今日朋友請食生日飯,我當然就不客氣了,我揀了位於sogo隔離的澳門逸園中心的虎鐵鐵板燒。餐廳裝潢以木為主要材料,簡潔乾淨。我們被安排坐於大鐵板前,可以近距離欣賞師傅㕑㙯功架,係一件賞心樂事。有數款dinner set, 我們就點了$780的海鮮餐。沙律菜新鮮,水果茄清甜清新,配上沙律醋,很醒胃。海膽新鮮鮮甜,和黑松露醬一起吃,味道層次頓時提升。流心蛋沒有蒸過熟,蛋味濃郁,蛋白非常滑溜師傅首先將洋蔥炒香,銀雪魚亦稍稍煎香,魚皮被煎至金黃色成薄片,煎的過程要不斷壓平魚皮,使魚皮更薄身香脆,真的非常考功夫。魚肉放入紅色小煲中再滾熟,魚肉雪白嫩滑,正!鮑魚鮮活,size 有掌心咁大,厚身。以牛油煎香,火喉剛好,質感爽脆不帶韌。伴以蟹肉海苔醬汁,很正呀!大大隻的海老和廣島蠔。生蒜,熟蒜,櫻花蝦,煙肉,洋蔥,蔥花爆香,蒜香味濃,非常惹味,味道層次豐富。廣島蠔直接在鐵板上煎至金黄,蠔肉變得乾身略帶煙韌,滿滿蠔香。蝦肉脆身爽口,火喉剛剛好,最後淋上蝦頭的蝦膏汁,好甘香呀!白酒煮,煮的過程可以見到火焰飛舞,很吸睛白貝肉質嫩滑。湯帶點微辣,挺特別炒飯粉粉分明,亦不會炒得很乾身。飯上面鋪上白飯魚苗,香脆可口
