大角咀區競爭激烈已經唔係新聞,好多新鋪落場無耐都係失敗收場,特別係大全街呢個鋪位,兩年內轉左四手。咪話唔得人驚。不過有時都無法怪人,食嘅嘢,好直覺嘅。得就得,唔得就再勤力都係唔得。至於呢間係區內主打食羊嘅鋪頭,我都幾肯定,唔係好耐,應該都係收檔。其實香港開專食羊嘅鋪頭已經好冒險,做得最掂個間係觀塘某店以雲南風味清湯羊打響名堂,都幾乎未有其他人望其頂背。而大角咀呢間新開嘅店,見佢都係清湯羊煮法,有齊羊肉羊腩羊雜及羊肉撈麵,影相望落唔錯,就俾次機會佢啦,點知...餐飯係夜晚,諗住叫羊肉湯飯同羊肉餃麵,結果店員話:「兩樣都無...」當堂打左個突,已經只係做午晚食你同我講無主打嘅食物?你預材料份量都有夠失敗喎。咁係咪乜羊都無?還好有羊腩湯飯同羊雜湯粉,有得試就試左先啦。終於試到味,之不過...啲調味,又係到喉唔到肺,同期望差距未免有點太大。仲諗住學似觀塘個間店咁嘅風味,結果只能話差天共地。正所謂無比較無傷害,但有朱玉在前無可避免,問題係佢差到連比較嘅資格都無。先講碗羊腩湯飯,未放入口還好,紅棗杞子羊肉湯,感覺都算認真,但啖湯入口,好普通,唔惹味。通常羊肉湯會有啲藥膳風味,好似北茋當歸之類嘅係入面,點知出奇清啖,原來經棗杞子係裝飾,羊肉鮮味唔突出,但羊腩嘅羶味就有係度嘞。都算,但唔知點解,羊腩似係用汁炆而唔係清湯煮,其實佢想點處理呢喂?啲羊腩亦切得偏細,丁方一寸都唔夠,無皮,唔難食已經算好彩。之後,上埋羊雜湯麵。無埋杞子紅棗嘅湯底,仲清淡過譚仔。至於羊雜係做得好乾淨,但切得有啲濕碎,叫係羊肚、羊腸、羊肺、羊肝都有一小撮咁,但太過細碎,入口無必質感可言,好似食緊牛柏葉絲咁,味道口感均無驚喜,只能話唔難食,但唔會有任何回頭意欲。最後埋單走人,睇下隔離枱食乜,原來都有人叫羊腩飯,但係炆羊腩,無湯。咁呢下我明白咩回事,根本羊腩湯飯,係炆羊腩放落湯道一齊上,邊有人會咁整喀?係就清湯,係就炆,炆左放入清湯,兩種風味互相破壞,佢真係唔識煮個喎。成餐飯兩個人食,一碗湯飯一碗湯粉連油菜,$113 埋單。我諗緊,將貨就價,我明。但做好啲賣貴啲,有人回頭唔怕人爭喎。呢餐食啲嘢要乜無乜,煮又煮到唔湯唔水嘅經營手法,死硬。改自己叫名羊天下,志大材疏左啲喎。…Read More

