今次食的是北角"潮樂館"的潮州美食。自家制手打魚蛋及魚片是大鱔肉打做完的,不與外面的魚蛋太多粉及實,燙又清無油食蛋旦點可以少了辣椒醬,他們有兩款自制辣醬,而我試完了比較鍾意有瑤柱也個。即食即包的九菜餃,好多九菜,燙又清無油鮮甜的蠔仔粥,蠔又肥美,廚師說用了20幾種材料做粥的,味道與別不同 ,是真材實料的潮州的主菜鹵水併盤~有蛋,鴨舌,五花腩,豬頸肉,豬手,大墨魚,鹵蛋,豆腐,大紅腸,鵝腎.....好多齊選擇。但我鍾意食鴨舌及豬手軟淋淋,入口即融,仲有好多骨膠原。 自制的咸酸菜,甜甜酸酸好開胃清燙腩汁蘿白,我見每一枱都會食,所以也點了,蘿白不會有渣及苦味,又吸收了腩汁的甜又淋,而蘿白不是切出來,而是挑出來的,廚師說這樣才入味及好食,我地食完全碟的蘿白我見間離枱食凍蟹,好好食咁,但太飽,等我地下次試下先(價格是約HK500-600)我覺得廚師好用心思去自制一些醬料及小食。
