廚師發辦]當你對日式料理有一定程度的認識時,食過不同的壽司、刺身,就會慢慢對食材有要求。今次,就是同友人來鮨文,食生日飯之餘,亦一試被稱讚很不錯的OMAKASE開在黃埔的這間鮨文,地鐵站一出就睇到,真是方便!服務員送來熱茶和 Menu,預先已訂好了Omakase $1,850/位期待三文魚子蒸蛋(配上現磨wasabi)外表好似平平無奇,三文魚子不腥很易入口,粒粒爆汁!而表面的wasabi是現磨!再黎是:鮮活北海道毛蟹已經處理好的蟹好乾淨,再加埋毛蟹蟹膏,過癮!櫻煮八爪魚是經過數個小時而煮成,煮得軟腍的,旁邊的是有點嗆辣的特制wasabi,可以配著食,也可以不用加什麼調味。特別一提,師傅介紹這道時,說這八爪魚之所以叫櫻煮,是因為必須在控制溫度的技巧下,用秘製醬汁將八爪魚慢煮成櫻花般粉紅餐前小吃有子薑,蘿蔔、牛蒡,十分豐富。漬物有助開胃之餘,又可以慢慢食。開始上正菜!蜜柑鯛-新鮮,有微微蜜柑清新味九洲黑鮑片,之後再用鮑魚汁配飯,鮑魚汁很濃郁,配上日本米,立即中和了鮑魚汁的濃味肥美魚肉刺身,用白煙蓋住上一開蓋白煙慢慢升起後,才慢慢看到這粉嫩的魚肉一邊食一邊睇住師傅工作。師傅的手勢真是很讚~!

之前睇過介紹其實白海膽因受精而顏色變淺的紫海膽,
肉質特別嫩滑而水分重。

海膽杯絕對是今晚最期待之一

賣相絕對一流,見住師傅一排一排甘疊上去,真是影不住要影!
形狀很好,最後用蝦尾作頂,有創意。 海膽入口即溶。
