細緻講究嘅去骨雞飯

今日特登去咗鰂魚涌海堤街呢間「秋意」,試咗兩款招牌去骨雞飯。雖然店面唔起眼,但係食物水準令人驚喜,尤其係對雞肉同雞皮嘅處理非常見功夫。首先要讚嘅係「去骨豉油雞白飯」($66)。雞肉去骨去得乾淨利落,每件都切得整整齊齊。雞肉嘅質感處理得恰到好處——肉質保持適中嘅彈性,咬落去有細緻嘅纖維感,唔會過韌或者過淋。最出色係雞皮部分,皮層薄而爽滑,入口帶點輕脆,完全無油膩感。豉油汁調味清淡得宜,鹹甜平衡,輕輕包裹住每件雞肉,同熱騰騰嘅白飯簡直係絕配。另一款「瑤柱去骨貴妃雞轉淨脾」($78)更加值得推薦。轉淨脾後份量相當足夠,雞脾肉特別嫩滑,但仍然保持到應有嘅肉質口感。瑤柱嘅鮮味自然柔和,同貴妃雞淡淡嘅酒香相互襯托,味道層次豐富。雞皮同樣處理得宜,爽滑而不膩,連皮食都完全無問題。整體而言,「秋意」嘅雞飯雖然看似簡單,但處處見心思。雞肉火候掌握得準,肉質保持嫩滑又多汁;雞皮處理更見功夫,爽滑而不油膩。如果你經過鰂魚涌,想食碗用心製作嘅雞飯,呢度絕對係個唔錯嘅選擇。…Read More

今日同好耐冇見的朋友慶祝生日。因為我哋兩個工作都好忙,覺得要好好慰勞下自己。呢度仲可以睇到師傅點樣準備食材同煮食,成件事真係好開心!我叫咗三日月一人前鐵板餐,裏面有**前菜三小點加沙律** 前菜好清新,有一個好豐富嘅沙律,三小點入面嘅豆腐好香滑,最好食係煙燻嘅雞肉。**刺身拼盤** 拼盤包括油甘魚、油脂豐富嘅吞拿魚、鋪滿魚子醬嘅墨魚,刺身食落非常有鮮味。**茶碗蒸** 熱辣辣嘅茶碗蒸,蛋香好重,口感滑滑,入面仲有大粒嘅魚子。**鮑魚** 鮑魚略略煎過之後,切開五件,每件都非常香,表面鋪滿柚子汁同埋菊花花瓣,食落有啲清香。**帝王虎蝦** 我揀咗帝王虎蝦,賣相真係好靚,蝦頭有蝦膏。師傅特登煎香蝦頭蝦腳,令到成隻蝦每部份都可以進食,蝦肉爽口,搭配濃郁嘅蝦汁,食落真係令人回味。**羊肩胛肉** 我同朋友分享咗羊肩胛肉,佢再同我share和牛卷,仲有好多蔬菜同醬汁,羊扒煎到七分熟,真係香軟多汁。**鐵板炒飯** 最後仲有個櫻花蝦炒飯,配魚高湯同味噌湯,可以就咁食,亦都可以配高湯片茶漬飯。炒飯炒得乾身但唔油膩,海鮮香味十足,加高湯之後更加好味。…Read More
