東京銀座拉麵店終於落戶香港、銀座篝(かがり,Kagari)」招牌餐點就是雞白湯拉麵,湯頭濃香醇又不油膩,入口超香濃雞湯味、有點似忌廉雞湯、味道基本上同銀座店一樣沒有分別。雞肉是慢煮而成,厚實卻十分柔嫩。麵條十分彈牙好吃的細麵,雞湯吸附在麵條真的好好味!拉麵中的其他配料以當季食材為主,當天吃到的都是遍健康的蔬食原料!包括南瓜、玉米及鮮筍。日式煎餃子冇乜特別驚喜,但係佢同拉面係最佳拍檔,一定要食!不愧是曾榮獲米其林指南推薦的銀座美食啊!…Read More

在香港瑰麗酒店裏,自己最喜歡的餐廳就是這一間印度餐廳 CHAAT, 由佢開業食到近期摘星,每一次用餐都保持食物水準,服務又好,真係好難得!所以訂位要等差不多兩三個星期,我都覺得係值得。餐廳由印度籍行政總廚Manav Tuli 領軍、必食推介一定係印度大樹菠蘿咖喱角!香脆的外皮配以大樹菠蘿(代替羊肉)!把這種街頭小食,推行另外一個層次。Raj Kachori ,一款以脆扁豆和香甜酸辣醬炮製而成的鬆脆餡餅,它的外層酥脆,內裡塞滿了各種美味的餡料如豌豆、小扁豆和肉碎等,非常美味。今晚主角係Lobster Tikka烤龍蝦、餐廳使用加拿大龍蝦、入口啖啖鮮甜的龍蝦肉,慘出印度香料,層次感豐富。另一個餐牌以外的推介Lamb Dum Biryani 加上黑松露的香料羊肉飯,食材使用了新鮮黑松露、陳年印度米、藏紅花和不同的印度香料等及羊肉,吃時切開脆卜卜的面層,熱辣辣的煙立即湧出,每粒米飯也有羊肉的香,不羶的羊肉還很嫩滑。甜品點少得Chocolate Praline Naan, 記得要留肚食!…Read More

六公館、餐館名字帶點文青味、但其實是比較洋化的新派中餐廳。新餐館、又處於尖沙咀黃金位置、當日餐廳接待處人頭湧湧、好熱鬧、有訂位都要等上20分鐘以上、冇訂位基本上不用等。安排入座後、當然睇下有什麼特別之處、座擁無敵海景、一定冇得輸!加上餐廳設計比較洋風、當然給引了好多洋人用膳。朋友巳經急不及待、點了一大堆點心。點心賣相反而沒有太離地、其中比較深刻印象的是黑金蝦餃、雪山叉燒飽及松露炒飯。黑金蝦餃是用竹炭加入了食用金沙而成。自己雖然不太喜歡食太花巧的點心、但對這個點心亦沒有大反感。可能黑色點心已是見怪不怪了!蝦餃皮比較彈牙、偏厚。蝦比較爽身、但欠了點新鮮蝦味、湯汁比較小。雪山叉燒飽、酥皮面夠酥脆、餡料豐富、汁不太糊口、很平均。又夠熱、有即焗的感覺、值得一食。最後想分享的是松露炒飯、沒有預期的松露香味及覇氣、用比較碎的米炒飯已經是失敗、炒飯沒有鑊氣又是另一失敗、幸好不太油、否則一定退貨。其他點心小食,一般一般、有進步空間。當然好不好食,都比較主觀,亦都好睇其他主觀因素、餐廳裝潢環境、服務、收費及客戶羣。像我們隔離枱的洋人食客、就食得冿津有味。可能這也是給我留白的地方,要我再來一次。新派、潮食點心!…Read More

嘉里、即煮一個麵有幾難!

好友相約在紅磡嘉里酒店lobby lounge 吹吹水兼且下午茶。自己對甜食一向不大興趣、所以選擇了一個地道美食、餐蛋麵!其實一個簡單而且着地的本地美食!對於一間大酒店來說應該不會太有難度。更何況收費相比一些茶餐廳高出許多、食材成本應該不會有問題了。當然帶點期待。大約等了15分鐘、主角終於出塲。其實碗麵的賣相是沒有問題。但當我用筷子夾起麵條、問題就出現了!麵條不但沒有鬆開、並有點像煮即食麵過火了的感覺、過於軟腍,失去嚼勁,口感不佳。我估計是由於麵條是一早煮熟再放回碗內、等待客人落單後,再加上午餐肉及煎蛋。當然真係好難食!真係問一句點解嘅?…Read More

一向走中高價路線的八月軒,市場定位非常清晰、所以每次飯局一定happy happy。富貴雞這一道傳統江南名菜又叫做叫化雞,食之前要先用手握錘仔敲打一下外面焗得金黃色的麵糰,然後就會見到荷葉包裹著主角富貴雞的真身。雖然不是超香濃,但都會聞到有雞及荷葉香味。今次烘焗的時間要拿捏得幾準確,如果焗得過火就會令雞肉流失水分而變乾、令雞肉過於軟腍,失去嚼勁,口感不佳。味道應該用了八角、花椒及桂皮把雞調味,加上了鮑魚及花膠。朋友都大叫 大滿足!很久之前,食過用埕頭泥或塘泥裹住來焗的富貴雞,焗出來的雞特別香,可惜現時由原材料及成本問題、現在已經一雞難尋。…Read More

