和朋友走到棉登徑一帶,這裡人流比較少,有數家餐廳,都不算滿座。我們最後在這兒吃日本菜作晚飯。我們二人獲安排一張四人桌,地方寬闊。四周環境簇新,裝修具日本簡潔的風格。餐廳以平板電腦作餐牌,感覺新穎特別。我們點了以下菜式:燒活鰻一串有三節,外皮呈銀灰色,入口香脆甘香,亦未至於燒得過燶。魚肉呈雪白,泛起油光,肉紋清晰,口感結實的同時亦有彈性,有陣陣鰻魚的香氣。燒牛舌一串有三片,燒得剛剛熟透,令質地不太堅韌,十分爽口。牛舌充滿牛肉汁,亦帶有鹽燒的感覺。露筍豚肉卷同樣有三節,豚肉半肥瘦,亦燒得剛剛熟,不會有燒焦的部份,火喉技巧處理得很好。豚肉味道濃,很有鹹香味。露筍爽脆,入口無渣。日式炒野菜顏色豐富,賣相吸引,有各種蔬菜,包括椰菜、紅蘿蔔絲、洋蔥和雜菌。每一款菜都鮮甜可口,炒得很柔軟,而不算油膩,是清新健康的選擇。三色刺身飯有白種魚、海膽和三文魚子,份量十足,令人垂涎呢!刺身薄切,條理分明,晶瑩剔透,咀嚼時感到它肉質細嫩,有鮮甜味,真的讚不絕口。海膽呈半液體狀,滑溜而充滿海水味,而且甜美動人,用來撈珍珠米感覺極佳。三文魚子每一顆都很亮麗,一咬下去汁液在口腔內爆發,沾滿了每一個味蕾。珍珠米飯溫暖軟棉,入口鬆化。石鍋安格斯牛肉稻庭烏冬用石鍋盛載,保溫能力極高。約有五片安格斯牛肉,切得薄薄的,煮得約7、8成熟,仍有少許紅色,浸在湯內一會,剛剛熟透,肉質細嫩棉滑,輕輕一咬已可咀嚼到濃濃的安格斯牛肉味。稻庭烏冬是粗身的,但仍然滑不溜囗,「𠽌𠽌」聲已可滑進囗腔,質感不硬身,沒有麵粉味的感覺。附上不同的配菜,包括紅蘿蔔和冬菰,鮮甜而爽口。最後再喝幾囗湯底,清徹而同時有甜甜的牛肉味。服務員親切友善,會很主動問我們有甚麼需要,笑容可掬,令我們感到很高興。…Read More

嘗試這家新開的餐廳吃飯,環境有點英式設計,地方不算大,但與鄰桌距離不算近。每人點了一客晚餐,食物豐富:前菜是焗菠菜磨菇,磨菇很巨型,直徑約三至四吋,軟腍爽口。釀了菠菜,做法特別。沙律是鱈魚片火箭菜沙律,鱈魚片肉質細嫩,火箭菜很苦,難以入口,幸好有數片鮮橙中和一下味道。餐湯是忌廉甘荀湯,溫度高、熱騰騰,有微甜的甘筍味,忌廉味不太濃,感覺淸新。其中一款主菜是龍蝦汁蟹肉意大利飯,龍蝦汁不太多,亦不夠濃郁。飯粒算是外軟內硬,但不太吸收龍蝦汁的香氣。配料有一絲絲蟹肉、大量細小的蝦以及baby spinach。另一款主菜是英倫海鮮批,我們起初以為是酥皮之類的東西,但原來是海鮮焗薯蓉。份量極大,薯蓉內鋪了很多海鮮,包括三文魚塊、蟹肉和鮮蝦,亦有一些西芹、紅蘿蔔和蘑菇作配菜,增加口感。服務一般,只能達到基本要求,服務員說話和舉止極其量只是旺角一些連鎖餐廳的質素,和皇室貴族餐廳的主題相差很遠。…Read More

