There are many things that go well with 余均益. Immediate recommendations often include fish balls and noodles. But not to forget is turnip cakes 蘿蔔糕, one of my favorite “dim sum” items. My takeout order of savory treats at 大記included 蘿蔔糕x2, 芋頭榚x2, and 咸茶粿x2 I pan fried them until they were slightly crispy outside (with a little char), and here are my assessments:
蘿蔔糕 –The turnip cake was filled with strands of turnips 蘿白絲, so they didn’t skimp on the ingredients. While the cake wasn’t corn-starchy, the turnip strands were lacking sweetness, and the taste of the cake was very mild. Due to the quality of the dried shrimps and pork fat chuck (蝦米, 肥豬肉粒), they didn’t enhance the flavor (不香). Fortunately the addition of 余均益 instantly lifted the flavor profile by a notch. The sauce added spiciness and a sour sweetness that complemented the cakes in a magical way! Overall it’s not the best 蘿蔔糕 I have had, but at the price point it had certainly delivered.
芋頭榚 – The taro cake was a bit different from the turnip cake as it was really a flour-based cake filled with taro dices (芋頭粒) and fatty pork cubes. The corn-starchy base of the cake wasn’t pleasant to me despite amble taro dices, and it didn’t absorb the oil from the pork cubes. The overall texture was too gummy and powdery for me, and inferior to the turnip cakes.
咸茶粿 – These were rather disappointing as the skin was too thick with very little fillings. The vegetables and dried shrimps inside actually tasted fine, but were overshadowed by the doughy skin which in itself was rather bland and dry. Luckily the presence of the chilli sauce made the dumplings much more appetizing by giving them a spicy kick, and slightly moistened the skin.
桂花糕 and 馬蹄糕 were just as good as before, and my mom finished them without any difficulty.
In general I found the sweet puddings 甜糕at 大記 to be superior to savory puddings 咸糕. Nevertheless 余均益 chilli sauce boosted the flavor of the savory treats significantly and is much recommended!
