I always find tonkatsu overcooked even in Japan. My standard is to maintain a crispy coating with pinkish meat. This was my first time to try such a thin and crispy breading.
The deep-fried pork was served with a variety of salt and sauces. On top of meat, they offered a range of seafood options, which was recommended to dip the tartare sauce.
I personally preferred lemon juice and ponzu which compensated for the oily treats. The round cut of filet was thick and tender. Pork loin had a good balance of meat, fat and tendons. The minced pork was extra juicy.