路過Pacific Place 最底層,見這家開業不久的日本餐廳,被它的裝修吸引,於是進入光顧它的午膳。燈光、裝修和傢具都是棕色的格調,二人卡座亦很寬闊,和鄰桌的距離不算接近,感到很舒適。餐廳中央位置是鐵板燒的廚房,可看見大廚認真地燒不同的肉類,有陣陣燒肉的香氣樸鼻而來。再看遠一點,可見到商場中庭,感到這兒的裝修和商場的風格很配合,餐廳就好像成為商場延伸的一部份,兩者互相協調。播著輕鬆的音樂,環境算寧靜,甚有氣氛。午膳定食約有十款,我們點了以下食物:鐵板燒定食先來一碗面豉湯,滾燙暖胃,有陣陣鹹香,湯本身清徹,可見粒粒面豉在湯內上下對流,湯𥚃還有數片腐皮絲,煙韌爽口。前菜亦有一客沙律,顏色鮮豔分明,是一種視覺藝術。食材包括車厘茄、生菜和蠶豆。拌勻了酸甜的和風沙律汁,刺激了每一顆味蕾。蔬菜新鮮甜美,這是很好的前菜。主菜是燒安格斯牛肉拌虎蝦。有兩件牛肉,燒得半熟,肉質細嫩有油香,感覺油嫩及細膩,於是我們減低咀嚼的速度,慢慢細味甘香的牛肉。細看之下,牛肉肉紋整齊清晰,帶點點雪花脂肪。有一隻虎蝦,大約是中蝦的體積,燒得外殼成鮮橙色,蝦肉新鮮、雪白泛光,肉質腍身、爽口彈牙。蝦頭部份還連著一些蝦膏,口感結實而味道濃郁。還配有一球薯蓉,呈粉狀而棉滑,增加飽肚感。炒飯賣相令人垂涎,配了蔥花、紅蘿蔔粒和蛋花,顏色吸引。飯粒炒得金黃色,每一顆珍珠米圓圓的,很有光澤,入口軟棉。加入了配料,增加口感,亦令味道層層遞增。壽司配烏冬定食先送上兩件壽司-油甘魚及三文魚壽司。它們倆活像藝術品一樣,精雕細琢,外型看來很細緻。油甘魚呈淡淡的粉紅色,泛著油光,肉質細滑濃郁,入口無渣,是極高的享受。三文魚脂肪分佈平均,紋理排列極為整齊,油脂豐腴,香滑無比,令人齒頰留香。接著送上雜錦烏冬窩,用鐡窩盛載,溫度高,蒸氣不停上升。先試一下湯底,清淡中帶微甘,清徹而不膩。食物豐富,一隻鮮雞蛋煎得半熟,蛋黃仍是流心狀態。天婦羅炸蝦的炸粉又薄又脆,但不帶半點油膩。蝦肉幼身彈牙,新鮮嫰滑。牛肉煮得半熟,仍然呈現粉紅色,浸在熱湯泡一泡,就變得七成熟,肉質腍身帶鮮甜味。配料還有大量嫰綠爽脆的波菜,吸收了湯底的精華。烏冬麵粉味不重,反而有點麥汁的香氣,口感軟腍而滑溜,每吃一口都幾乎可以「𠽌𠽌聲」的,而且份量極多,感到很飽滿。餐具都很有和風色彩,和裝修風格很一致。服務員親切友善,笑容可掬,還會詢問我們對食物的意見。整體而言,各方面都幾乎沒有瑕疵。…Read More

星期六晚上,walk-in到這家餐廳吃飯,竟然全場沒有食客,我們可安坐一個卡座,十分舒適。我們每人點了一客晚餐,食物豐富,包括沙律、餐湯、麵包、主菜和餐飲:煙三文魚露筍卷沙律賣相精緻,兩片三文魚包著露筍。三文魚嫩嫩的,滑不溜口,露筍翠綠幼嫩。旁邊的生菜拌了芝麻醬,但醬比菜還要多,有點過鹹。忌廉磨菇湯有大量磨菇茸,每一啖都有囗感,忌廉味香濃。另一款是蘋果甘筍湯(忘了拍照),有清香的蘋果味,混合了甘筍的芳香,感覺清新。配了如棉花糖般軟棉的法包,鬆軟迷人。大蝦雜菌意大利飯賣相極吸引,份量亦多,夾雜了大量的磨菇片,爽滑可口。意大利飯的汁液稀了一點,不夠濃郁,亦沒有濃濃的磨菇味,而且放了太多黑椒,蓋過了原有的味道。飯粒尚未能做到外軟內硬的境界。兩隻大蝦煎得頗香,蝦肉結實同時亦彈牙,但黑色的蝦腸沒有挑乾淨。燒羊肉串有兩大串羊肉,夾雜了黃椒和洋蔥,份量極多。羊肉厚身,沒有羶味,但燒得過熟,稍為欠了肉汁,亦不夠腍身。旁邊有剛才前菜的沙律菜,同樣醬汁比菜還要多。熱飲用類似茶餐廳的杯盛載,有點兒怪。…Read More

