63度蛋 $38: 8分, 先試的是前菜63度蛋配香菇啫喱及雲腿, 溏心蛋是相當的香滑, 配上底下的香菇啫喱同吃, 是幾特別的組合, 而面頭的雲腿帶點鹹香, 豐富了這道前菜的味道. 喜歡的話, 也可以用附上的薄脆去沾上蛋汁及香菇啫喱, 幾惹味的.

檸檬雞麵 $78: 8分, 先試的是香濃響螺雲腿雞湯配檸檬橄欖油雞. 其實這裡的湯頭只得兩款, 正好一人一碗就能試到那分別. 香濃響螺雲腿雞湯是比較濃烈的湯, 雲腿的味道實在是非常之搶, 那份鹹香, 令到個湯底是稍嫌偏鹹了點, 也掩蓋了響螺的鮮甜味. 麵條方面就有相當水準, 夠彈牙, 不太吃得到鹼水味.

相比之下是更欣賞檸檬橄欖油雞, 簡簡單單的做法, 只是加上了檸檬橄欖油, 面頭就配上小小黑胡椒. 雞肉幾嫩滑, 用上了檸檬橄欖油, 是幾清新的, 也是把西式食材巧妙的方入了中式的菜色入面. 客人嫌檸檬橄欖油, 店方還另外提供一茶匙讓大家自由點上, 是細心的安排.

西班牙火腿花雕蛋麵 $78: 8分, 另一碗麵就是豬骨元貝鯊魚骨香菇湯配花雕蛋及西班牙火腿. 相比偏鹹的香濃響螺雲腿雞湯, 豬骨元貝鯊魚骨香菇湯是比較清新的, 豬骨味道不會太濃烈, 而元貝跟鯊魚骨也是淡淡然的, 喝得太多濃情化不開的拉麵湯底, 喝喝這個清一點的豬骨湯底, 是個清泉.

至於花雕蛋也是不俗, 花雕味道剛好, 不會太濃烈, 跟蛋香的平衡做得幾好. 西班牙火腿帶鹹香, 不過肉質是稍嫌實了點點.

喜歡店方用上比較清淡的檸檬橄欖油雞配濃烈的雲腿雞湯, 而清淡一點的豬骨元貝湯就配濃味一點的西班牙火腿. 整體食物是有水準的, 加上配搭得宜, 是令人滿意的. 店員態度友善, 而價位方面當然不算便宜, 但計及這裡的食物水準及用料, 還是合理的. 始終在香港的同類型店子委實不多, 這家誠意小店是值得推介的.

這「63度蛋」賣相蠻漂亮的
,呈淺啡色的香菇啫喱上浮蕩著一隻彷如日本溫泉蛋一樣呈半透明狀,白裡透黃的63度蛋,而在晶瑩剔透的蛋上,則灑上了細碎的紅色雲腿末。而在盛蛋的碗邊,還有一塊好像薄脆般的脆片作為點綴呢!

香菇啫喱」帶有香濃的菇菌味道,已打成茸的「香菇啫喱」根本就是西式野菌湯的變奏,把「香菇啫喱」與「63度蛋」的蛋白與蛋黃一起以匙羹舀進口中,菇菌與雞蛋的味道在口腔中融為一體,感覺順滑中帶點兒菇菌茸的細碎顆粒狀口感,那感覺挺奇妙的
。至於那些細碎的雲腿末,則無甚鹹香味,對整體味道的提升作用不大。

在四款店中僅有的麵食中,
鮑魚麵」(香濃響螺雲腿雞湯配吉品鮑魚)與
西班牙火腿花雕蛋麵」」(豬骨元貝鯊魚骨香菇湯配西班牙火腿花雕蛋)是較貴的,都是 $88 一碗,
檸檬雞麵」(香濃響螺雲腿雞湯配檸檬橄欖油雞)與
豬豚麵」(豬骨元貝鯊魚骨香菇湯配秘製豬豚肉)則相宜一點,只是 $78一碗。這價錢對質素較佳的日本拉麵來說,絕對是正常價,但對於中式麵來說,價錢絕對不算便宜,不過這店子所用的食材是矜貴的吉品鮑魚、中西合璧的西班牙火腿花雕蛋、特別的檸檬雞片,而且湯底是中式老火湯,那又另當別論


我倆夫妻都較愛喝較為濃味的響螺雲腿雞湯,而且也想試試較矜貴的鮑魚麵和較特別的檸檬雞麵,所以叫來了「鮑魚麵」和「檸檬雞麵」作這天的主角


先說湯底,這兩款麵的湯底「香濃響螺雲腿雞湯」是有點兒令我倆失望的
,店家既說是「香濃響螺雲腿雞湯」,那好應該是香濃的湯才是,但這天所喝,雖然都算有雞湯味,但卻未算十分香濃;雖然味道尚可,但委實和我倆的期望有點落差。

