平日夜晚的上環特別靜,是夜行經附近,看到寧靜的摩囉上街有點燈光,走近才發現有家燒鳥店。上網一查原來已開業兩年。在門外看到廚師發辦九款串燒套餐連沙律、煮物、烏冬和甜品,加一大概八百左右。原來廚師發辦串燒也有主打內臟,有不少稀有部位如雞喉嚨、雞甲狀腺、雞大動脈和雞掌心等,但不太好內臟所以叫了不是內臟的。在香港吃燒鳥,通常都強調選用日本雞,不過這裡卻主打本地飼養的三黃雞,真的比較少有。和風沙律切成薄薄的蕃茄和爽甜的洋蔥,配上和風酸汁清新開胃。清酒煮蜆。蜆肉大又肥美,湯底以昆布和木魚熬煮帶少量清酒,適合微涼的天氣來暖身,所以不浪費一飲而盡。厚切牛舌,有咬口夠juicy。雞皮燒得夠乾身,香脆得好像薯片。由於雞頸是經常活動部位,肉質緊緻有彈性,雞肉味濃郁越嚼越juicy。比起平常吃到的雞軟骨,這個比較硬身一點。雞翼燒得黃金賣相吸引,雞皮燒得香脆,咬下去雞肉嫩滑多汁有多重口感。燒白鱔肉厚肥美,不過細魚骨比想像中多。豚肉五花腩的肉和脂肪的比例剛好,吃起來不太油膩。不要以為九串串燒聽起來不多,吃到冬菇和秋葵已飽肚,所以厚身多汁的冬菇出現得剛好,加上燒秋葵剛好可以解掉剛五花腩的油膩。結尾雞湯烏冬一上檯就聞到濃郁雞油香,不過配烏冬就略嫌淡口了一點,反而直接喝湯就覺得調味剛好。坊間比較少見益力多雪糕,沒想到微酸微甜也不錯。…Read More

幾年前到過西班牙令人 大開眼界,也喜歡上西班牙菜,今晚有時間就在這區吃一餐。前菜係西班牙白毛豬火腿配焦糖羊奶芝士串同士多啤梨羅勒西班牙凍湯SHOOT。凍湯幾特別飲得出有啤梨同火腿味。真正既湯係西班牙冬季傳統伊比利亞黑毛豬火腿湯配鷹咀豆、黑松露及馬鈴薯。湯汁好杰身,每啖都有超濃薯仔及黑毛豬味道。日式既吞拿魚他他跟日本雞蛋黃搽在多士上,呢樣雖不太西班牙,但濃味蛋黃、吞拿魚蓉跟脆既多士係絕配。煎刺身帶子、慢煮牛面頰、血腸忌廉球配伊比利亞黑毛豬火腿、小蘿葡及紅菜頭蓉。血腸忌廉球可能食唔慣口感一般,牛面頰好軟熟,刺身帶子也鮮甜。飽肚類係澳洲深海小龍蝦及西班牙飯,米飯真有西班牙飯既硬度同香味,飯中有蒜香也有龍蝦鮮味。主打肉的伊比利亞黑毛豬夾心肉跟青醬及油封馬鈴薯,炭燒黑毛豬係好食有炭香,也有濃郁黑毛豬油香,如感到太油也可點青醬可去油膩感,但自己就係想食到油香,所以青醬只係試左少少。甜品羊奶芝士泡沬配迷迭香雪糕跟舊朱古力香橙小吃,朱古力香橙岩自己因夠濃朱古力味。…Read More

新開的Airside有不少新餐廳,今晚跟食友來試試Airside Cafe。Burrata布拉塔芝士入口軟滑,配上蔬果同吃奶味突出。Wagyu Tartare和牛他他跟鬆化脆片很夾。Scallop Crudo淺漬帶子除了帶子鮮甜還吃到柚子的清香。Grilled Prawn Chicken燒大蝦的蝦肉份量不少醬汁惹味。Three Yellow Chicken三黃雞的雞味濃郁,但雞肉處理得嫩滑一點便更好。Beef Cheek 汁燴牛面頰肉,牛面頰肉經過汁燴後入口即化。Lump Crab Strozzapretti 蟹肉手捲義麵上檯,義大利麵偏淋一點,不過蟹肉不少,醬汁的芝味香濃。甜品的homemade pumpkin ice-cream南瓜雪糕夠軟滑也有不錯椰子味,另外的Citrus Creme Fraiche柑橘酸忌廉的柑橘鮮果味很refreshing。…Read More

