平時同朋友捐窿捐罅搵嘢食,揀得日本嘢,講究啲就一定係廚師發辦,隨意啲嘅就一定係日本燒肉~😊今次決定試吓啲新嘢,就係和牛割烹料理😋。顧名思義,就係用來自唔同地方同埋唔同部位嘅和牛烹調出既菜式。去到餐廳門口一睇,完全係好日式嘅裝修,門口旁邊張貼住佢哋係SCMP 2025年嘅top 100餐廳,真係好犀利👍,同埋唔講唔知佢哋嘅日本奈良總店仲係米芝蓮指南嘅餐廳添~🌟入到去坐定定,師傅即刻搬咗一盤好大盆嘅牛🥩出嚟同我哋介紹~當中有宮崎和牛、鹿兒島和牛牛肩背、熟成兩個月嘅西冷仲有澳洲和牛牛舌👅~睇到啲油脂分布都知道質感應該好唔錯~😍1. 葉蓋冷茶碗蒸 係用「神之葉」去蓋住凍蒸蛋,食落真係好有涼快感❄️,同埋入面有北海道粟米,粟米亦都好爽好甜,好重粟米味,同個冷蒸蛋好夾~😌2)炭燒和牛伴山椒、意大利黑醋、翠玉瓜、防風用昆布醃製既和牛嫩滑,外層有焦香味之餘,配合埋黑醋,酸酸地估唔到都幾夾😲。另外,菜式中仲伴有可祛濕嘅防風一齊食用~🌿3)藁燒和牛牛舌伴山葵、柚子胡椒慢煮牛舌再配合埋用禾稈草煙燻,非常嫩滑彈牙同伴隨着濃濃既煙燻味🔥,仲配有山葵同埋柚子胡椒,製造唔同嘅口感,我就鍾意味道較濃柚子胡椒~😌4)和牛牛尾伴葛切、油揚、九条葱用蒸煮嘅牛尾用湯嘅形式配搭好似薯粉質地嘅葛切,牛尾嘅口感非常嫩滑,仲要冇揸~真係剛剛好~👌5)和牛里脊肉他他拌醃黃蘿蔔、海苔壽司呢個真係冇得輸🤩,鹿兒島和牛他他用海苔包住份量相當大件,另外原來仲可以追加海膽配合埋一齊食~一啖真係放唔哂落口~😆6)晴王麝香葡萄拌木綿豆腐、馬斯卡彭乳酪、紫蘇花穗來自福岡嘅晴王,甜甜地清一清油膩感~🍇😊7)炭燒熟成和牛西冷、白桃、水田芥、新鮮黑胡椒鹽漬熟成兩個月嘅西冷,橄欖油調配水田芥,一嚿肉一粒黑胡椒配鹽分,味道濃郁,質感非常,完全食唔停口~🔥🥩8)吉列和牛菲力三文治伴自家製奈良漬他他醬、自家製醬汁宮崎吉列和牛肉肉質嫩滑,配搭鬆脆嘅麵包,完全可以用signature嚟形容,真係好滿足~😋👍9)和牛里脊肉伴松茸壽喜燒大大條嘅松茸配搭埋和牛壽喜燒~估唔到都咁夾喎~🍲❤️10)萬願寺青椒 腐皮 新生姜 炊飯炊飯都有濃濃嘅生薑味道,配埋和牛壽喜燒食都唔錯~🍚👏11)和牛咖喱飯 或 和牛冷素麵 或 和牛丼最後可以喺以上三款揀一款,我就揀咗和牛咖喱飯,又估唔到啲咖喱都幾好食,一滴都唔放過🤣12)自家製 Gelato係雲呢拿配搭乳酸汁仲有白桃肉😋好味道~🍨💖第一次食和牛割烹料理,估唔到完全係意料之外,以後食日本菜式又有多一個選擇啦~😍…Read More

