「深井燒鵝」我細細個就聽得多喇,今次終於真正黎到係深井嘅陳記,試下「深井燒鵝」係未真係咁正!!我連續幾天假,今晚朋友有車,來深井走一下,有大卡位坐十分寬鬆。當然叫出名的燒鵝,我地叫左例牌下庄,另外叫了個蒜蓉粉絲蒸聖子皇。第一道餸梗係要點原隻燒鵝喇~當時好多客都點左燒鵝,要等下轉燒鵝出爐。望住佢推住啲燒鵝出黎真係好香好吸引,口水都流晒出黎~望左咁耐,終於上枱,果然仲係熱嘞嘞,食落啲皮好香脆,肉又唔會韌,但亦都唔覺油膩,不枉我地專程入到深井食燒鵝。加上燒鵝不可缺少既當然係瀨粉啦,咁食法夫復何求。除左燒鵝,我地另外都點左聖子皇,呢道都岩我地食既,因為聖子皇新鮮肥美味道堅鮮甜,用清蒸煮法加上粉絲真係無敵,比出面其他酒樓大排檔既水準高好多,估唔到深井都食得到咁有質素既海鮮。仲有上湯竹笙魚肚浸勝瓜,主角既魚肚非常多,而且質量高,食落夠爽之餘仲有魚鮮味道,師傅工夫好將勝瓜煮得剛剛好夠林,十分鮮甜,整體非常出色。

望左咁耐,終於上枱,果然仲係熱嘞嘞,食落啲皮好香脆,肉又唔會韌,但亦都唔覺油膩,不枉我地專程入到深井食燒鵝。加上燒鵝不可缺少既當然係瀨粉啦,咁食法夫復何求。

除左燒鵝,我地另外都點左聖子皇,呢道都岩我地食既,因為聖子皇新鮮肥美味道堅鮮甜,用清蒸煮法加上粉絲真係無敵,比出面其他酒樓大排檔既水準高好多,估唔到深井都食得到咁有質素既海鮮。

仲有上湯竹笙魚肚浸勝瓜,主角既魚肚非常多,而且質量高,食落夠爽之餘仲有魚鮮味道,師傅工夫好將勝瓜煮得剛剛好夠林,十分鮮甜,整體非常出色。

黎得陳記當然要起碼叫番半隻燒鵝,老字號果然老字號,燒鵝上檯賣相靚,顏色均勻, 一睇就已經知係正嘢,
豐腴的肉汁從指縫間流出,燒鵝外皮挺直, 鵝皮香脆肥瘦均勻, 只能用油香四捨去形容。 
不得不提嘅係燒鵝髀, 如果淨係食賣下莊埋得貴梗係有原因, 因為隻燒鵝髀一睇就知 肥厚嫩滑, 肉味濃而皮又脆, 果然冇得彈。

今日老豆生日,當然要出去食餐好慶祝。我地就入左深井食燒鵝。嚟到陳記,我地就即刻點左燒鵝海鮮套餐,包括半隻燒鵝,蒸海石斑及羌葱炒蟹。 另外再加椒絲腐乳通菜,海鮮冬瓜盅同一碟瑤柱蛋白炒飯。上菜速度很快,坐工一陣就有冬瓜盅同燒鵝。冬瓜盅,足料!有瑤柱、金華火腿、𧎚干、冬菇、蓮子、瘦肉粒和魚粒等,清甜可口。至於燒鵝,肉質幼嫩,皮香脆口,半隻4個人食啱啱好,不會太油膩。再嚟一味羌葱炒蟹,火喉十足美味。另外蒸石斑亦有一手,蒸得恰當好處,好有鮮味。加上幼嫩的通菜和香口乾炒的瑤柱蛋白炒飯。 食到好飽,不過係大滿足啊!老豆都話食得好happy!!!最後,呢到啲侍應招呼很好,值得一讚!

加上幼嫩的通菜和香口乾炒的瑤柱蛋白炒飯。 食到好飽,不過係大滿足啊!老豆都話食得好happy!!!

最近好少飲老火湯,所以叫了一煲木瓜雪耳豬𦟌煲雞腳老火湯滋潤一下。老火湯份量好豐富,足足有六大碗湯再加湯料。老火湯真的好足料,有煲得好淋的雞腳、有令煲湯變得好味之餘亦好入味的木瓜、有煲到出晒味的豬𦟌骨。真的如餐牌所講,好過自己煲。

去到傳統酒樓不能不叫有獲氣的煲仔菜式,我們叫了一個飄香奇味雞煲,帶傳統得來又新穎。奇味雞煲以煲仔的方式上枱,上枱時熱辣辣的,雞肉入味,好香口,而且啖啖肉,仲有好吸味的青椒、紅椒、洋蔥等蔬菜,味道平衡得非常之好,不會太甜太鹹或者太辣。

行完山在深井作結,順道來個燒鵝晚宴。今次來到在陳記商業中心內的陳記燒鵝酒家。我們豪不猶豫叫了燒鵝一隻$540,燒鵝好大隻,侍應上菜時,燒鵝的鹵水香噴噴,實行相機先食。但我們也不能怠慢,燒鵝熱食才最好,我先試右脾,皮下脂肪不是太多,燒的時候應將大量的油脂溶化,緊緊還有一點脂肪,感覺不會太滯,做到皮脆肉嫩。還有鵝胸部位亦吸收了鹵水味道,大大舊飽滿的鵝胸肉也不錯,我還喜歡食皮(雖然脂肪真的很高)但不能抵抗那種皮脆芳香的口感。還有燒鵝是要配瀨粉,我們每人叫了一碗。我們還點了些粵式小菜,砵酒焗桶蠔$168,蠔用了薄脆槳炸後,再用上砵酒煮,熱騰騰的蠔外脆帶著砵酒甜味,內裏即鮮甜美味。金銀蛋菜$68,對比起燒鵝,清淡一些,主要以鹹蛋上湯帶起味道。晚飯小炒配啤酒也不錯,Kirin $25 一支,我們叫了兩大支。
