When we reached the counter, there was only 1 eclair left, and I bought it anyway. When I was at the cashier paying for the eclair, the new batch of eclairs arrived. The cashier didn't ask me if I wanted a fresh one and gave me the one that was sitting in the showcase.
There's a seating area opposite the counter, so godbro XO and I sat down to eat the eclair right away.

When we split the Chocolat Grand Cru Eclair apart, we could see that it was completely filled with chocolate cream. However, we were a little disappointed when we bit into it because the pastry was not crisp and felt a little soggy. The chocolate flavor was really good though. The chocolate cream was smooth and had a strong chocolate flavor without being overly sweet.
Upon leaving I decided to ask the cashier how long had the eclair been sitting in the showcase, and she told me it was delivered when the shop opened at 10:30 that morning, so it had been sitting in the showcase for about 4 hours.
The eclair would have been perfect if the pate a choux was the right texture. Maybe the owner needs to adjust the turnover time as the humidity is much higher in Hong Kong than Paris, or maybe godbro XO and I need much better luck next time we try out the eclairs!
