不可原諒的缺失

今日並非假日,廣東道上仍是人頭擁擁,而一風堂的客人卻不多,非旦不必輪候,店中有還半數「吉」位,顯見盛況不再。想當年曾在日本打工,對拉麵道亦稍有涉及,並非純外行人也!先論湯頭、確是大量豬骨及雞骨熬製,味道濃旭!但除此以外再無佳作,湯味稍咸但各人口味不同難有定論,叉燒烹煮過久失卻彈性口感且自然解體,是一不該!配菜比例過少,偷工減科失卻平衡,是二不該!麵尚未入口已覺刺鼻鹼水味,是不可原諒的缺點,日本拉麵為了增加口感,故在製麵時添加鹼水,但煮麵的鍋要不斷加入活水,而麵亦要過清水以去除鹼味,這是一般小麵攤都不應犯的錯誤發生在一風堂這等級的連銷店,品管顯然不足,算是不可原諒的缺失!…Read More

晚上八時到達,雖不必等太久,但也坐滿,至九時後才有吉位出現,遊客不算太多,只有兩桌。蛇湯每碗從70元漲至85元,幅度超過20%,雙人套餐漲至470元,若選擇蛇湯每碗另加12元潤腸滑雞煲仔飯漲至120元,得獎的子薑豆醬魚雲煲漲至155元,雙腸飯最低價每碗要價45元。而且蛇湯(實在不能稱為羹)中的鮑魚絲也快絕跡了。外賣的潤腸和臘腸則維持每斤200元,突顯煲仔飯的漲價不合理雖然食味還保有水準,但性價比讓人難以認同,唉!…Read More

若時光倒退回30年前,我不會感覺得龍有何特別之處,以地區性食肆而論,其知名度不算響亮,我大概會選擇鼓油西餐而不會專程來吃雞。但如今香港成了亞洲美食之都,食肆林立,平面與電子資訊泛濫,選擇更多元化,但我月內二度光顧,只為了一隻雞。香城無處不賣雞,蒸的; 煮的; 炸的、烤的、絞爛後塑形再炸的,但都只見其形而失其味,只能說具雞之名或具雞之形而無雞之味,不禁讓人疑惑科學是否已進步至能用有機物合成肉品,能讓大般不知其味亦食而甘之?月內二度光臨得龍唯一翻灼的只有古法太爺雞,雞太爺亦沒讓我失望,其香、其味、其嫩並無二樣,我知道我在吃雞,我確定我在吃雞,而不是像雞的物體。這雞與數十年前我吃的雞沒有差別,現在還能吃到肯定是雞的雞實在是一種幸福。除雞以外,山渣咕嚕肉亦甚為突出,其食味亦高於某茶聖名店所產者,暫時已嚐過的咕嚕肉中仍以此為最佳。蒸魚腸內藏芋頭,有灌水之感,魚腸份量稍覺不足,仍有改善空間。焗桶蠔個人覺得酒味稍重,掩蓋了蠔的鮮味(也可以是以酒味來掩護沒鮮味的蠔)。椒鹽魚鉸與嗜嗜芥蘭都有相當水準。而個人所愛首推雞太爺也!…Read More

有眾多好評的長發麵家,在openrice的地圖顯示有一些錯誤,真實位置是耀新街近南昌街這端,而不是靠石硤尾街。既然是大牌檔,自然在外觀、清潔、招呼各方面,符合大眾對大牌檔的印像,不會期待驚喜,自然也不會失望。眾所周知長發的麵是外購,有相當明顯的梘水味,若食檔的主事者略加注重,是否能找尋到較理想的貨源,或是基本上大路貨色已無法要求,還是愛吃不吃隨你的心態使然,若是這樣也無話可說了。這次只嚐了豬手撈麵,有三大魂,火候還可以,亦有些許南乳味道,若說非吃不可似乎過譽,只能說高於一般水準,事實是一般水準太低所以特顯出長發優於他人。本地食肆數目不斷增加,而食物水準卻沒有因競爭而提升,一些經營多年的老字號,能堅持當年的水準而勝出,到底是個人的進步還是整體的退步?還可以嚐到值得一吃的豬手是一種幸福嗎?…Read More

