食神黯然銷魂飯 ($88)

黯然銷魂飯嘅叉燒唔係一般嘅梅頭肉 而係用到五花腩去燒 因此肥膏比較多 但係同時肉質亦都比較嫩
面頭搽咗好多麥芽糖 甚至會有啲黏牙 但係我幾鍾意呢個加甜版本嘅叉燒 而且好多塊好抵食
但係唔知點解我隻煎蛋嘅蛋黃特別細 搞到唔係好夠蛋汁撈飯食

The classic char siu and fried egg combo is reinterpreted with a pork belly char siu instead of the usual collar-butt cut. This also means that there’s way more fat and the meat is extra tender.
A generous amount of maltose is slathered on top of the char siu, which makes it quite sticky, and adds a nice sweetness to the surface.
My only complaint would be excessively small yolk on my fried egg, there wasn’t enough to go with the rice beneath.
