聞說這裡的烤鴨水準在香港數一數二,參照北京「長安壹號」的做法,更將當地的烤鴨工房照辦煮碗帶到香港。由師傅、烤製方法等等都忠於原著。今次便藉著自已大壽的藉口。來這裡取取經。順便也磨練一下用葡萄酒配塔這烤鴨的技巧吧。今次點了兩款類型的葡萄酒來配塔烤鴨的不同部份。第一款我挑選來自意大利的 Prosecco Extra Dry NV,此款汽酒果香輕盈,氣泡量充足亦有著適量的酸度。另一款則是來自澳洲 Hunter Valley 的 Point Noir 紅酒。這款酒比一般 Burgundy 的 Point Noir 更帶點剛勁。紅醋栗的柔和香氣包裝下,卻帶著果醬般較為濃郁的甜美。擁有適量的單寜和十充的酸度。先來頭一道小食 - 薑芽手拆臘鱈魚。味道咸香,油脂濃郁,魚肉緊緻。配酒方選用 Prosecco Extra Dry NV. 也可順利帶出魚肉的鮮味。北京烤鴨的第一食的第一部曲是鴨胸皮。厚度簿如一張紙,入口酥脆即溶。建議食法會配上砂糖直接享用,帶出油脂的酥香。配酒方面今次選用 Prosecco Extra Dry NV. 氣泡襯托起鴨皮的酥脆,酒內適量的糖份亦可做到砂糖的效果,適量的酸度亦可中和鴨的油膩感,更同時讓鴨油的酥香和酒的果味同時提升,互相輝映!北京烤鴨的第一食的第二部曲是鴨胸肉。直接食用的話入口柔軟,味道略為清淡。建議食法會配上甜麵醬,青瓜,大蔥和麵皮一起享用。為了增強鴨肉的風味。配酒方面今次選用澳洲 Hunter Valley 的 Point Noir 紅酒。讓鴨肉蘸上甜麵醬後再配塔享用。甜麵醬會為缺乏油脂的鴨胸肉重新找到了和葡萄酒配塔的平衡點,讓鴨肉的味道更為濃郁突出。是我認為今晚最有驚喜的配塔!北京烤鴨的第一食的第三部曲是鴨腿肉。直接食用的話入口緊緻有彈性,油脂豐厚,肉味濃郁,鴨皮亦烤得甘香酥脆。建議食法會配上甜麵醬,青瓜,大蔥和麵皮一起享用。配酒方面今次選用澳洲 Hunter Valley 的 Point Noir 紅酒和鴨腿肉直接配塔享用。讓鴨肉的酥香味道更為濃郁突出。北京烤鴨的第二食是炒鴨鬆。讓片後餘下的鴨肉再加上配料快炒面成。建議食法會配上生菜包好後食用。配酒方面選用澳洲 Hunter Valley 的 Point Noir 紅酒和鴨鬆直接配塔享用亦有提升鴨肉風味的效果。北京烤鴨的第三食是鴨湯。味道非常清淡,但不時又隱隱若若帶有鴨酥的香味。是為食過烤鴨後消除油膩感的過場良品。鳳梨山楂雪糕為今晚劃上完美的句號。…Read More

香港拉麵狂熱的始祖之一

要說香港現今拉麵狂熱的其中一個始祖,不能不提這一間「魂」拉麵店。小店充滿了日式的風情。日藉老闆兼師父坐鎮,配上嬌俏可人的老闆娘負責做公關,還有穩定有品質的拉麵,自然引來這裡每天都大排長龍。今次點了這裡甚具特色的「太極拉麵」。湯底是以豬骨湯底為主,再加上墨魚汁混合炒香了的豬脂而成。豬骨和脂油的香味非常濃郁卻不帶黏糊。配上這碗麵中甚具特色蟹膏,讓這湯底的鮮味提升了一個極高的層次!蟹膏上的金箔亦為這碗拉麵帶有畫龍點睛的效果。麵條使用曲身的中型麵,不粗亦不幼。選擇硬麵條的咬勁十足, 沒有鹼水味,掛湯能力亦好。但由於湯味道濃郁的關度便蓋過了麵條的味道。叉燒肥瘦適中,但未算入口即溶,只能說合格有餘但未有太大驚喜。至於這裡的玉子做得很棒,蛋黃亦夠溏心。但可能這湯底比較味道比較濃郁,相比下溏心蛋顯得有點不夠味。今次等了約壹個小時吃這一碗拉麵還是值得的。非常推薦大家來這裡朝聖!…Read More

