To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 和朋友相約日本菜小店Omakase,壽司11貫優惠後每人不用$440。小店在上環永樂街,只有9個位,附近有其他小餐廳,競爭頗大。我們7點到達,已經滿座。來過沙律和蒸蛋後,充滿期待地迎接第一道壽司。整個晚上,師傅用心介紹每款壽司的特色,讓我不得不細心記錄下來跟大家分享。第一道是石燒鯛魚壽司。製作時多加油和Wasabi,肉身部分較爽;滿意。接著是墨魚壽司。墨魚用豉油輕輕燒過,味道比起魷魚濃郁,較爽身;加點青檸汁,滑溜之餘添加一份清新。岩手縣帆立貝,撒上加了竹炭的鹽,以更好保留貝肉的鮮味。左口魚皮邊,連飯一起燒,可以讓油分浸入飯團;加上少許柚子皮、蔥和辣椒蘿蔔。魚入口即溶,味道較淡,但口感幼滑。日本神奈川竹絲魚,又叫梭子魚。火炙、加芝麻,魚質比較厚實,魚味較出。第一次試銀鱈魚BB,香港一般的冰鮮銀鱈魚由歐洲入口,而這種幼嫩的BB比較少用,肉質嫩滑,加上麵豉醬和Wasabi莖部調味,鹹香較重,非常特別。熊本深海池魚,簡單地只加Wasabi 、豉油。油分減少,魚味更出。島根池魚,體積較深海池魚細小。大吞拿魚腩的筋,師傅解釋,是味道之所在,多咀嚼可釋出味道;感覺香、甜。北海道馬糞海膽,又稱黃海膽,

最後的麵豉湯清甜細膩,甜品柚子雪芭,質感細滑,柚子皮苦澀清新,很喜歡。

這裏沒有高檔的餐具和裝修,甚至整個晚上都只用同一款碟子,也沒有什麼擺碟。廚師細心講解、製作過程認真、店員服務專業,已經讓我為這次體驗而動容。