喜出望外的自助晚餐

朋友為我在這兒慶祝生日,大家六時人座,已見人潮甚多,晚餐開始了!枱面已預先放好了所有餐具,由前菜至甜品的都齊全。連剪刀和鉗子都有,方便我們吃海鮮。但枱面較為擠迫。先拿一點沙律菜和煙三文魚作前菜,生菜和車厘茄外表新鮮,生菜爽脆、車厘茄酸甜開胃,煙三文魚有鹹香味,豐膄迷人。另外拿了一碗蕃茄忌廉湯,酸甜而有一些芝士味。接著是龍蝦鉗以及波士頓龍蝦,龍蝦鉗多肉甜美,肉質有點像雞脾一樣嫰滑。波士頓龍蝦有點海水味,但肉質稍為韌身。經過中式食品攤擋,簡直有驚喜,令人難以置信。有蒸龍躉球,魚肉切成一大球,蒸得火喉剛剛好,肉質嫰滑爽囗。燴花膠海參,花膠十分長形,入口軟腍黏囗,感覺到濃濃的骨膠原。海參煮得爽滑,令人一吃再吃。伴碟的是龍蝦肉炒西蘭花,不算炒得油膩,西蘭花爽脆,伴了一點點龍蝦肉,感到欣喜。西式食物有牛扒,煎得半熟,保留了鮮嫰的感覺和豐富的肉汁。配了一些蔬菜做side dish,薯角炸得香脆,而內𥚃呈粉狀。磨菇香濃有口感。長通粉煙韌軟腍,沾滿濃郁的白汁。此外還有威靈頓牛柳,軟棉棉而有非常濃的牛肉味。我還吃了焗三文魚,油份不多,很有鹹香味。日式食品有各類刺身,竟然包括帶子!帶子厚身,味道鮮甜,感覺新鮮。其他刺身質素一般,亦有一些紫菜卷和冷麵。接著吃甜品了,芒果布丁有淡淡的芒果甜味,但沒有芒果肉;奶凍滑而不溜;蛋白梳乎厘近乎水狀;麵包布丁溫暖而帶有奶味;桂花糕可吃到粒粒杞子;層層的朱古力蛋糕每一層夾雜濃濃的朱古力和忌廉;泡芙鬆化,內裡的忌廉甜美。最後當然不少得一杯美味動人的Haagen Dazs雪糕啦!再吃了一碟火龍果和菠蘿,已經很飽滿。服務很周到,侍應很主動收去我們的剩碟,效率很高,說話很有禮。…Read More

除夕夜,我們找個地方晚飯,選擇了吃中菜。地方光猛、枱面整潔,而枱布雪白。先點一壺鐵觀音茶,邊感受清幽的茶香,邊看餐牌。我們點了以下食物:香燒脆鱔是這兒的招牌菜,外皮燒得紅紅的,內𥚃的肉仍雪白。兩段鱔片排列得整齊,表面泛起點點油光,仍在微微流動。夾了一片放入口,外皮香脆亦有點焦香的感覺。肉質煙韌,有濃濃的鱔味,咀嚼期間肉汁在口腔流動。配合像鰻魚飯的醬汁,更帶點日式燒海鰻的感覺。它實屬必吃的食物!一口牛柳份量多而賣相佳,每一粒牛柳切成正立方體,易於入口。牛柳非常軟腍,甚至用筷子也可插進去。入口鬆軟,有牛肉的新鮮濃香味,溫暖的肉汁在口腔內爆發,在舌頭上停留,令人齒頰留香。配菜有一根根像菜心莖的蔬菜(但不是菜心),咬下去時發出爽脆的聲音。另外,亦有一些質感像南瓜和芋頭的淺啡色的東西(不知道名字),它們吸收了牛肉汁的精華。海鮮雜菜煲有兩隻肉質結實的蝦仁,還有數塊像蚌類的海鮮,帶子肉質一絲絲而甜美。蔬菜包括生菜、菜心、西蘭花、小堂菜和白菜,全都嫰綠清新,而湯底亦清澈少油。鮑汁海鮮砂鍋飯一打開砂鍋蓋,蒸汽冒出,內𥚃的鮑汁仍在沸騰中,令人垂涎。用匙攪拌一下,把鮑汁和飯粒拌得更均勻。材料有大量的蝦肉和珍珠帶子,既爽口又腍身,味道亦鮮甜。米飯似是較優質的絲苗米,每一顆飯粒兩端尖尖的,並有鮑汁味。米飯的份量十足,使我們十分溫飽。環境不錯,枱與枱之間不算太擠迫,服務員亦友善。…Read More