有日去深藍區土瓜灣工作,要搵間黃店食早餐其實都幾辛苦,好在都有兩間,於事揀左其中一間去試。其實茶記食早餐來來去去幾道板斧,一定有沙嗲牛面多士煎腸旦之類,要比較一係比價錢一係比調味。去到上址,老例沙嗲牛面($35),但跟餐嘅多士旦熱奶茶 就有少少唔對路,餐牌上係多士煎旦,再睇真啲側邊有個選項:炒旦加 $4......呢個選項,唔知點解感覺寧捨篤眼篤鼻,食過唔少茶記,光榮又好、大渣哥又好、牧牛又好,炒旦係煎旦嘅另一種選項,唔使加錢,佢居然要加4蚊?最好笑係,佢有個常餐選項,就係跟炒旦 $39,真係有少少俾佢吹脹。我知好野可以吊高來賣,但大家都係旦只係處理手法唔同,要加收真係第一次見。認真講,而家全香港餐記,早餐食旦跟麵個碟嘅選項離唔開多士拼煎/炒旦再加香腸/火腿/餐肉嘅組合,而一冰廳就跟多士加一隻煎旦咁大把,比起其他茶記,真係唔夠大方囉。人地光榮一個早餐 $33 一樣設定,多士拼餐腸腿加煎/炒旦咁計,唔要餐腸腿就做夠雙旦嘅份量,好均真。飲品冷熱同價,預設係真丁面,改辛辣面唔使加錢,怪唔得全世界人都咁 Buy 佢。一冰廳講到自己個炒旦咁勁,都唔使用加錢來顯得自己咁矜貴,干脆就出個餐 $39 煎炒雙旦同價,仲無咁難睇啦下化。我預左俾人話係方丈喀喇,咁茲尾嘅野都同佢計較。但唔好意思,就係怕貨比貨,人地做到佢做唔到,無計囉。至於成個餐嘅體驗,真心嘅,沙嗲牛面個沙嗲比起食勻咁多間來講,係最好味個間。但炒旦就無緣喇,個4蚊唔係咁賺喀,聰明少少得唔得。何況而家全部茶記炒旦個風格幾乎一樣,除非係標榜美國珍寶旦或者日本旦都仲可以抬下自己身價啫,再唔係當自己係澳牛咁扮,睇你又夠唔夠膽挑戰佢地吖。我唔會話佢差,但我只會話係OK囉。…Read More

本來,呢間店係可以俾一個好評嘅,但做人要公道,各位有機會幫襯時要小心呢間店啲做野手法,免得最後掃興。話說當晚五個人食飯,叫左六款菜,包括麻辣雞煲(全隻)、炸全豬手、椒鹽魷魚、古法老豉油叉燒 + 龍蝦伊麵、炒四季干煸豆。總體味道其實唔錯,但其中個雞煲就好古惑。本身可以選點全隻 $188 或半隻 $108,叫人多就叫全隻。點知一上到枱...所謂全隻雞,係放係一個15cm 嘅鐵沙煲上,即係平時叫小菜一人餐個種尺寸。放上枱個刻其實已經問:呢度全隻?個侍應話:係呀!裝滿還裝滿,但係好明顯,大家各自食左三至四件,根本砌唔番一隻雞出來,半隻都差啲唔夠。裝得滿只因為仲有好多洋葱菜料墊底。最搞笑係,佢有賣炸子雞,亦都有全隻,有相為證。惟獨個煲係無大細參考圖片,死無對證,變左疑點歸於被告,只能斷估佢落錯單。例牌會點啤酒汽水,通常二會一次叫晒,唔夠再添,因為咁先至夠凍。叫左四支個時,睇下張單,做乜個手寫係「正 一」,即係六枝。可樂要一罐,但寫左「丅」,當兩罐。即刻捉住侍應,問做乜寫多左?夾好照要無問題,不過我地就hold住張單,免得佢又寫多野。埋單當然睇清睇楚啦,已經無爆佢個雞煲昆人,如果無留意佢地寫多兩支酒同罐汽水,真係俾佢昆左差不多幾舊半水去。本來好地地可以賺個好評,老實啲咪好,而家去唔去下次都諗過。我當佢忙中有錯都算,請多個人落場做野得唔得?星期五晚嚟喀,根本唔夠人。…Read More

小弟看到該店以龍躉湯飯為招徠,感覺價錢也可接受,就進門一試,點了泡椒酸菜龍躉魚片湯飯再加一杯熱奶茶($56)。先嚐一口湯,只嚐到辣及一點兒酸味,湯的鮮甜味呢?完全欠奉。然後再數數有多少龍躉魚片,只得四片,當中有一片過熟(很有趣,全部一起煮會過熟,是翻煮嗎?),另外兩片是腩邊,幾乎只有脂肪,只得一片是原整有肉。整頓飯感覺是捱著吃,因為湯半咸不啖,還要加鹽,魚片份量不足鮮味也很一般,為免浪費,勉勉強強的盡量吃完。我一度懷疑是否只是自己味覺遲鈍吃不到咸味,直到鄰桌有人問店員有沒有鹽,終於肯定不是自己的問題。我不曉得是否自己太不幸遇上這種經驗,還是廚部沒有個像樣的QC。如果有自信可以用「第一」做招牌,請老闆自己先吃過再說。…Read More