鮑魚麵」的主角吉品鮑共有兩隻,我倆夫妻正好一人一隻。細心的店主人早已把兩隻鮑魚切成四份,這兩隻鮑魚煮得頗為入味,吃來煙韌軟腍,但又帶點嚼勁,口感不錯
。「檸檬雞」的雞片大概有六、七片左右,肉質雖未稱得上十分嫩滑,可也不覺粗嚡,檸檬味則不是太濃,只是淡淡的散發出來。橄欖油以造型特別的鐵匙羹另行奉上,客人可隨自己喜歡在雞片上,這安排也見可到店主人的細心

除了鮑魚與雞兩大主角之外,這兩碗麵的配角也值得一書。首先是那淪為配角的冬菇,炆得十分入味好吃
,教人意想不到
。其次,那些以紫心番薯、黃心番薯與薯仔為材料的三色薯絲,吃來爽脆爽脆的,也帶給人新鮮的感覺。

店子供應的三款飲品中,汽水實在太過普通,與這兒只此一家,獨一無二的麵食相比,不太相襯
,而在兩款特色飲品中,「羅漢果茶」非我所喜,所以點選了「凍檸檬薑茶」($15)作飲品。這「凍檸檬薑茶」的薑味和檸檬味調配得不錯,薑味不會把檸檬味蓋過,檸檬味也不會蓋過薑味,那酸中帶點微辣,辣中又帶點微酸的感覺,挺特別呢

因為這天是週日,店子部分店員放了假,所以人手有點不足,出菜較平日慢,待客有禮的老闆娘在向客人解釋之餘,還不厭其煩地為部分客人解釋這兒食物的特點,服務態度值得欣賞


補充一提的是,這店子除了那只得一頁的簡單餐牌外,原來還有一個包括六道菜式的 Noodle Tasting Menu
,六款菜式已可把店中的主要出品一網打盡,包括「檸檬薑茶或羅漢果茶或汽水」、「西班牙火腿及橄欖油、香醋、大蒜、乾蔥泡車厘茄」、「63度蛋配香菇啫喱、雲腿」、「燒吉品鮑魚及檸檬橄欖油雞配黑松露土豆絲」、「燒豬豚」、「花雕酒浸農場蛋」與「香濃響螺雲腿雞湯」,菜式雖與午餐餐牌中的食物大同小異,但這 Noodle Tasting Menu 只需$180,已可試盡這店子中的招牌菜式,其實是頗為划算的
。 不過這 Noodle Tasting Menu 要兩位起才會供應,一個人來是不可以吃到的,可是要留意的地方。

這間別闢谿徑的「摩廚」,食物確是甚有特色和創意,即使未至於款款俱佳,始終是敢於創新的嘗試,比不少墨守成規,全無新意的店舖來得有誠意
,單憑這一點,我覺得已經值得對它給予鼓勵和支持了

最後,是另外加錢單點的花雕蛋,就是賣相已說明了溏心程度,面頭灑了少許海鹽,以豐富味蕾和層次。吃起來,花雕味頗為香濃,溏心的蛋黃更不用多讚,總之就沒有令我失望。

這裡是另一個我會重來的地方!

My department rented out this place one night recently after a conference for a visiting speaker. The other reviews are about the restaurant by day as a noodle shop, but we had 'molecular Chinese tapas,' to be described forthwith.

The idea behind 'molecular gastronomy' is to take our scientific knowledge of the physical and chemical properties of food-- particularly, how they change when cooked at different temperatures and for different times and use it in the kitchen to create new and original dishes. A lot hinges on the effect and its novelty-- no sense cooking an egg for 37 hours at a very low temperature if the effect is the same as an ordinary egg boiled for 10 minutes on the stove.

I can't remember everything we had, but here's a sample:

First, we started with 'tomatoes two ways': one was a spoonful of a tomato sauce that had been cooked to taste like a bloody Mary. I can't say I saw the appeal, as bloody Marys are my least favorite alcoholic beverages (I'm exaggerating only slightly here) and I don't see how they're made any better by taking the alcohol out. The other tomato was a cherry tomato marinated in vinegar and garlic. It was... subtle? It didn't really *pop*, but that's sort of the feeling I got with this restaurant, they were aiming for low-key.

Then we had an egg on top of some mushroom sauce. That doesn't sound too exciting, but the egg was cooked a really long time and it had a unique texture. It was liquidy-- but not runny-- and it broke up into bits that mingled with the mushroom sauce without becoming completely intermixed with it. I thought it was pretty good.

