I went there Tuesday evening with my husband, we knew this is a new Japanese restaurant and would like to try it out that night. When we arrived, I must say that we didn't know how to get it. The wooden door is really not easy to notice and it feels very hidden in a way that the restaurant is also located in the end of the street.

Anyway, we managed to get in and the receptionist asked if we would look at the menu first because it is actually a restaurant only specializing crabs. We looked and found something we liked already in the set menu. So we went into another wooden door, which is the main restaurant with another couple sitting at the bar.

We were seated also at the bar and chose our set meal from the menu. The waiter was very nice and explained to us the different types of crabs available. Honestly, we had no ideas what the difference between those types of crabs, so it was good to be given some information.

We ordered one crab and one beef set menus to share between us. Throughout the meal, the waiter was very attentive, we were well looked after by them. It was very pleasant dinning experience. There were 8 courses in the crab menu and the taste was unbelievably good. We were very impressive.

We were glad that we didn't order two crab menus as it would be too much crab for one night. The beef was very delicious, just the right amount for one person. For the crab, it was well presented and it was very easy to eat.

Definitely a good meal and would recommend to bring your love one to try it, but it may worth to do it on your pay, there is a minimum charge of HK500 per person. Be prepared.

There will be little warning in the form of creaking noises from gigantic overhead crabs, fluttering about their mechanical arms and legs out of sync with walkerby pedestrians such as the ones on Osaka's Dotonbori, awaiting for their monthly dose of lubrication from its owners otherwise too preoccupied with deshelling crustaceans for the customers. Nope, here you will simply encounter an understated exterior with the words 'Kani', meaning crab, inscribed on a minisculed sign not much bigger than the parking meter signages preceding it from every possible angle as you approach. If not for my curiousity which ultimately triumphed over the fear to at least walk right in and ask politely what the heck is going on here guys, what makes you think you are entitled or deserve to open shop in a spot right next to and behind that dining room for the richest mogrels in town ! (and we're talking Fook Lam Moon stature here.)
It wasn't easy to comprehend at first but what I'm seeing infront of my eyes in the welcoming lobby and the live tanks took some minute to get re-accustomed to again. Let's be rational for a sec - how many times have we seen very mobile and active Japanese crabs trying their best to become an escapee as they try climbing their way out of imprisoned misery, right infront of your eyes, in HK? It won't be none of those moribund arthropods with droopy eyes who got sick of struggling even before they're sent to their ill fated destiny. Try aggrievate and poke any of these in the head with a white stick like one of its owners showed me and be prepared to have it snapped in half by powerful clawy or leggy actions, if not having the whole clan of them attacking you back at the slightest of provocation..

Grilled Edamame beans. These to me are more suitable for dinner time as you indulge in beers with your Japanese buddies. Needed more salt.
Very well steamed or bain-marie bathed Egg Custard with real crab pieces rather than manufactured imitation surimi, its of the perfect texture and correctly borderline soupy, balanced by the insertion of Shiitake mushrooms, Gingko nuts and Mitsuba stem herbs.
None of lower grade canned variety, this dollop of 松葉蟹膏 sat beautifully on a green 大葉 leaf, itself surrounded by a bed of a freshly shaven つま as support. It really highlights the details the shop delves into to ensure every single detail is presented meticulously to the customer.
A choice from 2 types of Japanese Crabs for this Upper End Lunch Course is available - pick from either half a fresh morning-slaughtered Kegani crab (毛蟹) which is par-cooked for your restricted lunch hour convenience except the still raw carapace attached with roes, or choose 3 larger pieces of pre-frozen Matsuba Kani legs (松葉蟹) with instantly accessible white meat. The shabu shabu liquid is made of a balanced bonito broth, but you can opt to change to a more neutral hot water with konbu on request. Knowing the restaurant specialises in its live-in-the-tank 毛蟹 or 鱈場蟹 rather than 松葉蟹, it was a no brainer to pick the 1st option. And this was very sweet and fresh, and I'm not exaggerating to say this tasted slightly fresher and better than some of the pre-cooked versions in Hokkaido fishmarkets. Scissor trimmed perfectly for your ease of eating as well. The details...
A combination of Tofu, Enoki and Shimeji Mushrooms, as well as Shungiku and Cabbage, this seems to be one balanced meal - if not slightly overkill for a lunch course.
The resulting soup was tested first, which was deliriously sweet as it had slightly reduced by now and now is the perfect moment to cook the head piece and its cholesterol filled contents with some pearl rice to make a starchy Zosui congee. Absorbing all the crab and roe-tallowy essences, mixed in with a beaten egg to thicken but smoothen it all. Sounds acceptable? Its awesome. The trick to making a concentrated Zosui is to put back the already eaten and discarded crab shells back into the soup for as long as possible, waiting for it to become reduced further for as long as your lunch hour allows, before finally stirring the rice in and giving it a couple of swirls to prevent it from sticking. If you're a novice like me - let the trained owner or staff cook it for you.
A Sakura flower flavoured ice cream with Adzuki red beans as a base, this was almost Crabtree & Evelyn in its soapy and flowery aroma! Probably not for everyone but I thoroughly enjoyed this Spring/Summery as an ending to a decadent meal.

******************************
- DINNER IS CHARGED AT SUBSTANTIALLY HIGHER PRICES, RANGING FROM AROUND $600 to $960 A FULL COURSE PER PERSON - HOWEVER YOU WILL RECEIVE MORE DISHES AND BETTER FRESHER CRAB QUALITY.
- ONE OF THE MORE EXCITING HOKKAIDO CRAB RESTAURANTS TO HIT HONG KONG, SURPASSING EXPECTATIONS. THIS GROUP ALSO OPERATES TWO OTHER EXISTENT SHABU SHABU RESTAURANTS.
- WILL BE DAMN BIASED NOT TO AWARD THE PLACE A SCORE OF '5', BUT THERE ARE STILL SLIGHT IMPROVEMENTS TO BE MADE HERE AND THERE, OR IN TERMS OF FLOW AND SOUP BASE EXECUTION - BUT NOT VERY FAR OFF FROM A PERFECT SCORE.
