The ThirtySix was a place boyfriend and I stumbled upon. We were just leaving Tai Kwun thinking of what to eat for dinner when we saw the words The ThirtySix. The place was not very big but quite beautifully done. Comfortable couches could be found along with a private corner area for groups. Retro spirit advertisements are used as the backdrop.

They have a walk in whiskey cabinet that you can enter upon request if you wish to see the selection of whiskey they have available. It's extensive  and there are some that are rare finds.  You can even choose one of these to create your own highball. You can also house your whiskey for personal use as well.

They also have highballs but with a twist. The staff was very explanatory of their high balls as they said each glass had it's dedicated block of ice that is chilled to the same temperature as the glass it is served in. It is then fanned to remove any condensation and the whiskey and soda is poured at a specific angle. It is then stirred in a specific manner. They seem to be taking the highball to a next level.

They also have well known cocktails, beer, wine and sake for those that want something more familiar. And a decent selection of mocktails for those that choose not to drink alcohol.

The food menu consists of various small bites and skewers like an izakaya. They also have burgers if you want to have a bit more of a meal.

C. MacLeod ($130). Boyfriend ordered this as he wasn't a big fan of highballs but he did want a whiskey based cocktail. This was the staff's suggestion. A 12 year old Highland Park, Rinomato Bianco, Cointreau, Griotinnes Cherry and Yuzu Bitters. It not that strong but had a slight smokey taste.

Seedlipper ($90). I don't really do alcohol and was grateful this place had something other than a  Coke. In fact they had some very interesting mocktails that are different than the usual sugar syrup based ones. This one had Seedlipper Garden 108, fresh lemon juice, red berries, basil syrup and house soda. Refreshing taste from the basil syrup. I loved how it wasn't soaked in sugar syrup. Something I find in many places who do mocktails. They try to over do it with the sugar. This was a good, light balance. Fresh with a bit of tartness.

Crispy Chicken Soft Bone ($58). This is goes wonderfully with a drink as it's heavily doused with shimichi. Cutely presented in a tiny paper bag, the chicken bone was definitely crispy and definitely moorish. When I went to get another bone, I realized boyfriend had eaten them all! That's how fast they went.

Tomato Bruschetta ($68). The star of this dish is the tomato salsa. It was so fresh with a perfect blend of sour and sweetness.  The bread had a good tearable crust and was sprinkled with some herbs.

Fried Tofu in Wasabi Tomato Sauce ($48). These were definitely finger food. We tried with chopsticks but yes ... just use your fingers. The tofu was so crispy but soft on the inside. It was topped with a tomato sauce that was mixed with wasabi. You don't taste it at first but then it suddenly sets in with that rush that wasabi is known for.

Grilled Cheese Daifuku ($38). This is my favorite! I think I could have this non stop. Warm grilled mochi that was stuffed with cheese!The daifuku was glazed with a sweet soysauce used mostly for grilling meat. Sandwiched between crisp nori, this was everything to my palate. Sweet, salty, crispy, chewy. This was so fantastic.

Tiger Prawn Flambe Rolled with Chicken Skin ($78 for one). As there was only one, we ordered two. The surprising thing we didn't know was that they will flambe this when it arrives. A little fire to make it you go ooh.

The prawn meat was fresh. The interesting thing about this is that the prawn was wrapped in crunchy chicken skin to give it a nice texture to the firm meat below.

London Martinez ($120). Boyfriend wanted a stronger drink to finish the night. The staff offered this suggestion. A London Dry Gin, Vermouth Secco, Luxardo Maraschino, house absinthe bitters. And yes, this was definitely a lot stronger than the one he previously had. It also smelled simply more fragrant as well. The combination was well balanced and this, to boyfriend, was excellent.

A photo of how he bartender made the drink as the staff told us this martini was neither shaken nor stirred. James Bond would be shocked. I had to look so I went to the bar. What the bartender does is  mix the drink by pulling it like pulled tea. Impressive show.

Hotaru-ika Firefly Squid in Soysauce with Wasabi Cheese ($78). Second round of drinks, we dived into the next few items of food before we called it a night. This was a suggestion from the staff and I want to say ... also one of the best of the night. The firefly squid is raw and something we've had before in other places. But we've found it very salty as it is marinaded in a very salty marinade. But this is perfectly balanced by the cubes of cheese that have been infused with wasabi. Thus, the cheese almost balances the super saltiness of the squid but then the subtle kick of wasabi hits you. It's another great little item.

Savory Edamame Kiritanpo Cake with Wasabi Seaweed Mayo ($68). This peaked my interest as it's a vegetarian item. I did notice that a number of items on their menu did have things suitable for vegetarians. This is really good as vegetarians love to drink, too. And so many times my vegetarian friends just sit there with only the peanuts to snack on. Almost like a croquette, the outside was crunchy. The inside was filled with so much edamame. The mayo had a slight wasabi taste but not too much to be over powering.

Yakiniku Tebamoto Chicken Wings ($48). The wings were separated apart for easier eating. Sticky and sweet from the yakiniku sauce that was glazed on top. The meat was moist and juicy.

Great hidden gem in an area with many other bars surrounding it. The cocktails are inventive with a seriously excellent bartender. Food was creative and perfectly balanced.  Definitely a place for whiskey enthusiasts as their selection is varied and different. Staff is very informative on their spirits knowledge and are able to guide you to a what  would interest you. They even check back to see what we thought of their suggestion. Design was chic and elegant. I suspect definitely geared for a certain customer base.  Will be back with friends if we need a place to chat with a drink and some food.