I will say that they don't let you take your time with these dishes-- I felt rushed to finish.

I'll mention just two more things. We had two bowls of noodles. Or 'noodles' I should say. The first is probably very similar to what gets served at lunch here. There was some thin-ish egg noodles, some greens, and a clear, tasty broth. The second was what could best be described as a gimmick. Everyone got a bowl of hot broth and a syringe (no needles!) of uncooked tofu. Then we squirted the tofu into the broth and it was supposed to cook into noodles. That of course didn't happen-- it just broke apart and became little bits of undercooked fluffy tofu string floating around the broth.

Finally, (and I'm leaving out some stuff like the salmon and spare-ribs), we had some abalone. I found it overcooked and chewy. It was my first time having abalone though-- maybe this is how it always is. I'll say this though: either the abalone here is not very good or abalone everywhere is not very good.

So that was dinner. It was fun and interesting, but not especially tasty or delicious. All on the simple, low-key side-- which is fine-- but then also on the somewhat mediocre side as well. The chef Maureen was very personable, and she explained all the dishes to us. I think this partially exploits a cognitive bias-- if she didn't say 'this egg was cooked for 37 hours to get such-and-such a consistency' then you simply wouldn't notice anything special about the egg. But then again, the point of a restaurant is to make you enjoy your food, whether that involves tricking you into it or not.
題外話/補充資料: They don't have a liquor license here, but they did let us bring beer & wine. I think I heard that dinner [sans booze] came out to only $300 or $350 a head, but I wasn't involved in the paying, so I don't know for sure.

The chef Maureen was really nice and gave me two different cuts, one was the belly part and the other was the lean part.
It was different from the Chinese roast pork which is dry, this one was lovely and moist with lots of juice but not quite gravy.
Although there was no red beancurd in the pork, I could taste it slightly.
The roast pork was amazingly soft and juicy and it reminded me of the roast pork that was served at CANTOPOP cooked by the Sous vide method.

Noodles:
Last time I forgot to take pictures of the noodles so here are the pictures from this visit.
There were snow pea sprouts which were more elegant than the usual Chinese greens they put with the noodles.
The julienne potatoes tasted much better than my first visit because they were not so oily.
The noodles were better this time as well because they were not clumped together.
As they are always experimenting with different types of noodles to match their broth, there are some noodles which I would love to try with this broth such as Angel pasta, instant noodles, spinach noodles and new bamboo vermicelli.

Thisis the 2nd time I visited this noodle shop. Happy to find the noodle taste even better!The soup is still very natural and full of favor.My husband do not like abalone normally but he said he quite like this one. The hostress said she cooked it for 24 hours.We had lemon chicken this time, its very tendor and taste refreshing.Highly recommend this healthy noodle place! Will visit very often!

We had lemon chicken this time, its very tendor and taste refreshing.

Highly recommend this healthy noodle place! Will visit very often!

Found out about this restaurant through Jamel, but as I did not know what noodles they served and the location so I did not go until I saw it listed on Openrice.After I read Jamel's review I just had to go. However the opening hours are just 11-6pm for the time being.This restaurant is located near the Blue house and inside this noodle bar it was really nice.There were some Western comforts inside such the jar of Humbugs (old-fashioned British sweets) and there was some Spanish Ham with the hoof

There were some Western comforts inside such the jar of Humbugs (old-fashioned British sweets) and there was some Spanish Ham with the hoof attached.

Their concept was really good because they have used traditional Chinese soups as a broth for the noodles.
They have rich experience in making Chinese soups because they used to own The Soup Cafe.

There are basically two broths: Chinese ham, whelk and chicken or Pork and shark bones with dried scallop and Chinese mushrooms.
The chicken soup comes with the lemon chicken or the abalone, and the Roast pork and the Spanish ham which have a stronger taste is paired with the pork bone soup.

This was the kind of noodles and standards I was expecting for More Noodles in Central.
But anyway the price of the noodles here is cheaper than More Noodles and about the same price as Butao.
Although the menu is simple, it is concise and neat and had English.

It was really good that they offered Spanish Ham on the menu because it is similar to Chinese ham.

Despite being opened recently the noodle bar was full of people and the turnover rate was quite fast.

In the end I chose the Abalone noodles and I was greedy so I ordered extra sides of Lemon chicken, Chinese wine egg and Spanish Ham, but to my dismay the Spanish Ham was sold out!
But I considered myself lucky because one of the broths was sold out too.

