隱世入門omakase!係一間喺太和嘅小店,全間舖都係由三位老闆一手包辦,晚市價錢係$1380+10% 據聞每一季會去一次Menu,而我哋今次去就係秋季menu。松葉蟹牛蒡茶碗蒸真材實料!有好多蟹肉,面頭仲加咗鎮江醋。師傅教要一大啖由頭食到落底,每樣材料都食到😋一開頭會食到比較明顯嘅牛蒡味,但食多幾啖就會慢慢同其他食材混合,茶碗蒸嘅基底加咗好多蟹膏,令到整體顏色呈啡色,質地有啲似cream狀。炸紫蘇海膽卷熱辣辣脆卜卜!外面係好脆嘅網狀卷,包住炸碎咗嘅紫蘇葉,好似食緊脆嘅紫菜咁,入面有海膽,咬開食到湧出嘅滑捋捋海膽。面頭仲有炸香蔥,另外配上嘅薯蓉漿,令到口感更豐富。。花竹蝦真丈 椀物真丈係類似魚蛋嘅日本料理~呢道菜一開頭可以打開個蓋聞吓味先,之後先飲一啖湯,再享用個本體🤣個湯有啖淡嘅青味,而真丈就混入咗好多蝦,好似一個大嘅蛋球咁~質地鬆軟。北海道秋刀魚兩食第一食係刺身,呢條秋刀魚好好食😋食材本身新鮮,口感爽彈,配上薑絲、紫蘇、芽蔥,平衡一下魚平身嘅油脂,亦完全唔會覺得腥,好match!第二食係炙燒,加咗魚肝做醬料,面頭仲有本地嘅菜苗,整體食落有啲苦,另外仲有少少鹹味,都幾特別~。造身 上腹吞拿魚 大拖羅!調味有橄欖油、自家製嘅醃洋蔥、蔥、黑椒,建議食法係全部都用晒😋尤其佢啲洋蔥真係好出色好好食🤣但當然都可以按個人口味調整啦~吞拿魚嘅脂肪分佈好好,油分豐富!。鰻魚手卷完全係呢間餐廳嘅signature !個鰻魚燒得超級好,燒到個底好脆!咬嘅時候會脆到有咔咔聲。魚肉本身好厚,燒完之後依然好Juicy,而且聞到淡淡嘅檸檬香味,配埋手卷超級滿足😭😭。乳鴿配黑蒜汁乳鴿敲到表面有少少焦糖化,入面嘅肉非常嫩滑,另外有芥蘭苗同埋少少黑蒜汁,中和濃郁嘅肉香。。芒果沙冰 ,柚子慕斯自家製芒果沙冰,配上粒粒芒果肉,面頭仲有柚子味嘅mousse泡沫。食落好清新,而且有自然嘅甜味,係主菜前一個好好嘅refreshment!。魚翅撈飯真魚翅撈飯!超級大嚿魚翅,真材實料,食到一疏疏嘅口感🤤啲飯粒粒分明,仲有瑤柱、青蔥、生薑一齊撈飯,另外加入少量雞白湯,提升香氣同口感~不過爽口嘅生薑喺呢碗飯當中相當出眾,個人覺得口感上有少少搶fo。蘋果,乳酸,芝士雪糕係餐廳老闆自己研發嘅獨家甜品!外層係小蘋果造型嘅脆糖,入面唧咗cream狀嘅乳酸,先由客人扑開脆糖,再加上蘋果肉桂醬同埋芝士雪糕,整個過程嘅儀式感滿滿!味道都平衡得好好,係一個好清爽嘅甜品🍨Read More

之前間omakasa執左,見同位又開返間新,都係做omakasa,菜單見幾特別,就去試下菜式用當造及加入本地食材,每個菜都有驚喜同其他omakasa唔同,佢哋冇壽司,同埋唔多魚生,主打都係熟食。由前菜食到主菜同點品,每個菜都整得好好。佢哋有用心,加唔同既配搭,令每口都有不同既口感味道。鰻魚手卷既鰻魚咬落個皮係脆既乳鴿用慢煮方法,啲肉好軟滑,未試過乳鴿可以咁冧魚翅撈飯個鍋專門日本買黎煲飯,飯真係軟滑啲。個飯用雞湯煲,上飯時加啲炸瑤柱絲沙薑粒向面,有食蔥油雞飯既味道但唔油膩,排翅好大片,平時唔點食米飯既我都添左碗飯最後個甜品係一個用吹糖整既蘋果加入乳酸,當你扑開個蘋果,再向上面加玉桂蘋果蓉同芝士雪糕。乳酸打到好似cream咁滑,好似cream拌雪糕咁但食晒都唔覺漏期待下個季節會轉咩菜單,到時要再去食過Read More