其實,看到價錢如果還期望這店能吃到像樣的烏冬,只能說是明知故犯。當人家基本一碗豬骨拉面要65元,到citysuper差不多要50元才能吃到一碗淨手打烏冬,44元一個辣汁雞扒撈烏冬連面豉湯套餐,又怎可能會有預計的效果。44元你可以到阿信屋買三包急凍貨,都比這家聲稱手打的好吃。這家烏冬令我想起大家食的手攪麵,只是麵條略闊。真正的手打烏冬,應該有筷子的粗幼才像樣。我只能說,調味合格,烏冬欺場。其實自稱手打麵可能還過得去,但彈性和煙靭度都欠奉,實在不能借此欺世盜名。這種檔次,只能做學生餐的級數,有心吃烏冬,大可迴避。…Read More

滑是滑,但味道呢?

(11 月 28 日初試)不是紅磡人,純粹工作後半夜路過,走近門前,見有一位銀髮男子在路邊炒黑芝麻,加上玻璃上的媒體報導及客人不少,也就即管一試。打開餐牌,心裏只簡單想到糊類甜品。眼見黑芝麻是自炒再磨,心想也許不錯,不過仍有點遲疑,因為炒出來的是一種半「火羅」的味道,算不上香。再看看餐牌,有杏仁糊供應,不如貪心一點來個黑白配。可惜,杏仁糊沽清,只有芝麻糊又覺得太單調,最後叫了芝麻合桃糊。來到面前,用匙一滔,流質覺得頗為綿滑,嚐一口,不對勁,再嚐一口,心裏面在想,芝麻味和合桃味去了哪裏?為了搞清楚兩種糊的味道,於事我將未搞混的糊盡量單獨再試,試合桃,是有合桃的,但不算濃。至於芝麻糊,恕我直言,由第一刻開始離鼻一呎都都沒有甚麼香味聞得到,再放進口裏終於感覺到芝麻味,這個還是見人家在門外自炒自製的芝麻糊?還是合桃和芝麻糊混不得?我真的有點後悔為何不先叫單味,現在真的叫人難以評價。說實在,芝麻糊這個基本功在香港也不是每一間都做得像樣,但做得像樣的要找也實在不難,大良八記、廟街源記、北角翠園、旺角浩記,隨便也找得到像樣的芝麻糊,至少不是溝粉的化水貨色。有時人算不如天算,怎麼來到這個真的自家炒自家磨的味道會令人失望?我只能說,這家芝麻糊的少甜及滑溜程度其實是很討好的,但就是不夠芝麻味。點心不濟落味精,芝麻糊不濟可以落甚麼?加多兩分心機吧。還是應該研究一下,炒芝麻出了問題,又或許是那些芝麻是次貨?(12 月 16 日第二試)再叫單味芝麻糊,有結論,真的是芝麻不行。雖然那天是 8 度嚴寒,但我絕無鼻寒及傷風感冒之類。那熱芝麻糊,我仍然要滔一匙到鼻邊才嗅到味道。入口之後,那芝麻糊味仍然是不甚了了。我只能說,這碗芝麻口感是不俗的,綿滑細緻,不化水,但就是欠缺關鍵的芝麻味,叫我如何讚得出口。也擺,給一個 OK,已是很盡的了。究竟問題出在哪裏?芝麻本身的質素不行?是炒的問題?磨的問題?還是根本就是芝麻不夠,只有店東才曉得。…Read More

想分辨一間甜品店係買外料番來撈,好簡單,就係睇有無杏仁糊。如果係無自家製作o既店,通常都唔會賣杏仁糊,因為少人食,二來杏仁糊難做,三來材料唔算平,所以如果間舖無,通常都好大有限。講左咁耐,無非都係想講呢間野自己做自己野。杏仁糊好夠杏仁味,仲食到有點兒苦味,即係有北杏,咁食左至有用o架嘛!有部份甜品店如石X坊,唔想人地食到苦而無落北杏,咁就認真不幸。北杏可以止咳潤腸,肺唔好食多碗就最正,尤其冬天,大家明喇。除左杏仁糊,桑寄生蓮子蛋茶都係唔錯的,可以唔要蛋都得,平少少。其他甜品,就中規中矩。呢間舖怪就怪無人做過訪問,都算係老舖,無理由喎?還是因為唔想太人來,所以唔做呢?講真,樓梯底頂頭,有人排隊都好大鑊,識食自然會搵啦。…Read More
