自少已經知道陳儀興潮州菜,如今開立多家分店,心中就會比較各店的分別。而這家在鰂魚涌和太古之間的分號,個人覺得是座位最舒適的陳儀興。今晚在這邊工作,順便跟東區工作的朋友到此癲拿。就座後,職員先呈上一盤潮州功夫茶和鹹菜,打開味蕾。 凍大眼雞       即是魚飯,是靠海吃海的潮州特色<飯非飯>。整條魚附海鹽巴帶鱗片清蒸再晾乾,保證原汁原味。 魚皮帶鱗片,可以把整塊魚皮掀起來,夾取淨魚肉再沾鹹香的普寧豆醬,魚的鮮味就出來了。 魚背位的肉較嫩,魚腩位反而較乾身。 鵝三寶  滷水鵝肝 鵝腸 鵝肉 皆我所愛也。鵝肝  當然肥美,連那肝小葉也看不清。說白了就是膽固醇,但自己偏愛這美食。鵝肝口感軟綿綿,中間位仍是糊糊的 ,入口甘香。無牙阿婆都食到。 啡色鵝腸脆口,但又容易咀嚼。鵝腸中的油脂為單調的腸壁帶來油潤感。鵝肉已褪骨 ,可以大口大口享用。鵝肉有了鵝皮,可以嚐到肉香和油香。鵝肉跟白醋又是一絕,可以去除油膩感。 全賴滷水口味較淡,不死鹼鹹,可以突顯食材的原味。 註:曾遇過某餐館的滷水系列只得死鹹,㓤脷,食完要飲很多水。  太鹹就蓋過食材原味,喧賓奪主。果然,陰陽萬物之埋,皆惡極盛。

跟職員確認是白魚蛋後,所以點這款。    
潮州魚丸雖不是鬆軟綿密,反而是爽口彈牙,魚味十足。

第三道菜:頭抽鷹䱽魚

第四道菜:香酥炸竽泥帶子
呢個口感真係非常獨特,運用左香酥炸竽泥包住鮮香滑嘅帶子肉!食落去甜鹹交集!一個好特別嘅口感!真係好正!

第五道菜:鹹菜花甲湯

名正言順呢個一定係用花甲做主題嘅湯水,配上鹹菜嘅花甲湯都係第一次飲飲落去鮮香味美,加上花甲大大隻完全吸晒湯水入去肉裏面!真係好好飲!

朋友就叫咗個20年菜譜胡椒豬肚湯!除咗係心機菜之外!菜譜都可以食得!再加上胡椒湯啱晒啱啱轉季嘅我哋!飲落去暖胃又有營養!

位置喺鰂魚涌同太古之間步行大約10分鐘左右就到達1001大廈,都容易搵,再加上裝修非常高貴!都係打卡影相嘅好地方!

這天來到位於鰂魚涌的陳儀興尚潮樓食晚飯,這裡古色古香,有很多字畫和古典屏風間隔。店員先給我們功夫茶,茶味很香!我們點了很多潮州菜:- 滷水鵝片滷水鵝肉很香,底下放了豆腐乾,油香四溢。滷水鵝肉很肥美,肉質軟- 潮州凍馬友原條凍馬友魚上,中間是已切開一片片的魚肉,肉味帶鹹香,魚的鮮味很突出,旁附痛普寧豆醬,一起食用更有風味🐟頭抽煎英䱽有4大塊,外脆內軟,而且很乾爽不油膩,加了頭抽汁去煮很惹味- 潮式魚丸肉碎煮汕頭白潮式魚丸很爽口,裡面還有汕頭白和肉碎,很多湯汁,很香很甜- 潮式胡椒鹹菜浸台山蠔台山蠔很多,而且大大粒很鮮,胡椒鹹菜為湯底昇華了好有風味- 方魚炒芥蘭芥蘭炒得很有光澤,很爽脆,不錯- 鹹菜花蛤湯這道湯很清甜,除了有鹹菜,裡面還有花蛤和蕃茄,很清新和健康- 胡椒鹹菜鮮豬肚湯這道湯很美味濃郁,胡椒味香,豬肚份量多,質感爽- 潮州白粥- 白飯- 功夫茶

- 潮式魚丸肉碎煮汕頭白
潮式魚丸很爽口,裡面還有汕頭白和肉碎,很多湯汁,很香很甜

- 潮式胡椒鹹菜浸台山蠔
台山蠔很多,而且大大粒很鮮,胡椒鹹菜為湯底昇華了好有風味

- 方魚炒芥蘭
芥蘭炒得很有光澤,很爽脆,不錯

- 鹹菜花蛤湯
這道湯很清甜,除了有鹹菜,裡面還有花蛤和蕃茄,很清新和健康

- 胡椒鹹菜鮮豬肚湯
這道湯很美味濃郁,胡椒味香,豬肚份量多,質感爽

- 潮州白粥
- 白飯