唔講都唔知,太和新開咗正宗日式小店,係由任職米芝蓮高級餐廳嘅大廚負責,有多年經驗,菜單定期都會換款式,選用時令食材,不時不食。今次就試咗佢今期嘅晚餐菜單:🥚雲丹,長芋,日本栗米蒸蛋:呢個前菜,選用日本長芋,曬上紫蘇花碎,日本海膽,配上雪凍既滑蛋,一啖食落去口感一流,多款層次嘅感覺。🍜鮑魚白蝦素麵:澳洲鮑魚片,加上白蝦係素麵上,帶有少少海藻絲,重點係廚師係你面前刨上魚子醬乾,廚師話要將整個感覺一口食落去,果然所有味道都好配,素麵配上呢幾樣嘢令麵既口感超清新。🦀松葉蟹,千兩茄子椀物:鮮甜既湯,配上少許柚子皮,而蟹肉入面原來有蟹膏,好驚喜。🐟煙燻伊左木,燒上腹吞拿魚伴蛋黃醬:前者配上日本洋蔥溶,端上桌上已經有好大浸煙燻味,呢隻魚嘅魚質比較煙靭,味道鮮美;後者配蛋黃醬油漬同炸大蔥,食到唔同既層次。🐠鰻魚手卷:鎮店之寶,招牌菜 ,果然名不虛傳,鰻魚用炭火燒,外脆內亂, keep住多汁,再配上幾片山椒葉仔好特別。🥭芒果沙冰,柚子慕斯:廚師話食到呢一個moment就要清下胃口,芒果切粒入邊夾雜着少少沙冰,上邊有一球柚子慕斯,口感清新令味蕾提提神。🐟甘鯛鱗燒,大黑菇:魚鱗炸好後一片片企晒喺度,脆卜卜,廚師廚藝精湛炸得剛剛好,魚肉嫩滑帶點鹽味。🦐櫻花蝦飯:櫻花炸到香氣撲鼻,整間店都係呢個味道😆配上梅子粉令到唔會咁膩,而配菜既長芋亦絕不馬虎,用wasabi 醃製。🍎蘋果,乳酸,芝士雪糕:又名Apple candy ,廚師喺你面前唧上乳酸喺Apple入邊,然後邀請客人卜爛,極具儀式感👍🏼濃郁嘅芝士雪糕唔會好甜,配上青森蘋果果肉。Read More

首先,呢篇係我人生第一次主動寫食評(被逼要寫先有優惠之類果啲唔計),而會寫唔止係被食物打動,都係被態度打動。講真,唔係機緣巧合真係唔會食到呢間鋪。因為OpenRice 無評價,Google review全部係前一手的。而且睇完餐牌發現佢既Omakase仲要唔係主要食魚生刺身,而係食和食。無論點睇都唔似一間正常既日本嘢。但如果你就咁放棄佢,你就走寶了。鋪入面只有三個工作人員,就係三位老闆亦係三位主廚,同時都係三個同門師兄弟。自問唔係食家,但呢間鋪頭既三位老闆完全比我感受到佢對煮食既熱忱。佢地真係為左可以有地方可以自由發揮所以係呢個市道都自己租左落來開餐廳。如果一個餐廳老闆好似打機咁有得揀加點既方向,佢地三個應該係加曬去廚藝度,但marketing完全無加點,所以無論出品幾特別幾好,客都唔多。至於嘢食,我覺得唔需要多講,當一間餐廳所有人都對「煮嘢食」有熱忱有追求,想唔好食都難。反而值得一提既係佢對選擇主打和食Omakase,呢條賽道可能全香港都無幾多人跑緊。如果你食慣其他Omakase,值得來換下口味。Read More