Same as More noodles I found myself scouring for the Abalone when the noodles arrived, however the presentation of the noodles here were brilliant, the Abalone, Chicken and Chinese Wine egg were served separately.

I was really gutted because I forgot to take a picture of the noodles so I will have to be more descriptive.
On top of the noodles were some peashoots, chinese mushrooms and julienne potatoes which were not starchy.
The soup was as nice as expected however the julienne potatoes were slightly oily.

Lemon chicken:
From the review below, it seems there was more black pepper on top, but there was less on mine.
The olive oil with lemon was served separately on a metal spoon.
The lemon and olive oil was not exactly sour as I hoped, and the chicken was sliced chicken breast which reminded me of those ready to eat chicken breast slices.

Chinese wine egg
The wine tasted strong and it was sligthly bitter, it was sprinkled with rock salt which contains fruit peel in it.
I found the spoon that held the lemon oil a brilliant tool to eat the egg with because I can't eat with those Chinese ceramic spoons and chopsticks.

Lemon and ginger drink
I loved this drink, it had the exact taste of sweetened fresh lemonade with ginger.
The ginger was quite strong.

以前在上班時間沒事做可以看雜誌,不過轉工之後就沒機會,所以近年都比較少買雜誌。前幾天經過便利店看到某雜誌在介紹韓國和台灣的明星開的食店,鑑於這個月尾會到台灣玩,所以就忍不住買了一本回家看。在新食店巡禮的專欄看到這家湯麵店,說是用上6小時煲的老火湯做湯底,超級愛喝湯的我立刻就被吸引住,第二天就立刻拉鬆弛一齊去試試。餐牌的選擇不多,只有兩款前菜四款麵,兩個人其實就足以KO所有食物。前菜有車厘茄和萵筍($38@),車厘茄用橄欖油、香醋、大蒜和生薑去浸泡,醬汁帶點點酸甜味,再配鮮甜多汁的車厘茄,非常開胃。至於用木魚、醬油和麻油浸的萵筍也不錯,萵筍很爽脆,不過不知道是不是太入味,反而失去了萵筍本身的甜味。湯底有兩款,分別是香濃響螺雲腿雞湯和豬骨元貝沙魚骨香菇湯,鬆弛作為一個味精detector,一喝他就知道完全沒有下味精。店員說這老火湯是每天新鮮煲製的,絕不含味精的自家製老火湯,而且店員更說她們之前在中環港鐵站專賣老火湯的,在中環有不少OL幫襯。兩款湯之中我比較愛喝雞湯,濃郁的雞湯喝起來不會太濃稠,而且帶點雲腿的鹹香。當然也不是說顏色較深的豬骨湯不好喝,兩種風味,各有各支持者,總之都是足料老火靚

麵只得一種,是老闆娘花了3個月時間研究出來的,口感有點像日式拉麵,不過更加彈牙煙靭,而且充滿蛋香,雖然上檯的時候麵會黏成一坨,不過稍為鬆一鬆就會慢慢散開,絕對不用擔心是煮糊了。另外要一讚的是麵裡面的配料,一粒大大的冬菇,一看就知道炆得非常軟腍,而且很入味,超級好吃的;除此之外還有三色薯絲,分別是薯仔、紫心蕃薯和黃心蕃薯,爽爽脆脆,作用就像在生牛肉河裡面加生芽菜絲一樣,令整碗麵生色不少。

至於配料方面,在我精心計算過之後,發現點鮑魚麵($88)和西班牙火腿花雕蛋麵($88)再另外加配檸檬雞($15)和叉燒($15)是最便宜的!

鮑魚、檸檬雞和叉燒都是透過低溫慢煮的方法烹調的,店員還說鮑魚要慢煮兩天才完成,煮好之後再用真空機給食物真空再放入雪櫃,非常講究。另一個細心位是所有配料都和麵分開上,所以都能夠吃到配料本身的味道,不怕會被濃郁的老火湯給混淆。

不太懂吃鮑魚的我以前只愛吃罐頭鮑魚,不過這個乾鮑是真的好好吃。吉品鮑已經細心的切成一片片,口感軟腍,帶點溏心的感覺,非常入味,慢煮兩天的威力實在厲害! 一碗鮑魚麵有兩隻吉品飽,單點一隻要$30,鬆弛說就算單點也不貴,因為如此味道高質素的吉品鮑以這個價錢在外面是很難吃得到。

西班牙火腿和花雕蛋。花雕蛋的酒味很重,溏心程度還不錯,雞蛋的質素不錯,蛋味濃郁,不過唯一的缺點是有點鹹,雖然我看到是店員在蛋上面另外加了一些粉紅色的水晶鹽巴,可是嫌為重手了點。西班牙火腿也不錯,油份足又夠鹹香,雖則我不能說這個配料跟麵很夾,但單吃是好吃的。

