We have been hankering for some shoyu (soy sauce) ramen and finding one in Hong Kong is not as easy as you would think.  Tonkotsu is everywhere and you can find miso ramen in various places.  Even shio ramen is relatively easy to find, but shoyu is a more elusive beast.

Anyway, we ordered our fairly pricey bowls of ramen ($96).  About ten minutes later, we each had a big bowl steaming away in front of us.  The ramen was murky and topped with seaweed, pork, egg, green onions and narutomaki (pink spiralled fish cake).  The broth was delicious and salty with a really good smokey note from katsuobushi.  It had been cooking away for a long time and was clearly a labour of love with aromatic flavour layers.  

The pork was super tender and fell apart.  The fat had rendered fully and melted on the tongue.  The egg was a sensation.  Dark orange and cooked to perfection, it was a luxurious addition to the soup.  The noodles were good and had a nice chew to them.

The service was friendly and quick and our water cups were filled up on a constant basis.  I will be recommending it to my Japanese colleagues and we will definitely go again if we want some shoyu ramen.
