夜晚走左落樂富同朋友p朋友m食宵夜本身佢地約左唔知7點定點我話夜d食宵夜啦點知佢地一等等到十點幾(好感動)朋友m為左呃我出來仲話食甜品哇我一聽到甜品口水都滴出來點知係去左越棧唉無計,局全都食少少野比面人落街個下唔記得叉電算了食左都記得食過咩就唔影相了朋友p都係牛舌控佢點左個咖哩牛舌飯套餐($50)我點左牛利河($38),費事夜晚食太多會肥牛舌河一來,ooops,四塊薄薄地既牛舌有d後悔,其實牛舌跟湯唔夾湯會溶左條舌既脂肪食落係無咁香,不過算了吧比着自己煮可能都係煎兩煎就真接吞入肚湯ok既反正係味x湯,唔會難飲河過得去,都係兩啖食完牛舌口感尚可,未算林到爛,不過味道就太淡唔係佢地煮得差,只係有d菜式天生fail雖然我個牛舌河fail但我又唔覺得咖哩同牛舌夾到牛舌可以almost match既天底下應該係得香草鹽﹑椒鹽﹑岩鹽呢類有少少bonus味既鹽至於蒜鹽就算吧啦,佢浸味太大,好難用得靚所以靚牛舌可以跟薄既黑椒汁或者白汁(燒汁唔知)酸汁要睇咩生果,橘子汁好像唔錯,莓汁都好但由於本人比較少試個邊既玩法就唔獻醜了當然唔係話咖哩唔得之但係本身咖哩味濃一定會cum左牛舌本身既脂肪香可以用咖哩分庭抗禮既肉類唔多以羊為首,牛有時得,豬就衰硬你見正宗咖哩飯食法好多時都係得咖哩因為其他野食好難襯得起(上述講既唔係日式葡式,個類可以行埋一二邊)食完飯本身想過九龍城dap返杯木糠布甸雪糕無奈唔小心行左去黃大仙只好作罷回家ot去了ps小弟在此跪求各位指點邊到有好食既牛利飯…Read More

放工約左細y去筲箕灣唔求其他,只求一兜白汁牛舌飯東南茶餐廳好易搵,一出地鐵站就係一來到我就照舊叫返兜香草白汁焗牛舌飯跟凍啡多奶($48)叫個下心入面有少少不安因為突然見到牛舌前面多左「美式」兩個字心諗這是否一個伏同親我食飯既朋友成日都鬧我叫親既野食都要等成半個鐘先來無計,好多煮既野都唔夠焗入味始終人地流水式快快手整既野都唔會好食得去邊蒸焗例外細y點左個白汁雞胸焗飯($48)我覺得佢今次個飯應該好過我起碼唔多似有伏吹左廿幾分鐘,厚多士都loop左幾十次終於~~~來料啦個汁堅掂!因為加左香草同香草鹽成個味比平時食開既白汁濃而且香剩係個汁都可以比夠5星不過唔食得鹹既人就唔好叫成個汁比燒肉同切雞淡,但都好鹹當水係0,鹽係5,燒肉係4.5,白切雞係4咁個香草白汁大概都有2.5~3個飯就一般啦,真係一般個種無優點亦無缺點一個飯無缺點係難能可貴,但無優點就有點可悲香係香既,不過好多飯都香啦跟住就到主角牛舌唉同兩年前食既唔同了呢條美式牛唔知係唔係比人吸乾左條舌既脂肪少,咬落去硬硬地似係唔彈牙無筋力既雞鴨腎唔係話好難食,不過有少少失望始終個白汁咁正,應該要用靚舌先襯到我用牛舌換左細y一塊胸舊胸感覺上真心好食過牛舌我諗如果下次再來,應該會試埋白汁龍利可能會有唔用既收獲。ps小弟在此跪求各位指點邊到有好食既牛利飯…Read More