檸檬雞是採用上等的檸檬橄欖油浸泡過,一開始我還傻傻的以為是西檸雞。一片片白色的雞肉鋪在碟之上,旁邊放了一支鐵匙,裡面盛著一些檸檬橄欖油。店員解釋說是因為有些客人反映雞的檸檬味不足,有點淡,可是我就認為再點些油其實也沒太大分別,因為始終也只是檸檬橄欖油,本身味道就不是走濃烈的路線。經過慢煮的雞肉雖不算嫰滑但也不是鞋,滲出淡淡的檸檬香,給我的感覺就是很健康,味道也不錯,如果想吃清淡一點可以試呢。

叉燒選用脢頭肉,切得比較厚身,單點一份$15就有四大塊,非常抵吃。叉燒炆得夠腍,半肥瘦的,入口鬆化。

檸檬薑茶和羅漢果茶。新張期內,凡惠顧都會敬送特色飲品一杯。檸檬薑茶用上新鮮的檸檬汁,薑汁味濃,還好現在仍有涼意,喝一杯頓時打從心裡溫熱起來。羅漢果茶絕無添加,就像在家裡煲的一樣,只有淡淡的甜味,非常健康。

星期六的午膳時間,在我來之前只有一檯剛剛吃完的客人,到我離開的時候也沒有其他客人了。雖然藍屋很多人都知道,不過會再行入一點的人始終不多,我看店家還是在大馬路的轉角放一個易拉架會比較吸引到客人。

這裡只開星期一至六,早上十一點至下午六點,所以平日跟本沒有可能來吃,不過店員說如果生意好的話可能會做晚市,但現階段只會專注做白天時段。

這兒的拉麵很特別,平常拉麵店都不外乎豬骨湯、牛骨湯及雞骨湯底等,以上全都不是,用上的是中式老火湯,而配菜更是中西合壁,當中有吉品鮑魚、西班牙火腿及花雕蛋等等。

四款麵食中,我們各自點了不同的。先來的是豬骨元貝沙魚骨香菇湯配花雕蛋及西班牙火腿,一隻迷人的花雕蛋置在碗中的中心點,糖沁蛋黃呈鵝黃色,上面放有少許橙味海鹽,是老闆娘特地由意大利訂回來,希望為花雕蛋增加多一點層次。老火湯湯底鮮甜而濃郁,有清甜的香菇味道,再細心品嚐下,會有一絲絲的咸香,正來由西班牙火腿的油脂甘香。雖然火腿的油脂已溶入湯內,可是火腿仍然充滿咸香,有人說浪費了火腿,但我則說火腿絕對提升了湯底的層次。

這裡的麵條亦有別於出面的店舖,用的是一種很特別的麵條,老闆娘稱它為中式Fusion麵,因揉合了北方及南方的特質,麵條細滑扁平,有點像伊麵,但又有爽口的感覺,最重要的是完全沒有鹼水味。

除了主菜外,怎可能缺少了配菜的份兒,最欣賞的是麻油撈三絲,只從肉眼看,大家也錯以為是紅白加心裡美蘿蔔絲,但原來三樣都不是,是由紫心、黃心番薯及薯仔而成,經過「去澱處理」,三絲吃起來非常爽脆,與蘿蔔絲不相伯仲。配料其中一樣是冬菇,很入味,經過湯的洗禮後依然濃味,很好。另外,還有豆苗,就以上所看,真是一碗非一般的湯麵。

同事的是香濃響螺雲腿雞湯配吉品鮑魚,碗內有兩隻已切片的鮑魚及另加的叉燒。先是鮑魚,老闆娘說是中國產日本種的吉品鮑,經多重燜煮,入口果然非常軟腍,味道也相當夠入味,而且還有兩隻之多。而叉燒方面則比較肥,都夠鬆化,與日式叉燒比,又真的有點不同。湯底因用上了雞湯底,雞味濃郁,而且很鮮甜,與鮑魚真的很匹配。

在我第二次到來時,麵條有出入,多了鹼水味,但配料依然出色。這次試了香檸雞,雞肉的質感完全不像煮熟了的硬崩崩感覺,而是非常嫩滑,檸檬味實在很強,有點喧賓奪主,搶過了雞肉的味道。

每一碗拉麵都可以看出老闆娘的用心,由麵條至配料皆是用心製作,我十分喜歡這裡。雖然現在還是調整階段,水準有些許出入,但我都會繼續嘗試,因現在水準也已經不錯了。
