與友聚舊,選了一間火鍋店「胡爐」邊烚邊談。這間「胡爐」位於食肆臨立的百樂中心,繁忙時間排隊乘電梯的人龍一度長至耀華街。幸好餐廳在三樓,可步行樓梯直達。餐廳的玄關正門位置設置了一個酒櫃裝飾,擺放了多個著名清酒酒瓶。用餐區以高身間牆板作區間,能為食客保留一定私隱度。 是晚的湯底是「鮮椰青雞鍋」,店員先把鮮佐料拌勻炒香,再倒酒點火引味,最後加入椰青水及上湯。在淥煮生料前可先嚐一兩口椰青雞湯,口味帶甜,並洋溢輕輕的椰青清香。多吃兩口雞,能吃得出一份稚嫩感,但雞味只屬持平。 肥牛是火鍋的必食項目。這碟「極上手切肥牛」賣相食味評分一般,近 $400 一碟個人覺得偏貴了少許。「白鱔片」用料新鮮,但建議留意切片方法以減碎骨數量。 「黑松露蟹肉餃」能清晰呈現黑松露及蟹肉的味道,不俗。 「芝心墨魚丸」及「牛骨牛汁丸」做工吸引。前者流心彈牙,後者牛味濃香富層次,讚! 「蔬菜拼盤」內含四五款不同的菜蔬,二人分享適合不過。 「胡爐」的火鍋用料達標。只是人少吃火鍋普遍有人均消費偏高的通病,影響了抵食評分。