🍣16-18品 香港少有隱世無菜單 Omakase

今年年初試過銅鑼灣加路連山道嘅 -「重房」佢哋嘅廚師發辦(Omakase)真係幾有驚喜✨,菜式同其他店比更加有特色,味道亦較濃郁,所以一直記住🤤仲推介過俾唔少朋友!最近終於再去食,水準依然保持到👍今次都係食晚餐 $1580 set有 16-18 道菜,當中包括唔少稀有食材 仲有分子料理,由於係無菜單廚師發辦,師傅會不時轉換新菜式,所以今次再嚟食都好有驚喜🤩 先付1)水雲蝦肉土佐醋,酸酸地好開胃。之後就係「哈哈螺」配汁煮蘿蔔,好有咬口同埋味道好夾。刺身2)北海道紫針海膽、魚子、深海池魚、蒪菜、海膽鮮味配搭埋一齊,真係有質感得嚟味道好唔錯,個賣相仲成杯雪糕杯咁👍3)北海道牡丹蝦伴夢王蛋醬同埋蝦頭醬,入口味道濃郁質地亦都半生半熟非常唔錯,仲有炸蝦頭亦都好脆4) 岩手県陸前高田配合埋海草酸汁啫喱,紅心芽蔥,質地非常飽飽滿。5)天婦羅烏頭魚配明太子同埋竹碳鹽、用紫菜包裹,真係名副其實嘅外脆內軟。6)靜崗地金目鯛,質地嫩滑配合埋炭香味、口感一流,燒香了魚皮,魚香味出晒嚟,再配埋福崗烏魚子,個賣相都好靚。7)法國麵包載住神戶A4和牛他他,炸蒜、日本蔥、北海道馬糞海膽、法國魚子醬,岩雪鹽,食起上嚟油香一流、口感豐富。8)拖羅兩食,用紫菜包住火炙過既腦天同埋生既中拖羅,本來腦天油份較多,但係中間加埋紫蘇葉就冇咁漏,紫菜仲好脆Tim 熟食9) 分子料理-三文魚下巴,連殼一啖咬落去好香脆同埋個魚油爆曬出嚟,好Juice,啖啖肉又嫩滑,師傅話伴碟紫紫地色嘅係紫椰菜汁,之後佢將檸檬汁混合一起,顏色變成紫紅色,仲有啲似落霞既顏色,都幾靚,真係食得又玩得😄壽司10)日本竹籤魚配柚子胡椒,魚皮燒一燒,魚油嘅出晒嚟11)O-toro配京都五色芝麻碎,配合起嚟感覺反而會冇咁油12)赤貝,加左岩鹽、柚子皮、青檸汁,又爽又彈牙,層層柚子皮香13)北海道銀雪鱈bb魚配黑松露醬14)北海道赤馬糞海膽加少少岩鹽,味道濃郁,質感一流,食完啲海水味喺口腔入面徘徊順帶一提,呢度嘅子姜,同平時出面食到嘅好食好多,多口問句師傅,先知原來都加咗工,唔怪得咁唔同啦🤭湯15)呢個「Signature魚湯」,由30多種魚肉熬製而成,完全冇味精,味道又濃郁又鮮甜甜品16)巨蜂提子作結,果香又濃又甜總結重房嘅 Omakase 水準穩定📈,食材新鮮,師傅設計菜式有心思👨‍🍳,$1580 嘅價錢算合理💰。如果鍾意濃味同創新配搭,值得一試! …Read More

今日放工去開銅鑼灣嗰頭,聽有啲朋友講話喺加路連山道開咗幾個月嘅omakase,叫做「重房」,一於就去試吓新嘢先🤭佢得一個dinner set,包含咗一啲稀有食材同埋分子料理,有 17至18品。1)北海道牛魚加蝦湯配松葉蟹肉,個湯既質地似啫喱布甸2)高糖蕃茄白酒啫喱3)鱈魚白子配埋橙昔蘿蔔蓉,食落一啲都唔腥4)北海道活北寄貝,好嫩滑,D木魚鋪喺面仲好脆5)冰見寒鰤,師傅話一般最靚,最頂級就係呢個12-1月。 將鰤魚係炭爐網上輕輕炙過,造就左煙燻效果,好有炭香味同埋油香味6)小場井蠔,蠔肉好creamy,配埋蜜甘啫喱,甜甜地7)鯖魚,即係馬交魚,加海鹽燒香個皮,好有油香,仲有 芽葱配自家製洋蔥醬,紫蘇花8)拿破崙,呢個真係好特別,底層係呢個慢煮鮟鱇魚肝配 法國麵包,中間加咗塊鱈魚片,個頂就係甜蝦蓉同埋蝦頭膏 仲有炒香嘅櫻花蝦混合埋一起,一啖咬落去,真係好滿足😋9)之後就係呢個吞拿魚兩食,用紫菜包住熟既腦天同埋生 既吞拿魚腩,入面仲有蜆肉再加咗炒香嘅鹽,油份較多,但 係加埋紫蘇葉就冇咁漏,紫菜仲好脆Tim10)天婦羅沙咀魚,質感好滑身,師傅仲叫我哋將檸檬汁倒落 去個碟邊,一邊撈,顏色慢慢由本身嘅紫色變晒做紫紅色, 仲有輕輕嘅檸檬味,個顏色都幾靚,真係食得又玩得😂11)北海道針魚,較清甜12)赤身醬油漬配柚子胡椒,質地出奇地林身又唔散,好 味道順帶一提,呢度嘅子姜,同平時出面食到嘅好食好多,多口問句師傅,先知原來都加咗工,唔怪得咁唔同啦13)深海池魚配搭咗北海道麵豉醬,亦都係用咗炭爐既網 造就左個煙燻效果,濃濃既炭香味同油香,正啊~14)赤貝,加左岩鹽、柚子皮、青檸汁,又爽又彈牙,層 層柚子皮香15)北海道白海膽配法國黑魚子醬,兩者配搭起來,濃濃 既海膽味又唔蓋過魚子嘅鮮味16)拖羅蓉,配搭埋師傅嘅自家製配料同埋今日嘅第一日 京都五色芝麻碎,入口即溶17)最後就係呢個「Signature魚湯」,由多種魚肉熬製而 成,完全冇落糖,又濃郁又鮮甜,仲隱約飲到白胡椒味~18)最後就係呢一個靜岡縣士多啤梨作結 普遍嚟講味道較濃,很適合開酒飲住嚟食…Read More
