To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 年頭在東來順開年之後,事隔差不多半年再次重臨,今次憑著搞手認識大廚之關係,讓大家能夠品嘗東來順菜單以外之菜式,究竟,在京菜館吃淮揚菜,會是什麼一回事?出席人數多達八十人,而搞手亦隆重其事,一身盛裝出場.相比小弟每一次主持大局,無論是酒店內的中菜廳,或窮鬼牌檔局,也是牛記笠記上陣,睇怕下次我再開局的話,要著住"踢死兔"出場了.看看那張格式如一的A4紙自製菜單,好像找不到一點京味在內.果然以淮揚味道為主.未上頭盤之前,先吃著搞手為大家製作的小吃,是燻蛋jelly凍.將已燻好的蛋放在Jelly內,很有創意.不是出自大廚手勢,也做到如此水準,值得一讚.因為已有燻蛋,所以頭盤八星報喜之中,再沒有燻蛋在內.這八粒星分別是金陵鹽水鴨,西湖糖蓮藕,淮安脆黃鱔,上海素烤麩,杭州燻桂魚,杭州燙乾絲,舟山海蜇頭,寧波黃泥螺.在開年局中吃過金陵鹽水鴨,同上次來比,今次味道不夠咸香.西湖糖蓮藕一味夠甜,甜魔遇上它一定開心.揚州燙乾絲可以做得幼細一點,乾絲下的醬油味,與出前一丁即食麵內的麻油相似.舟山海蜇頭,都話明係海蜇頭,自然爽脆可口.上海素烤麩要手撕才是正路.用刀切就失卻原有的風味了.淮安脆黃鱔上碟時仍帶點熱

看看那張格式如一的A4紙自製菜單,好像找不到一點京味在內.果然以淮揚味道為主.未上頭盤之前,先吃著搞手為大家製作的小吃,是燻蛋jelly凍.將已燻好的蛋放在Jelly內,很有創意.不是出自大廚手勢,也做到如此水準,值得一讚.

因為已有燻蛋,所以頭盤八星報喜之中,再沒有燻蛋在內.這八粒星分別是金陵鹽水鴨,西湖糖蓮藕,淮安脆黃鱔,上海素烤麩,杭州燻桂魚,杭州燙乾絲,舟山海蜇頭,寧波黃泥螺.

在開年局中吃過金陵鹽水鴨,同上次來比,今次味道不夠咸香.西湖糖蓮藕一味夠甜,甜魔遇上它一定開心.揚州燙乾絲可以做得幼細一點,乾絲下的醬油味,與出前一丁即食麵內的麻油相似.舟山海蜇頭,都話明係海蜇頭,自然爽脆可口.上海素烤麩要手撕才是正路.用刀切就失卻原有的風味了.淮安脆黃鱔上碟時仍帶點熱,所以香脆,但口感頗空.多味前菜之中,最好吃的是黃泥螺.帶有濃郁酒香之餘,螺肉更鮮.其實,在九龍城新三陽,也能賣到現成貨,味道差不多.

頭盤之後,同桌眾人對菜式反應麻麻,有人說:{一變成Mass production,真係差左好多.}

品嘗主菜之前,先上一大盅太湖大鰱魚頭湯,呈乳白食的湯底都幾鮮,用魚去煲湯,很難不鮮甜.但魚頭本身味道有點腥,湯內的荀亦不夠甜.

喝罷魚湯便上主菜,先上一碟清淡的清炒河蝦仁.七個字:無蝦味,肉質霉散.醬燒無錫肉骨頭,味道濃甜,入口鬆化,做得很入味.但鄰檯其中一位朋友說兩者各自各精采.莫非每檯菜式水準不一?

大家在早前也領教過,海景軒的"神"級富貴雞,在東來順的富貴雞,名叫"杭州塘泥富貴雞".外型一貫成個石頭,之前的鹿鳴春或海景軒的飯局,當富貴雞一上場,便惹來大批龍友來拍照.這是開飯其中之一種文化."開光"之後,打開荷葉,便看見雞裏其實內有乾坤,有大頭菜,菇絲等材料,整體來說,雞肉尚且嫩滑,但醬汁味道太濃,吃不出有荷香味.同一隻富貴/乞兒雞,還是海景軒做得最好.

上海紅燒東坡肉,一盅一小件上,賣相精美,一人一盅可免卻大家分不到豬肉.用肉眼去看件東坡肉,肥位晶瑩,同瘦位涇渭分明.食落又並非一回事.肥位的確肥美甘香,但瘦位就很粗很硬,醬汁的紹興酒味太搶,完全蓋過醬汁的甜味,有點喧賓奪主之感.東來順有一道得獎名菜"鶴湖蟹影",用蟹粉來做主角.是夜沒有鶴湖,但有蟹影- 陽澄湖蟹粉豆腐,是全夜最差的一道菜,蟹粉的味道很腥,而且更咬到碎蟹殼.簡直離譜.雖然現今未踏入吃大閘蟹的季節,也未致於差到如此樣子?在酒店級菜館吃著這個臭蟹,喊面要乘三.

上海醬油炒年糕,是上海粗炒的味道,由麵轉成年糕,換湯不換藥.東來順荵油餅,有厚有薄,年頭來飲茶吃過薄荵油餅,印像不錯.今次就自然吃回薄荵油餅.聽小漏漏講過,在香港的荵油餅大多是厚版,好像東來順的薄荵油餅,比較難找.

抱著期望來品嘗餐牌以外的菜式,事後的感覺大約是:{下?乜咁架乍?}.可能要集中火力做一兩圍,才能夠吃出應有水準.一開幾圍,便難去控制水準矣.

菜式水準無疑是強差人意,但是夜的氣氛如聯歡晚會,最後更有抽獎遊戲環節,在場每一位參與者也樂在其中.証明一個飯局之中,氣氛是不可缺少的一環.就算食物失準,氣氛方面可以補救.

結果,這個本來是喊面的食評,拉平至OK面.