爐火純青的純豚骨湯拉麵

遠赴日本學藝的香港人Albert為了完成自己的夢想,在香港開設了以純豚骨湯底為主打的拉麵店。今次點了最基本的「焰拉麵」。湯底十分濃郁且充滿了豚骨湯應有的鮮味,口感幼細綿密亦不帶油膩。難怪有日籍的拉麵師父也大讚這裡的豚骨湯底做得十分出色!但由於是純豬骨湯的關係,若渴到最後便會感覺過於單調。為了令這上好的湯底增添色彩,我便使用這裡所提供的原粒蒜頭經壓成蓉後再加進麵裡,再配上拉麵附上的香蔥,鮮香味立即提升了一個層次!這裡使用的是博多拉麵中常見的直幼麵。選擇硬度一般的麵條咬勁十足而且掛湯能力極好,可惜麵條的味道卻有點不夠突出。叉燒的肥瘦部份層次分明。外表烤得略焦,使得叉燒更加甘香美味。玉子需要另外點的,並跟拉麵分開上。嫌不夠熱的話便需要立即放到湯中加溫。玉子的味道滷得剛好,不太咸亦不太淡,蛋黃也夠溏心。這裡的燒物和唐揚(炸物)的價錢十分平易近人,而且有相當的質素。若想嘗嘗濃厚的純豚骨湯滋味,我十分推薦這間拉麵店給大家。…Read More

「鐵拳浪子」為主題的拉麵店

這間拉麵店是以紅極一時的漫畫「鐵拳浪子」中的主角-矢吹丈為主題。今次點了期間限定的魚介豬骨湯曲粗麵和直幼麵(雖說是粗麵,但我認為這只屬普通的粗度)。兩款都點了硬質麵身,幼麵的掛湯能力極好,麵質也比曲身的粗麵彈牙。豬骨湯的味道極濃,質感濃稠卻不黏糊,但略嫌過咸。魚介粉的味道有小許魚腥。而且加上大蒜後卻被它完全蓋過了湯的味道,讓湯和大蒜夾起來的味道有點不夠合拍。值得一讚的是叉燒腌得非常入味和軟冧。雞蛋滷得不錯,也夠溏心。可以一試!…Read More

香港實在甚少有東京「二郎系」拉麵的身影,其最特色之處是,麵多配料多,高如一座「山」。今次點了「混亂全部入拉麵」。湯底使用濃稠的豚骨湯為主打,但缺乏豚骨湯應有的鮮甜味道。即使加上蒜蓉和芝士粉亦未能和豚骨湯有和諧及互相提升味道的作用。牛油和「背脂先生」(豬背脂)亦無法把湯的味道和香氣昇華到另一個層次,反而令整個湯底增添幾分油膩感。使用坊間不常使用的闊身扁麵條,個人認為這挺硬身的麵條沒有足夠的彈性,掛湯能力亦不足。叉燒的肥瘦部份分明,口感和味道亦不錯。雞蛋亦夠溏心,但味道比較清淡。大量清淡的炒芽菜和栗米是整碗麵最矚目的部份。但芽菜本身有大量的水份,跟湯一起吃的時候就會把湯的味道變淡。栗米使用牛油烹調過,所以非常香口多汁。可惜總括來說,這是一碗份量十足,卻失去整體和諧的拉麵。…Read More

鹿兒島A4和牛拉麵暨豚雞骨魚介拉麵的湯底都非常清爽而不油膩。但幼直的麵條卻欠缺彈性。溏心蛋的味道和質感都是無懈可擊!隨和牛拉麵附上的分子泡沫更是亮點所在。烤過後的和牛及叉燒入口即溶,但也未免太簿了吧...這裡的小吃又是另一亮點,京蔥拖羅脆餅、脆炸海老餃子及魔鬼魚唐揚都非常出色。這家小店值得推薦給喜歡清爽系拉麵的朋友。…Read More