上月剛去左一轉日本,食左唔少野如壽司刺身鍋物串燒等,但炸物唐揚就不在名單中,咁岩早兩晚食友相約去試炸串,既然人在日本沒品嚐,有時間就去。今晚餐單係「十道串揚」菜單。店家預備了幾款醬汁,包括秘製醬可配肉類、蜂蜜芥辣可配海鮮、鰹魚汁可配魚貝及海藻鹽和柑桔等。前菜三種包括明太子沙律、意大利青瓜配雞肉麵豉醬及慢煮鰤魚。沙律中既明太子落得重手滿口明太子鮮味;鰤魚味鮮肉質結實,而意大利青瓜爽脆跟重口味雞肉麵豉醬很夾。串揚先來炸和牛西冷配黑松露醬串,和牛西冷油香充足,而炸串粉醬夠薄夠貼,不會一咬成塊散開。炸天使蝦串既比常見既牡丹蝦結實。蝦頭部位保留了蝦膏關係,一咬滿口膏香。韭黃雞柳卷串雖比較平實,但雞柳在醬汁加持中食得出有不錯雞味。炸鮫魚串也可以,魚肉雖不算嫩滑但鮫魚在醬粉下仍吃得出濃濃魚味。中場逸品送上口感獨特既黏口自家製麻糬豆腐。再來串揚時間,炸竹筍口感爽脆又帶鰹魚香味。炸金文畢芝士加上店家特製鹽醃櫻花乾是炒品,帶點鹽粒既櫻花乾跟鹹香芝士是估不到的美味。炸帆立貝串看似普通,但炸串上既辛辣檸檬汁有點似tabasco。這醬汁帶出了厚肉帆立貝的鮮味。炸蓮藕明太子串是鮮及鹹香合體。香港店獨家既炸特製冬菇免治肉串上場,菇味隱隱在肉中滲出,比一般既免治肉串吸引。最後炸串三文魚配三文魚籽炸串送上,吃得一口都係三文魚肉及魚籽鹹香。食事中稻庭烏冬軟滑。雞肉茶泡飯在柚子胡椒味道引領下帶不錯海鮮清香。甜點係自家製布甸及軟滑夾餡雪糕。…Read More

美國餐飲巡禮Delicious USA活動不經不覺已舉辦到第四年,今年合作既餐廳多達食31間,當中包括中丶西丶韓丶泰丶印以至素食都有餐廳參與。今晚就來到參與之一既Harbourside Grill,一嚐用上美國食材既菜式。頭盤Pacific Rock Oysters, Maine Lobster Cream, & Dill Oil太平洋石生蠔配波士頓龍蝦奶油及蒔蘿油汁,生蠔睇落唔算好大隻,但食落肉厚口兼口感爽身,加上奶油蒔蘿油汁後鮮味更突出。到了誘人巨型Tomahawk上檯。這個1.4kg既USDA Tomahawk斧頭扒跟上Triple Cooked Chips & Asian Greens薯菜及四款醬汁。有左USDA品質認證既Tomahawk,肉質粉嫩之餘,入口既有濃郁肉味邊位又有油香。 甜品送上Pecan Pie, Madagascan Vanilla Cream山核桃派配馬達加斯雲呢拿奶油,核桃派做得鬆化而內餡亦充滿核桃肉。由2022年9月16日至10月16日,有興趣一嗜美國美食既話,可以來這裡或參閱美國餐飲巡禮內的餐廳資料。…Read More

天氣太熱人只想留在室內活動,今日就在尖沙咀廣東道遊走,晚膳都選在附近,今晚試試海港城海洋中心新餐廳。坐位舒適。八月的日落在七點左右開始,黃昏前後維港海景都引人。 前菜的鰹魚花醉鮑魚酒香極濃,花雕香氣既在空中也在口中徘徊。湯品不時不燉湯帶有上湯及火腿鮮味。加上花膠令湯品更誘人。一蟹兩藝送上皇室焗釀蟹蓋及炸軟殼蟹伴陳醋野菜沙律,兩邊的炸軟殼蟹香酥無渣,中間焗釀蟹蓋內蟹肉澎湃。花膠天白菇菜膽雖簡單,但以嫩菜膽香白菇配以一大片軟滑花膠這組合夠吸引。金沙鳳尾蝦鍋巴夠邪惡,除了鳳尾蝦包滿鹹蛋黃,連下面的鍋巴都沾滿了鹹蛋黃醬。有機會找找三五知己,來個海景粵菜晚宴。…Read More

