This is my third and my partner’s fourth 別天神 noodle bar we had ever visited in HK (after Central, CWB and Taikoo). This bar was very small, just like the one in CWB with a vending machine at the entrance area. It was still early in the evening on Sunday and there was no queue. As usual, we ordered the same two sets of ramen to share. Again they did quite well in maintaining the quality of the food so that everything was basically the same.The two ramen arrived one by one but not at the same time

Hakata Style Ramen Set

For some reason, I liked the hakata style ramen set more than the prawn miso ramen. The major reason was that the prawn miso didn’t smell as good as the one in CWB. That one in CWB had a slightly 焦香 miso flavour. That said, the quality of the broth was still pretty good, which was so clear and rich. Please look at the thin layer of clotted "collagen" on top of the prawn miso ramen set. They were really free of MSG as I didn't feel thirsty at all after eating. The ramen was very thin, although I think they could have been even more al dente and broth-absorbing. The char siu here seemed better than those in CWB or Taikoo because they had slightly crispy crust and had the right proportion of fat while being reasonably thick. The soft-boiled eggs were again perfectly seasoned and cooked to the right degree. Other ingredients were fresh and sufficient too.
Lobster Salad

The lobster salad was good as usual. There were many crayfishes with crispy seaweed. Taste-wise it was quite delicious with quite a lot of crayfish stuck together in a paste.
Pan-fried dumplings

The pan-fried dumplings had nothing special, same as those at other bars.
This time the sliced pickled ginger, spicy bean sprouts etc. were easily accessible on the table. Tissue paper and iced water were also easily accessible. Air-conditioning was very strong so that I didn't have to sweat after finishing the ramen. Service was quite attentive and we didn't have to wait long for our food to arrive.
Overall, I personally preferred CWB > North Point > Taikoo. Maybe next time should try the Central one again.