放工約左朋友M同朋友P食飯傾下人生大事朋友P係旺角地頭蛇係到住左十幾廿年同我係旺角食過兩次都係新廣南餐室佢話新廣南岩毒毒既朋友我望場一周係喎全場都係自己一個孤拎拎既阿伯我睇住佢女朋友M係佢隔離再睇下自己隔離個公事包......好彩杯茶仲未來我同P志同但唔道合佢點左份牛利飯($60),應該係跟茄汁或者洋蔥汁個類我轉左個白汁,佢話唔夾豈有此理如果佢有食過神秘既白汁(香草)芝士焗牛利飯而前菜可能係希靈魚沙律佢一定唔係講呢句算我忍白汁牛利簡直係脂肪界既代表先講白汁佢係咁多種跟餐汁最肥既一種因為佢要用到奶油奶油除左奶既甜同鹽既鹹,仲有隱隱既奶脂味所以你會覺得全脂硬係好飲過脫脂跟住牛利就西利啦以前聽人講話牛利脂肪少我問過師傅佢笑左笑佢話愈多脂肪既肉成舊食係愈軟我諗諗下又好似係喎我1X歲同2X歲既肚腩完全係兩回事前者有腹肌,後者得脂肪後尾再搵少少資料先知牛利既脂肪大概係一般牛肉既5倍哇......唔怪得知咁正啦平時我地設計一道菜先考慮調味既平衡然後再考慮要突出咩野味道比如太酸就落糖之類但係處理脂肪類食物就彈性好多因為脂肪味本身好隱晦(除非你舊豬油啪)佢配咩都可以好得意好似鵝肝可以跟一般黑白汁又可以配煮一煮既果汁(果汁同果醬之間既野)奶脂同牛肉脂一齊雖然唔叫夾到絕但兩者係可以互相包溶你中有我我中有你問題:咁瘦牛肉跟白汁得唔得呢?答:唔得,瘦牛肉襯唔起,脂肪唔夠同佢共鳴唔到但係白汁雞白汁鱈魚又OK,因為脂肪夠豬又唔太得,除非係豬頸但係五花腩又唔得,哈,係唔係好亂新廣南餐飯白湯PASS唔特別好凍啡多奶一般白汁牛利飯,恕我先天性偏見正到核爆啊!!!!!!!過多一排再帶大家食其他餐廳既白汁牛利(焗)飯我實行要搵出香港最好食既白汁牛利(焗)飯!!!…Read More

星期六放早比兩件蛋散的左上元朗本身放一點已經好肚餓上到去諗住打牙祭點知又比人夾左上南生圍唉我個肚已經開始準備製造黑洞自我消化玩完一大輪出返來成四點我基本上已經餓到麻痺左是但見到間茶記已經覺得有無限既引力咁我地一行三件就入左呢間「八斗不平凡」一見到八斗兩個字心諗哇你都幾厚面皮,不如改做八寸算啦天下才有一石,而子建獨得八斗才高八斗係用來抬舉好似曹植呢類國寶級詩人既用詞可以拎來自詡既咩?唉反正肚餓,講多無謂食野最實際入到去裝修過得去不過荼記既裝修好多時同食物成反比唔好問我點解,統計既野我唔會明架啦平時去一間唔識既茶記剩係會叫三種野,咁當然係睇心情啦1. 吉列豬排跟薯條2. 正常樣炒飯(唔係福建有汁個類啦總之)3. 招牌特色八斗既招牌特色叫「中國潛艇餐」即刻skip好啦落order個下我點左個吉列豬排跟薯條凍啡多奶($32)細y要乾炒叉燒意粉凍奶茶($39)大y要中國潛艇跟薯條凍ot($32)潛艇來到我即時打個突唔知佢係想扮subway定係日本既炒麵麵包個下真心笑左出來笑到飽因為試都唔想試所以呢個miss大y話ok,不過我唔會信佢既味覺細y個份都似係一般野試左啖,只可以話不過不失好啦最後上碟既係我即刻試條薯條一間茶記既炸薯條可以局部反映間舖有無心做唉,唔夠脆唔夠香即係火力唔夠,油溫不足用長小小既油炸時間來掩蓋佢既軟弱加上fing油fing唔好見到佢下面放索油紙我已經好唔開心跟住就輪到塊排靚既吉列應該要有amazing既金黃色而唔係好似而家咁啡啡地炸食物變啡通常係因為炸耐左準備進入燶之前既一個狀態如果個火夠大,會有以下反應生----------可以食--黃金--啡----燶--炭如果個火唔夠大,就會生------------可以食--------啡----燶--炭同此理,食炒飯其實都只係食個飯有無鑊氣師傅以前同我講話鑊氣係一種修為我查過維基,鑊氣好似係高溫既反應不過無輪我點開恆個火煮都唔覺有鑊氣有鑊氣既飯同無鑊氣既飯一食就食得出舊排唔駛問,都知道唔會好食得去邊啦唯一一樣可以挽回敗局既係凍啡多奶簡單係簡單,荒唔係雀X咖啡同三X奶既朋友料足自然濃而滑雖然凍,凍得來香人工就人工,都叫好飲…Read More

