又來捧許美德師傅的場!他是一位很可愛的前輩師傅,常笑咪咪的,我係「阿龍」啊 👋🏻在柯士甸「西九粵曲中心」的「滿樂中菜」,之前已和同事來飲過茶,相當悏意,起初我也不知道這位米芝蓮星級人馬除了掌管「百樂」之外,也同時來「滿樂」坐鎮呢。今趟是吃晚飯和大菜。我喜歡這裡除了傳統潮州菜外,也有其他巧手中菜選擇。吃潮州打冷時我必叫的小吃「椒鹽九肚魚」$78易做難精。中型九肚魚起骨,下調味略醃,沾薄粉漿炸脆兼保持肉滑,最後撒的椒鹽也沒有過火,香口極,啖啖肉,配喼汁吃尤佳:「胡椒陳皮焗奄仔蟹」$188奄仔蟹,也叫「處女蟹」,是已經性成熟卻尚未交配的雌蟹。它好吃之處,不僅在於蟹肉甜,還有它的蟹膏不像一般成年膏蟹那麼硬,是香滑細膩得多。一揭開蓋,胡椒香撲鼻而至。它用瓦煲,放入新鮮胡椒串、陳皮、調味和原隻大奄仔,乾焗至熟:烹製出的蟹肉,帶淡淡的鹹,蟹膏水份收乾不似清蒸軟綿,卻滿有胡椒微辣與陳皮香,彷如一位「叛逆女子」,柔中帶剛,有性格而不單調:「淮杞花膠燉螺頭湯」$248 足料得極度誇張!這樣一大窩,滿滿的湯料,矜貴在只剩約三碗濃湯,不甜才怪:湯料扚出來,軟雞腳和厚肉螺頭片,沾甜豉油吃,又可以是一味餸:「招牌