還記得自己在年青時代、和朋友仔去和民食飯,是一個極奢侈的飯局,但每次總是充滿歡樂及回味無窮。不知道是時代變了或是自己的口味也變了。終於要同和民講再見。特上鰻魚子飯盒,原本聽個名及睇下個菜單張相已經冇得輸、如果你身在日本的話。但原來在香港實際上分別很大。在日本特上是最高級的意思亦意味着比較講究。鰻魚飯以一個潻器皿盛裝,打開蓋,就已經有小小腥味,主角鰻魚呢?當然教人失望,由於魚比較細條、再加上鰻魚尾部近乎燒焦了、切開鋪在飯面、根本就不能完全覆蓋飯面。鰻魚比較廋、經燒烤後魚肉不會有太多汁及鮮嫩口感。最奇怪就是沒有另外一個主角鰻魚汁!鰻魚的品質、燒烤的時間、醬汁的鹹淡、白飯的口感,都是鰻魚飯好吃與否的關鍵。當不會奢望一百幾十元在和民可以享用一客滿分的鰻魚飯、但也不能接近這種質素。其他一些機本的食物質素也相應下降了。如炸南瓜番薯天富羅、和風薄餅和凱撒沙律等。其中的和風薄餅最最失望了, 餡料少了、沒有味道及薄餅完全不香脆。…Read More

相信泉章居好多人都去過,還可能去了好多次。鹽焗雞、炸大腸,梅菜扣肉都是經典的客家菜。客家煎釀豆腐是其中一個非食不可的經典客家菜。原來泉章居所採用的豆腐,是與本地其中一間豆腐工廠合作研發。用上有機黃豆、秘製配方的豆腐,還可以減低豆腐在煎煮時出水的現象。怪不得豆腐入口充滿黃豆味道。炸大腸,肯定不是每一個人都喜歡他,因為無論廚房點樣炸,都一定有點腸腥酥味道、但是喜歡就是喜歡、喜歡就是這種獨特的味道。鹽焗雞,絕對是他們的經典菜色、鹹味適中、就算連雞胸位置雞肉嫩滑,冇得輸。梅菜扣肉煲,對於我來說,實在是太肥膩了及非常入味!甜甜的梅菜及醬油,配合豬腩肉。忍不住食了兩件、實在太邪惡。…Read More

今晚和一班好朋友約了去人人常歡笑的主題樂園酒店內的中餐廳食晚飯,當然希望有歡笑之餘,亦可以享受到美味的食物。所以一早就預訂好位,準備大食一番。七味鹽酥豆腐粒、麵粉皮好厚所以一點也沒有酥的感覺、由因為七味粉好多,入口只有七味粉味道!你可以幻想一下好唔好食。香味香口水雞、有小小辣味,芝麻醬味比較濃郁,有點失了平衡。最奇怪的,是沒有雞味。四喜燒烤麩、這一個平平無奇,不過不失的前菜。蘋果醋海蜇花蓮藕片、不知道是不是真的用了蘋果醋、但醋味總算香、海蜇頭亦非常爽口。片皮鴨 是提前預訂的也帶有點期待。往往有期待的,總是會令人失望。鴨燒得有點過了火,所以皮就變得帶點燒燋了。色澤均勻、不肥不膩對於一隻片皮鴨來講,是非常重要的。燒成這樣,當然唔好好食、沒有油香肉滑、外皮不夠脆之餘,皮仲有點韌。鴨肉本身味淡,加上鴨燒得比較生還帶點粉紅色的緣故,吃起來更覺無味。就算是配以京葱、青瓜、甜麵醬等裹着來吃,都不好味道!鴨絲炒飯、帶點鴨油香味、可能是鴨絲炒過出了點鴨油包裏着炒飯、鴨絲太粗又韌完全影響了口感。蜜味桂花燒鱔、這個菜做得不錯!鱔肉沒有半點泥腥味。皮燒得好香脆。鳳梨古法生炒骨、汁芡比較稠、用上排骨配合菠蘿、紅綠青椒炒作。入口有點脆口,總算合格。黃金綉球伴湯鮑、其實是粟米蝦球配湯鮑。蝦膠沒有嚼口,好在芡汁薄。湯鮑就好韌冇味、不食也吧!最奇怪的是餐廳沒有提供刀叉,唯有用隻鮑魚容易咬開食,好在今晚全部自己友,冇table manner 也沒有問題。雀巢泮水芹香、餡料都算多,味道偏淡,可惜油比較多了。法國溫室菠菜苗、還可以!陳皮燉雪梨是酒店推介、陳皮味有點似大陸的九製陳皮味。叫做九製陳皮燉雪梨比較合適。一點點陳皮香味也沒有!相比之下、雪蓮子桃膠燉萬壽果就好好多了!今晚整體出品水準在預期之下、以後應該唔會再特登到此食飯、以後隨緣。再會了!…Read More