本身今日打算去九龍灣,買本書之後係咁意食個飯好搞唔搞,去到九龍灣商務先知,本書全線得返美麗華間商務有無計啦,劇毒偽文青嗜書如命,即刻飛撲過去我諗就算開書名<<海生月>>都唔構成廣告,皆因全港唯一一本(好似係)已入我袋好啦前話講完,買完書梗係順便食埋野先走是日本身想去油麻地食拉麵,不過為左OT算數,渣渣林係美麗華食完返歸咁叔叔上二樓見到咦「有間拉麵」WOR,仲要無咩人添(可能先7點正常人未放工,哈)一間無人既餐廳代表咩?A.準備打佯 B.無人識食C.間餐廳既廚師唔識煮野食好明顯答案就唔係A啦,我抱住獵奇既心態入去,睇下有無伏可以踩一入去哇真係仲以為佢未開檔,不過有D餐廳7點先開唔出奇好啦入到去,個伙計見我一個人咁毒,梗係比最前個排見到前廚既位我坐小弟以前入過下廚房,如果你個班廚唔係真係見得人,唔該都係匿返埋見得人唔係指個樣,係處理食物既態度我一入到去個前廚位咩人都無,算,我點左份火灸吞拿魚沙律($78)同埋特制什錦豬骨湯拉麵($80)兩樣都係話貴唔貴話平唔平,起碼應該都有正常質素掛咁一個「正常人」叫得SALAD又叫熱野,係唔係應該先上SALAD先呢?落ORDER不足兩分鐘,拉麵到,我即刻O了,哇,都幾快手不過作為一個「正常人」,我堅持等埋份SALAD先食拉麵其實咁等法拉麵好易出事,一來個麵會吸太多湯變霉,二來麵會太重口,因為湯都幾濃下咁我又揭多兩頁書順便望下前廚個SALAD出來未唔望至可一望扯火(有可能係我睇錯,戴定頭盔先)個前廚竟然係頭先SERVE我既伙計(可能係MANAGER)哇你身兼多職到啊,不嬲飲食係廚房歸廚房,外堂歸外堂咁我都算啦,連你偷食我舊火灸吞拿魚我都算啦(因為幾好味)沙律拎出來之後梗係影張相留個念先由於本人係沙律控,沙律上下由菜到肉由汁到醋都比較講究一平安既汁醋係X田或者吉X島可以買到既,其實已經PASS醋酸用來起味,鹹醬味道比較沉(耍太極咁一升一沉)通常幾比幾因人而異,我個人一醋四醬IS FINE點解用醋最大原因係蔬菜清而寡口,要適當「起」個味呢份沙律有抵讚之處,蔬菜處理幾好,比到FRESH既感覺食完好想即刻學劉德華拍返個廣告特別係個半粒TO-MA-TO(讀滔-眯-滔)平時屋企自己食會煎煎佢,再落兩滴豉油但新鮮既TO-MA-TO,識食梗係涼涼地食我完全無後悔到攤凍個拉麵來接TO-MA-TO既青春快感至於舊吞拿魚,怕且係灸個下火力唔夠入面的確係凍,但出面個浸唔夠香一舊肉好唔好食睇3樣野1.最入門係睇調味,即係甜酸鹹(正常唔會用苦)2.睇肌肉紋理(PROTEIN分佈),唔同肌肉唔同玩法3.脂肪比例,又係唔同比例唔用玩法人既舌頭可以食到「六種味」,包括「甜酸」,「苦鹹」,「蛋白」,「脂肪」另外再加隻叫「鮮」既野(其實我跟師傅既時候我估佢都係得個UP)然後又有十幾種「感覺」,包括「脆淋」﹑「辣涼」﹑「漿澀」﹑「鞋滑」﹑「密鬆」再加上「氣味」(太多種),即係你平時食皮蛋個D攻啊剩啊,菜式先會千變萬化。講返舊吞拿魚,如果佢灸得夠大力,而且時間控制到個效果一定係做到表面一圈小小脆,而且會香到痴線人既舌頭同個鼻好吊詭,佢中意有對沖既口感即刻文筆唔多好個班人口中既層次(掛)有咩爽得過可以一啖肉,又有一PART脆又有一PART嫩到咩咁入口個浸氣味,一半係熟肉既香,一半係生魚既微腥不過呢間既吞拿魚我唔多講啦脆應該無,香都唔多覺,當係食幾舊魚生算啦跟住就到拉麵啦(都凍啦)拉面有四樣野睇(請自行無視菜)1. 