食友既飲茶group都有好耐冇攪局,既然放寬左社交人數到8人,就搵個大家都得閒既星期六來個茶聚。餐廳位處商埸3樓,前身既法國菜印象中都可以,只是疫情下就算好餐廳都未必留得住。經過幽暗而富格調既長廊後才到餐廳。走過走廊盡頭便見到酒吧、用餐大堂及維港海景。餐具似乎都係精選過既配搭。手工雲吞跟上紅油有點似紅油抄手,但呢個係飽滿版既辣度只是點到即止卻可刺激胃口。頭盤送上精緻既五福臨門。點心既玫瑰燒鵝酥係手工菜,外皮摺層做得工整外,切開可見用料十足及摺皮做得夠薄,咬落口感自然更香脆。瑪瑙蝦餃同海參餃都飽滿,食落都係用料同鮮味十足。櫻花蝦汁炆澳州龍蝦既龍蝦肉已經夠鮮甜,加上櫻花蝦汁既加持其實都幾犯規。桂花烏龍煙薰脆皮雞又係一絕,上檯一刻煙薰香氣撲面而來,雞皮脆薄而雞肉亦嫩滑。即場加入陳皮後,每一口紅豆沙都隱隱滲出陳皮香氣。月光寶盒十分精緻,加上入面既話梅慕絲亦軟滑香甜,呢個寶盒真係唔食甜品既都要點一個黎打咭。最後既百利甜酒蛋撻除左香酥外,也帶不弱既百利酒香甜。除左食物外,餐廳由佈局到餐桌用品都見心思。…Read More

天氣太熱就想起食香口野,今日跟另一半去中環試新既明爐炭火燒鳥。店家主打傳統明爐炭火燒鳥,用上日本白橡木及硬本燒製而成的備長炭為原料,室內空中沒有炭灰卻有著一點點炭火香氣。店家用既黑薩摩雞來自鹿兒島夥伴農場獨家出品。飲過帶濃厚雞肉口味既雞清湯配雞肉丸子後,前菜送上炭燒雞胸肉配烏魚子及土佐產香醋,燒好的雞胸肉有嚼勁帶炭火香,而香醋亦幫忙突出了肉味。日式最中餅配雞肝醬似夾芯餅,中間既雞肝醬十分軟滑又完全冇內臟既腥臊氣味。燒鳥部份先上炭燒雞肩,雞肩肉雖不算嫩滑但肉感更比較實在。炙燒雞胸配三文魚籽接上,雞胸肉吃著有咬口,另爆汁三文魚籽也剛好給雞胸肉帶來一點鹹鮮。逸品來了慢煮雞冠配蟹肉醬,慢煮過既雞冠有點像煮得軟身既厚雞皮,而在口感及油潤感方面比雞皮更勝一籌。燒鳥再來炭燒雞頸肉,雞頸肉入口香脆也感到頸肉既彈牙口感雞心不是第一次食,但眼前既炭燒雞心除了香口也估不到有不少肉汁流出。食過一輪肉類都要吃點菜,野菜類既炭燒茄子配秘製肉味噌很不錯,茄子肉爽軟多汁之餘,香甜既秘製肉味噌也很吸引。中場箸休來了柚子梅子冰沙,可以洗滌一下剛才既各種味道,讓味蕾再從新上路。燒鳥又送上炭燒免治雞肉軟骨串配蛋黃,橙黃既蛋黃看來很吸引,食落蛋香亦十分濃,配上炭香既雞肉及軟骨帶來既咬口,一個人應該弄獨吞多兩三串也不是問題。炭燒雞血管可能係第一次食,雖沒有雞肉既油香但爽脆口感是意料之外。野菜時間送上炭燒時令蔬菜配巴馬臣芝士,燒溶既巴馬臣芝士既香口,跟意大利青瓜既清甜多汁反差既大但也很夾。食燒鳥點可以沒有雞翼,炭燒無骨雞翼真係為懶人而設,每一口無骨既燒香雞翼皮加油香都係享受。最後一款既炭燒雞腿肉,其實鋒芒有點給剛才既無骨雞翼掩過,不過雞腿肉既紮實口感係其他部位沒有的。食事點了招牌雞湯拉麵,拉麵幼身像廣式雲吞麵既幼麵,吸收了超熱的雞湯後,拉麵既沒變淋反而食味卻大增。甜品是自家製布丁及wasabi口味雪糕,布丁軟滑而雪糕真的充滿wasabi香辣,而且是越食越辣的,喜歡wasabi既人應該會覺得十分過癮。今晚既出品包羅湯品、前菜、燒鳥串燒、蔬菜、主食及甜品,以雞隻的不同部位呈上獨特既割烹風味,放養環境下既黑薩摩雞油脂分佈均勻外,肉質也細膩。…Read More

