今天有家人生曰,相約於尖沙咀的阿一海景飯店慶祝。餐廳位於Isquare 29樓,高居臨下,尖沙咀高廈景致、美美華燈盡入眼簾。今天試一下歡聚套餐$1980(4位)頭盤有四款:冰鎮大連鮑甫、鹵水豬仔腳、蜜汁叉燒和明爐燒鴨冰鎮大連鮑甫:這鮑魚看似平平無奇,但味道鮮美,口感相當嫩滑而彈牙,而且十分入味,不錯,果然是鮑魚名店。鹵水豬仔腳:這豬仔腳出奇的嫩口,豬皮和豬肉都入口即化,鹵水味道點到即止,唔會太鹹或太重,帶一點鹵香,而且有豐厚的骨膠原,正!蜜汁叉燒:叉燒肥瘦得宜,雖沒有焦香的燶邊,而蜜汁亦是中規中舉。叉燒的質地比較挺身,滿有肉香。明爐燒鴨:這燒鴨已經細心的去了骨,啖啖肉。燒鴨表皮微微帶焦,鴨肉唔韌,但溫度只屬微溫,味道沒有失也沒有驚喜。高湯燉三寶:這高湯看似淡如水,但一嚐之下,發現湯汁極為鮮美!清湯呈琥珀色,透徹見底,沒有半點油膩,完全充滿了瑤柱和雞湯的鮮味,再加上清雅的大花茹香味,實在好喝!鮮百合翠綠帶子這帶子炒得香嫩爽口,唯味道比較淡口,可能是因應健康的潮流吧。西蘭花炒得爽脆嫩綠,幾有鑊氣。清蒸活海斑這海斑蒸的時間十分精準,魚肉剛剛離骨。海斑的大小剛好,魚肉嫩滑鮮美,加上鮮甜的蒸魚豉油及蔥花,實在簡單而味美。馳名脆皮炸雞這炸雞真的不錯。雞皮炸得薄如紙,脆卜卜的。皮下沒有多餘的脂肪,只有嫩滑juicy 的雞肉, 再沾上一些准鹽,脆嫩咸香,有水準!鮑汁扒菜薳這菜薳就是白灼菜芯,菜心沒有油光,感覺健康。鮑汁雖然味美,滿有鮑魚的鮮味,茨汁透薄輕身,但礙於菜薳比較老,不太嫩口,而且有渣,口感大打折扣。招牌砂窩炒飯炒飯炒得夠金黃乾身,飯粒粒粒分眀而帶嚼感。配料有彈牙的蝦仁、惹味肉末、旦絲和蔥花,香口惹味又唔會過於油膩,好吃。精美甜品-紅豆沙/芝麻糊紅豆沙煲到軟綿起沙,紅豆大大粒,陳皮香味缓緩的透出來,加上甜度剛好,真想多吃一碗!芝麻糊富香濃的芝麻香,味道輕甜,由於質地比較稀身,比較像芝麻露,所以唔係我最喜歡的那一種。這個套餐雖然沒有特別矜貴嘅食材,但同樣煮得美味精巧。加上服務細心又有禮貌,以及幽雅的環境同開揚的景緻,真是與親友慶祝的好地方。即使已經第三次到訪,仍然興趣不減,加上水準穩定,必定再訪。 continue reading

   昨晚美國的親友回來,我們一行5人歡聚一起,想找一間有美景的餐廳試試。由於每次都是吃自助餐,有點厭了,而且親友提議可以找米芝蓮餐廳,於是我做足功課之後,找到這一間有美景的地方,位於29/F 之中,真的是很高啊,可以凌空看幻彩詠香江哩!  甫一進去,侍應就招呼我們到經已預約好的海景位置坐下來,鋪上餐巾,替我們放好手袋。看見四人餐共有八道菜式,感覺多元化,因此點了四人餐,外加兩個小菜,原本以為就夠,但我想到還是不夠分,因為同行有兩個是男生,所以還是將四人餐up 做五人餐吧,反正是可以隨意加的。鮮嫩的、彈牙的、爽口的,質感是異常地軟腍,平時不愛吃骨的我也一下子吃完了,當你吃完一道菜,侍應們便火速上前替你換一隻新碟,以免影響觀感及下一道菜的味道。  接著的叉燒及軟腍,燒鵝皮脆肉鮮嫩,好興奮啊!之前來的有外加的半隻龍蝦伊麵及脆皮燒腩仔,脆皮燒腩仔中間的分佈是皮、肉、膏、肉,質感奇脆無比,不過價錢也不便宜啊!(吃了兩塊才記得拍照哩)  西蘭花百合炒帶子︰西蘭花誰也不會字吃過,但這裡的西蘭花落鑊前已經切去多出的部分,讓你可以一口吃下,爽脆可口,而帶子也是我吃過最鮮美的。  蒸魚也是非常非常非常嫩滑,因為魚肉一旦鞋身,整尾魚也會失色了;最搞笑是朋友十分喜歡那個蒸魚豉油,侍應問︰收不收?朋友說︰不收,之後其他侍應也知趣地沒有收。後來的脆皮炸子雞,皮依舊脆而不油膩,不會令人覺得肥膩,而菜遠,這普通的食材,卻是令大家驚喜的一道︰菜遠已被預先削了花及後莖,只餘下最軟的部份及大家吃,入口是既柔軟,卻不會過火,變成一團,附上極熱騰騰的鮑汁,美味之最,可惜份量不多,未能盡興。朋友也是和之前一樣,不許侍應收掉那個汁,還說要用來撈餘下的炒飯。砂鍋炒飯,是在客人面前做的,可是我背向了,並沒望到。炒飯端來的時間是超級熱至噴煙的,可想而知有多振興,而且飯粒分明,香而不油,材料包括蝦仁都是既大而鮮。忘了補充那個燉湯,小妹孤陋寡聞,一直不知煲湯和燉湯的分別,前者是煲好了然後剩出來,後者則是連器皿一起煲。因此,燉出來的湯熱度十足,而且不會因為喝得慢而冷了。(瑤柱及花菇味好好啊)到了甜品時間,其實當時已經傾計傾到興起,所以都沒去留意那個紅豆沙的味道。原本我是想試試另一款甜點︰西米焗布丁的,可是當時經已太飽,幸好沒有布丁呢。 continue reading