在連續兩頓飽食之後行經過福榮街,發覺添好運門前竟然沒人排隊,一番天人交戰,幾度思量,終於屈服於星星的魅力,決定再戰一回合。雖然沒有人龍,但仍是高朋滿座,只能順從安排於入門第一桌,受骨納所限,一杯清茶,淺嚐三客點心如下:蝦餃,一籠四粒,size略小,外皮淺十褶,未見聞名的18褶絕技(這是耳聞回來的並未親見),餃皮彈性缺乏,應是太白粉略多的結果,內藏形似蝦子的物體與少量筍粒,沒有豬肉或肥肉,口感亦是類似海產類,但卻沒有半點蝦子應有的味道,至於鮮味只能在紀憶中尋找了。天地不仁讓吾人之味覺飽受化學品之催殘至此。繼之而起是排骨,共七小塊,從骨骼切面可以想像到驗屍單所寫,屠體是在被冷陳狀態下被初割。:(燒賣皇,外形既非特別雄偉,又何能稱皇?難道是置於燒賣上的杞子視為紅寶石,球石頂也只是個親王身份而已!內含香菇、豬肉與形似蝦子的物體。:(若說點心豪無味道也不盡然,非常明顯的是咸味,非常之咸,比在嚐過的任何一間茶樓的同款點都咸,超乎一般點心應有的咸味之上。極度感謝站家以2元的茶錢而能無限量供應茶水,解我於倒懸之苦恩同再造也!!如果米之蓮神探是吃過同樣品質點心而給予一星殊榮,則我認為香港的各家粵式茶樓皆應得到這一顆星星。唯一興幸是沒有虛耗排隊輪候的時間,否則槌胸的力量會更大。…Read More

此店外觀並不顯眼,入門右方是放置已烹調食物的展示架,廚房在店的後方,地方不大只有五張桌子,15人應是容納的極限。家庭式經營,我認為店主沒有很大的企圖心,裝潢簡單,只有一份沒圖片的餐牌,如果把客戶定調在旅港的泰國人,餐牌並非必須品,假如要多吸引本地客光顧,則這點有加強的必要。以食味而論,在我嚐過的本區泰國餐館中,包括那些耗鉅資裝潢的高檔泰菜餐餐,這不起眼的小店是最接近泰國當地原味的一間,與那些為遷就港人口味而大幅改良的港式泰菜有相當大的差別,可能這就限制了客源,也許店主是宗旨是以道地的家鄉味來慰藉泰國遊子,卻吸引不了只能接受改良泰菜的港客。旅泰的遊客可能光顧過建興,卻小有機會品嚐一般平民化的餐館,而本店給我的感覺卻保有泰國一般小餐館的風味,我感到唯一與在泰國光顧同類形館子的差別是食物的份量明顯增多了。希望小店能繼續經營,讓喜好正統泰國口味的食客不必再受改銀泰菜的摧殘。單打獨鬥只點了一飯一湯,入門時看見一鍋煮好的豬雜,臨時起意點了酸辣豬雜湯,豬雜固然料足實在,而湯更非以東蔭醬膏稀釋,而是以南薑、胡椒、香茅、辣椒、酸子熬煮而成,以魚露調味,具有多層次的滋味,喜愛泰式原味者值得一試。…Read More

數十年老朋友的聚會,散居港九新界各地,能找到適中的地點是沙田。由於不能訂位,只有早到佔位置,老友重逢不在乎食物品質,只要能相聚一堂閒話家常便能盡歡。餐廳離鐵路站6~7分鐘步程,但標示不明缺乏指引,應有改善空間。但相較於商場的人流擁擠的食肆一位難求,輪候時間太久,這反而能吸引不在乎食物品質的客人。餐廳樓下是婚姻註冊處,亦方便新人或準新人宴客餐聚,全場客滿在於位置的優越而非其他。如同一般粵式酒樓,午市供應各款大路點心與粥粉麵飯,以常物質素而論沒有驚喜,甚至難給與合乎一般午準的評價。腸粉、蝦餃、帶子餃皮厚味薄,山竹牛肉鬆散而無肉味,腐皮捲火候不足無酥脆口感,蘿蔔糕、馬拉糕、炒飯、炒麵也只具填飽胃場的功能。繁忙時段工作人員顯然力不從手,不過態度尚可,並未遇到惡形惡狀的對待。綜合而論地點是優勢,食味並非經營重點。…Read More

與長輩擇地午膳因塞車隨遇而安,就選了這家。胃納有限只點了兩菜一湯。先上的鹵鵝肉配掌翼,火候算掌握不錯,初入口尚可但細嚼後咸味浮現,若不配搭粥飯便無以為繼,偏份量卻不少。最後宣告棄筷投降了事。紅燒大鮑翅,要價298一客並不算貴,份量亦足,相信每客都有標準重量,因為鍋內除排翅外還發現一片小金勾。可惜發翅未足口感扁硬,湯底濃稠但味道偏淡欠鮮,少了讓人喜悅的感覺。沙爹牛肉芥蘭,沙爹味濃香味亦足,芥蘭爽脆,可惜牛肉被化學品弄揉攔只虛有其形,為了滑嫩而棄真味,只能說不知所謂。當然為了生存而填飽肚子,食也無效!…Read More