日本菜中懷石料理較多人熟悉,而出現在江戶時代的會席料理其實也有其特定內容如菜式包括前菜、生魚片、燒烤、燉煮,油炸料理和醋漬料理等,今晚就到月山品嚐一晚會席料理。此店乃位於尖沙咀既東京米芝蓮餐廳日山之姊妹店,店內裝潢、雲霧效果跟燈色都給人一股日本漁港及日式舟屋既感覺。店家既自家出品日山醇米大吟釀入口清爽。前菜先付係梭子魚一夜干、筋子及素麵,一夜干既魚肉帶點鹹香,筋子食落爆汁而素麵滑溜也帶柚子香氣。椀物係松葉蟹配鱈魚白子,蟹肉係預期內既鮮甜,而樣子不算討好既白子其實十分軟滑。向付即刺身送上金槍魚、海膽及牡丹蝦,金槍魚厚切口感很不錯,海膽雖然可能不在當造日子但仍是夠鮮甜,不過份量不少既牡丹蝦食落既鮮甜度比起海膽也不落下風。煮物係北海道赤鮑配山椒肝醬,赤鮑煮得夠淋尤其係邊位,應該用左唔少時間處理,沾上山椒肝醬同食鮑味更突出。燒物日山A5和牛,真係今晚既邪惡大佬,未食已聞到油香,食落油香在口中更濃烈,此和牛其實係日本百年老字號和牛鑑定「日山肉舖」之出品,難怪質素咁好。揚物係北海道柳葉魚,柳葉魚係香港唔算常見,11月係柳葉魚盛產季節,今次食到有點幸運成份撞正水尾有得試下。其魚味不算濃郁,但炸漿十分貼薄又完全不油可見炸工出色。酢物係醋漬九州北寄貝,北寄貝當然食過,但醋漬係第一次試,醋漬過既北寄貝感覺醋漬味主導了整個味道,鮮味都有點被掩蓋。御食係九州雞湯素麵,素麵麵身雪白兼口感幼滑,配上濃郁雞湯,最後也是碗底朝天。甘味即甜品,送上不少人最愛兼甜度夠高既北海道赤肉蜜瓜作結。…Read More

放假既日子多左時間,今日可以過海搵食,係行山前去QRE既扒房試試Dry Aged既魅力。新位處23樓既好處就係可以望到背後既翠綠山景。麵包跟上味噌口味既牛油,食落味噌香味十足。頭盤既Daily Fresh Sushimi Ceviche食落很日式刺身feel,如果再加多d酸汁就更有南美ceviche既感覺。另一個頭盤Steamed Blue Mussels送上,澳洲青口夠大隻亦肉質鮮美。主菜之一叫左medium rare既Belgium Dry Aged 35 days Sirloin,出黎色澤吸引,肉汁都不少而食落軟熟,不過可能因為食得太慢,隻碟既熱力將最底既西冷煮熟左變成medium,食落口感差少少。另一個同樣叫左medium rare既US Dry Aged 25 Hanger Steak,就咁睇未知如何,落刀一切裡面同樣火喉對板,食落肉味更濃郁,相信係Dry Aged左25日既功勞。最後既甜品由Roasted Soy Flour Cake及軟滑Tofu Ice Cream作結。…Read More

