Beef Tartare (made from prized Piedmontese Fassone beef, known for being tender yet lean and low in fat) seasoned with anchovy bringing umami, and chili and vinegar emulsion- a bit too spicy for me. Served with 5 pieces of crostini.

Originally wanted to try the limited Casunziei pasta with slow-braised wild boar ragu and mushrooms but was told that all 4 portions were sold out.
Decided to go for the Mafaldine (rippled pasta similar to lasagna but more narrow) with Genovese sauce ie chunks of beef slow-cooked for 12-Hours with loads of onions.

Tiramisu- light, creamy and flawlessly executed. The rabbit biscuit on top was a nice touch; indeed the restaurant was adorned with a lot of rabbit ornaments, as the rabbit is often seen as a symbol for the Dolomites due to its association with the region's natural wildlife and folklore.