湯 2.麵 3.蛋 4.肉1.湯OK既,係濃左少少,如果連湯都FAIL間拉麵就開唔成而且個特制湯有個幾特別既味,似係提煉過某樣海洋生物(唔開名費事估錯好樣衰)2. 麵唔講啦因為係自己衰放到霉哂3. 蛋FAIL,比起油麻地灣仔個類,呢粒只係唔熟既蛋,唔係糖心糖心個物理反應係趁蛋入面既蛋黃準備「開始」凝固拎去凍,先可以KEEP到個狀態而唔係煮唔熟中間比佢浪下浪下,可能只係廚問題,三句帶過4. 好啦又來到親愛既肉,老實講,都幾唔好食下圓個舊係叉燒(日),一舊野個舊似係偽東坡肉(唔識叫)日式叉燒總是FAIL,都已經唔係偏見問題唔知點解日本既豬肉食品燒同炸都好好好好好,就係煮唔多掂舊肉鞋唔緊要,叉飯既叉都可以好鞋但係你鞋得來又鬆下鬆下,就變左謝,即係霉既朋友肉嫩滑者可以鬆;肉鞋者一定要硬淨,而且要有「筋力」至於舊東坡肉,無眼睇,豉油太入舊肉已經無左豬肉原本既豬油香閒話已完又係時候OT了OTZ…Read More

一個人係時代等睇夜晚十點場($70),百無聊賴,買左飛唔想落太多層去anxxxxB,又無多餘錢霸氣獨酌紅酒,呢個時代既最低消費恐怕都非星巴克莫屬。由於我知套戲夜上,作為一個劇毒編輯又點會自己一個人用得哂6:00到10:00呢幾粒鐘呢?我只好一開始去希慎買本<<白馬走過天亮>>($87),然後係時代戲院買完飛後落星巴克整杯iced latte:v($37)同整返件blueberry cheese cake($33)。  老老實實,咖啡係熱飲先好,凍啡永遠係伏,莫講話星巴克呢類咖啡便利店,就連L’xxxxx xxx都好難整到靚凍啡。呢個問題皆因人條?遇熱時血管會膨脹,可以sense到更多味道,加上大部分元素(呢個moment係指咖啡因)係高溫情況底下都比較積極彈來彈去,咖啡因本身既味沉鬱,焙(讀背)完煮完個味先會發到出來,包括係苦﹑酸同甘。(由於本人惡酸,苦味會發酸,甜味可以蓋酸,所以只好斬腳指簡隻乳糖比較多既咖啡。)  咁好明顯啦,飲凍啡個時,一來血管已縮,sensibility降低左,再加上低溫之下大部分元素(呢個moment都仲係講緊咖啡因)唔多活躍,其實你飲凍啡,同飲既有小小味道既水係無咩分別,除非人地落好多糖(乳糖又好咩都好)。  之不過咁,由於時間流流長,熱啡只會愈飲愈難飲,因為佢第一啖最熱,攤足兩個幾鐘佢最後就會極難飲(因為有對比),倒不如一開波就整杯凍既算數。(謎:你唔係想影射愛情掛?答:各位可以由第二段重新睇起)  雖則啡要熱飲,但cheese cake凍食又幾好喎,(都係個句啦,星巴克肯定唔夠高檔地方抽,因為佢Design簡單,原材料都唔會用到咩野神奇buffalo mozzarella)有時我地食d本身味濃既食物,凍食岩岩好可以壓到腥﹑沖呢類比較重既氣味,氣味比味道更受溫度影響,當然我完全唔排除世間總有重口味既人,例給個班用芝士來撈丁仲要加多兩粒大蒜,食到個口好似岩岩浪完坑渠水既人。  整體來講,凍啡就肯定fail,不過係我自己?來,舊cake幾好,味道圓滑而唔膩(有d newyork cheese cake 整到實一實以為係寶查實好難哽,真心係kick係喉到哽唔落),藍莓新鮮夠juicy我都已經別無他求,再加上手頭上本散文,呢幾粒鐘算打發得幾愉快,既~…Read More
