Ordered their signature assorted beef parts on a stick ($8) to go:牛膀 = spleen (!)Spongy, and the inside has the consistency of bone marrow.大腸 = large intestineshas a lot of fatty substance n the middle and smells...honestly, a bit like the sewer. Not for amateurs! More bitey and not as slimy.
牛肺 = lung
Initially has a grainy texture that mashes together right after the first bite.

The texture was a bit like that of beef tendon (sinew). My favorite out of the five.
The sauce base is really strong; it smells like the Chinese five-spice.
An array of condiments are placed on the counter - mustard, chili sauce, sweet sauce and something else that I forgot
Takeout is available - the lady put the beef parts (or whatever you order) in a small plastic bag, enclosed by a bigger plastic bag with a wooden stick for your convenience.
A nice occasional treat - think it would be better paired with hot steaming white rice to balance out the rich flavors.
