所謂精緻晚餐(fine dining),重點其實在於閒情。有了時間和閒情,你才能 mindful 地讓嗅覺和味蕾去感受每一度菜的味道。今晚既有閒情,也就即管精緻一下吧。頭盤是新鮮椒鹽鮑魚及紅海藻水耕菜沙律配芝麻醬及紅酒醋。這個配搭相當和諧。用少許椒鹽將冰凍鮑片的鮮味點了出來,加上鮮嫩的海藻和蔬菜配以芝麻沙律醬,引發了對之後幾度菜的期望。跟著的法式黑松露炒蛋,看來簡單,卻正是廚藝的真正考驗。蛋的生熟程度處理得恰到好處,不生不硬,上面的黑松露不僅是一種點綴,而是毫不喧賓奪主地帶出鮮蛋的香味。餐湯我仍然是捨棄了法式龍蝦湯而要了黑松露蘑菇湯,倒不是著迷黑松露,而只是想喝蘑菇湯。不用說這個配搭是渾然一體,相得益彰。主菜我要了香煎美國安格斯肉眼配紅酒燉牛面頰肉,配燒汁。將兩種完全不同處理的牛肉放在一起,竟如此自然地對照出彼此的特色!太太要了北海道帶子、大蜆、海蝦及魷魚,法國頂級康堤芝士忌廉汁,配以法式火腿牛角包,竟無意中跟最初的頭盤互相呼應,接續著海洋美食的主題,發揮得淋漓盡致。最後的甜品我要了焦糖燉蛋,太太則要了朱古力心太軟吉士,傳統的口味,一貫的水準,如此就完結了一頓美好的精緻晚膳。在服務上扣了一粒星,是因為上湯的時候溫度略為不足,想是預備好放了一會才拿出來吧。…Read More

限聚以來,規例太多,總是提不起勁上食肆試菜。今日乘出城之便,讓太太帶我去旺角波鞋街附近的 The Forest 試試她最近去過的新式泰國菜館。可能是生意太好,人未到齊竟不能入座,且限定個半鐘頭內交枱。我們兩個人先來個話梅番茄芭樂熱情果沙律開開胃。沙律剛放到枱上,便已飄來百香果和芭樂石榴的清香,再加上浸過話梅粉的去皮番茄,胃口確實為之一振!惹味拼盤雖是一般傳統泰國小食,卻也做得中規中矩;尤其是那烤雞肉和豬頸肉,燒得恰到好處,香而不膩。最後加上飽肚的荔枝龍眼牛肉紅咖喱配以油酥手抓薄餅,可謂汁都撈埋、片甲不留。看來以後是要多一點出動了!…Read More

音樂會之前解決晚餐問題,沒有地方比大會堂美心餐廳方便。本來是想去二樓的美心西餐廳,各自修行,毋須顧慮他人口味,也緬懷舊式西餐的風味。可是疫情之後,西餐廳仍然重開無期。反倒是三樓的美心皇宮搶先如常運作,放眼所見,也大概有七、八成人客。例牌的油雞叉燒就不說了,今次值得推薦的是蟹肉薏米燴金瓜和金菇瑤柱炆鮮竹。首先是南瓜浸透在蟹肉薏米的湯汁中,鮮甜入味;金菇瑤柱炆鮮竹就更是香濃惹味,若非潮流興「低卡」,三碗白飯是完全沒有問題的。飯後嘆兩杯香濃普洱茶,差點兒誤了入座的時間!…Read More

潮流興 fusion,一般也只是兩溝,譬如京川或京滬。這稻成打足京、川、滬三個番號,是不是 ambitious 了一點?首先「有料」前菜是一碟豆,據說是豌豆,是我在任何單一地方菜館未食過的,盛惠15,加兩位茶就是47,再加一服務費就差不多是100。難怪現在好少人再俾貼士。首先失策的是這店的招牌菜是酸菜魚,我們卻懵盛盛叫了個水煮魚,這實在是不可饒恕的疏忽。這水煮魚除了稍咸之外,魚肉尚算新鮮。相比之下,那個瓦屋山龍炒手(紅油抄手)卻又淡得出奇,皮厚而不軟滑,乏善足陳。小籠包雖未見突出,卻也尚算鮮美。至於炸饅頭和腐皮卷,亦算及格。比較特別的是我們以一酌六花茶代替甜品,很有下火涼茶的味道!…Read More

梅窩最短缺的,其實是比較像樣的食肆。鬼佬餐廳不算,比較有名的是德仔記與福聚來,勝在比較通風開陽,口味其實也是一般。在碼頭旁邊的冬菇亭,比較突出的是在單車路旁的「幾好」。它在裝修風格上比較不那麼「大排檔」,菜式也比較幼細,加上有幾款手工啤,也吸引了不少稍為講究的街坊食客。今晚叫的其實都只是家庭小菜:蒸烏頭、椒鹽鮮魷、沙茶牛肉粉絲煲、小炒王和啫啫通菜,除了口味略為偏重,也算是中規中矩。埋單時反映口味偏咸,伙計即解釋重口味較宜飲啤酒,一般晚飯的話,可以在下單時說明,廚房會作適度調校。這有待日後印證。…Read More

本來只是貪方便上意粉屋開餐,勝在味濃而一定飽肚。碰巧今天他們出了一個新菜單,有幾個菜還有八折優惠,其中竟然包括德國鹹豬手!看著菜單上的賣相不錯,也就和朋友叫了個大蝦意粉、芝士焗菠菜和德國鹹豬手。芝士、意粉這些指定意式食品也就不再多說了,那德國鹹豬手確實是有點驚喜!外皮脆而且薄,有點泰國脆肉乾的味道,入口芳香鬆脆,完全沒有趙到牙軟的問題,裏面的肉質卻仍保持鮮嫩。我敢說甚至比起 King Ludwig 也有過之而無不及!走的時候,還帶著大半隻剝了皮的豬骨回去剝肉煲粥!…Read More

I must admit that if not invited by a friend, I could not even imagine myself considering Napel cuisine. But having been there for the first time, it was actually not as bad as I thought. We had some samosas and veg pakora as starters, which obviously were a bit too much for starters. The pomfret Masala (with onion and tomato sauce) was really a pleasant surprise. Unfortunately the lamb rack tandoori (marinated with Himalayan herbs) was a bit too dry to appreciate its exotic taste. The best of all, I would say, was the Indian chicken curry that went with the original and onion taste nan!