自己對荃灣不陌生,間唔中都會入去食飯行街。今晚就到新開既Ikigai Concepts試一試Omakaze廚師發辦。餐廳地方真夠大,大到可分成廚師發辦區、備長炭串燒區、和食料理區及清酒專區都完全唔迫夾。而清酒專區就令人大開眼界,清酒販賣機提供近30多款清酒任君選擇。除左用餐區另有和式風情零售專區售賣時尚日式用品。晚市由$780起,廚師發辦區都係一排高檯圍住廚房 令所有人都可以睇住大廚即握壽司。先上既開胃小菜中既海膽豆腐無渣味濃,水雲既有益而微酸口味十分開胃,最後食既鱈魚白子既無腥氣亦入口即化。到了壽司上場,左口魚淡味但肉質都有點咬口,而石垣鯛既厚切令肉片入口感覺很實在。熟成7日再加上三星漬既寒鰤魚肉質較鬆軟,而三星漬既鹹香亦帶出左魚既鮮味。跟著送上既深海池魚肉食落肉質夠緊緻,係另一種口感享受。容易帶點腥味既赤貝,今晚呢片食落冇所講既問題也夠彈牙。壽司飯上既鯖魚雖好似薄左一點,但魚味卻是食到呢一刻最突出既一種。再黎既熟成7日今次係赤身,入口完全無渣,而軟熟口感可也是熟成既效果。跟住既又係口感軟熟既赤鯥魚,不過經過輕炙後油香滿溢令人回味。既然已開始入秋,又點可以少左當造既肥美秋刀魚。吞拿魚鮫本已經係肥美之物,又再輕炙後油香再一次撲面而來。筋子既魚子同薄膜一同放上壽司飯上,而筋子夠大令壽司飯如同隱左型咁,而入口爆汁既感覺真心正。最後就係令好多人都十分掛住既北海道根室海膽,食完令人更有衝動想飛去北海道狂掃一板板既海膽。當蒸蛋、湯品及甜美蜜瓜食過後,今晚的廚師發辦正式完結。下次人在新界西北,想食壽司都唔一定要飛出尖咀或CWB走咁遠。…Read More

今晚去三原鐵板燒。原來大廚以前係日本駐美國芝加哥領事館擔任首席家廚。螢光魷魚入口鮮甜日式蒸蛋蛋漿好滑。西冷油花好靚燒好後加埋配菜同食,入口油香十足北海道銀鱈魚朴葉味噌燒上檯,銀鱈魚肉既魚油飽滿,食落油香滿口,再沾上味噌更可突出魚油香。輪到香燒原隻大海虎蝦跟意粉,意粉吸收左大蝦汁更惹味,蝦肉亦彈牙。燒好既特選宮崎A4和牛西冷肉質粉嫩而外面香口,而油香同肉味都令人好滿足。蒜蓉炒飯米粒分明,而炒飯雖然冇乜其他配料,不過飯香已夠吸引。布甸同意大利芝士蛋糕都可以一吃。 食鐵板燒一般都去市區,而家係將軍澳都食到似樣既出品。…Read More

香港天氣太熱, 有d日子真係冇胃口食飯, 友人提議來食辣,心想都好就找一日幾個人到來.既然夠多人就先叫下頭盤試試.蔥油伴青笋入口清甜.貴妃葡萄凍凍地幾爽口.陳醋肴肉既陳醋部份很香比肴肉更好.夫妻肺片辣度正常, 試過食一d太油既出品, 呢個唔會入口食油多過食牛肚或牛脷.近排多左人鍾意食牛蛙, 今晚都有人想試就叫左饞咀牛蛙, 牛蛙果然夠大隻夠多肉, 食落蛙肉跟辣味都夾.講到而家最火熱既菜式一定有酸菜魚, 餐牌果然有秘製酸菜鱸魚就叫黎試下, 湯汁夠酸辣而鱸魚片算滑, 而將魚片同酸菜一齊食真係幾好幾惹味辣子雞就一般, 加左脆麻花但可惜唔夠脆, 辣子雞就上粉太多, 自己鍾意冇落粉既版本多d.香辣美容蹄既蹄肉一咬夠骨肉分離, 即煮得夠火喉, 如果蹄肉可以同辣汁一齊煮耐少少吸多d辣味會更好.呢個夏天似乎都有排熱, 應該唔少日子都冇胃口, 呢個位置都算方便, 所以應該重會再回頭食多一兩次.…Read More
