韓國炸雞熱潮流行了已一段時間,而韓式炸雞店仍然開完一間接一間,不少韓國品牌店亦已進軍香港市場。最近筆者在旺角就試了一間以手工炸雞聞名的餐廳,品牌在韓國經營手工炸雞專門店已有多年的經驗,據説現時在韓國已有50多間的分店,實力應有著一定的保證,試過以後發覺果然跟一般坊間吃到的確是有所分別,難怪在韓國有No.1手工炸雞之稱。位處旺角兆萬中心,乘電梯到11樓,甫開門已見到一個吸睛紅唇招牌映入眼簾,店內以灰色為主調,配上亮麗的燈光和充滿動感的韓國流行歌曲,加上有幾位年青韓籍型男店員坐陣,滿有年輕活力的感覺。餐牌設計繽紛精美,內裡印上了每款菜式的圖片,非常吸引,而當中有些款式更是香港限定的,例如乳酪窩夫炸雞和棉花糖作料炸雞就是較特色的兩道。我們先點了脆炸軟殼蟹作前菜,軟殼蟹裁得大大件份量十足,咬落去非常香脆,外層脆皮薄薄而均勻,肉厚鮮味,一點也不覺油膩,蘸上伴碟的酸酸甜甜醬汁,添上類似泰式的風味,更覺可口。跟著便是此店的招牌菜手工炸雞,這裏的炸雞以混合多種新鮮蔬菜及香料的傳統浸泡方法醃製達48小時,使雞肉變得多汁入味,再以人手輕輕拍上薄薄的乾粉炸脆,外皮不會太乾太硬,入口外脆內嫩Juicy。而我們

而我們選的大邱辣醬炸雞,共有5種辣度可選,以配合客人口味。我們選了第3級辣度,心想應該不會太辣吧。店員將炸雞端上來,炸雞外層已裹上一層薄薄的醬汁,入口外皮微脆,不會滿口粉漿,味道甜甜辣辣,食落不太油膩。雖只是第3級辣度,卻是意想不到的辛辣,,一向以好辣見稱的筆者,也深深感受到那灼熱的口感,這種不是一般的香辣,辣度十分強勁搶口,讓筆者吃到滿頭大汗,據店員透露,這個炸雞的辣醬是大廚特別調製,較外邊一般的辣醬辣上一截。溫馨提示一下,如大家要挑戰這裡的辣雞,最好從第1-2級開始試一下,才慢慢晉級,以免辣到不能入口!

芝士排骨,每次見到這些芝士菜式,定必不會錯過,店員先將芝士溶漿倒在鐵板上用火爐煮熱,跟著將芝士拉絲捲著已燒製好的排骨,整件排骨包滿了厚厚的芝士,只是見到也心動。排骨入口酸甜鬆軟,佐上軟糯的芝士,味道濃郁,味蕾迅間已被芝味填滿,口感豐盛惹味。。

最後我們還加了乳酪窩夫炸雞炸雞一般都是鹹食,想不到這店在炸雞面層撒上酸酸的乳酪粉,底層還用上了窩夫墊底,賣相十足甜品一樣,雞件香脆中帶酸甜,窩夫鬆軟但因欠缺了糖漿感覺較乾身,點上隨碟乳酪汁又好像不太夾,個人意見在窩夫上加點蜜糖可能會好一點。整體配搭感覺頗特別,但味道只屬一般,一試無妨。

飲品方面我們選了西柚特飲及柚子味韓國清酒,西柚特飲入口冰涼,酸酸甜甜,十分適合佐著炸雞一起飲,開胃解渴;而柚子味韓國清酒,酸甜酒香中帶著淡淡柚子味,較一般韓國清酒淡口,味道不俗。

以獨特手工炸雞作招徠,炸雞果然是別具風味,質素是較一般的為佳,其他的食物質素和服務態度也都不錯,順帶一提這店每張枱上也設有呼喚鐘,一按下即有店員回應,十分貼心,加上價格定位也算合理,難怪惠顧當天雖為平日晚上,卻還是高朋滿座,手工炸雞的魅力實在不容小覷。
