如此火爆。

添好運 王牌點心似乎僅酥皮焗叉燒包壹款(老板麥桂培 擅長酥皮的制作及調味,香港四季酒店龍景軒 兩大人氣點心之壹的鮑魚雞粒酥 也是由其發明),其他點心和香港本地的點心鋪味道差距不大,並無明顯的優勢可言。而價位的話,若非米芝莲1星加持,點心鋪本身也就差不多60-70港幣的人均(茶餐廳壹般都不設加1)。所以,有獨到之處的招牌點心過少,也是其短板之壹。

添好運雖然為米芝莲星級食肆中的唯壹壹家點心專門店,但是相比近幾年榜單中的其他中餐廳的點心品質,其實是墊底者。香港星級酒店的中餐廳以三軒(四季的龍景軒,麗思卡爾頓的天龍軒,洲際的欣圖軒),二閣(朗廷旗下 唐閣,明閣),二宮(香格裏拉旗下 夏宮,香宮)為尊,均在列米芝莲星級餐廳。榜單中非酒店粵餐廳提供午市點心的,如福臨門,名人坊等,先不談其售價(米芝莲在星級餐廳評選中,性價比的因素幾乎不考慮),其出品的品質也均優於添好運。故,添好運今後幾年大有被摘星的可能。

無論如何,添好運作為壹家米芝莲1星餐廳,不玩高端,而走親民路線。這家店作為米芝莲中餐廳拔草之旅的點心前哨戰,再合適不過。
