To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 「容記小菜王」在深水埗區一向享有不俗口碑,自該店結業後,老闆容哥豹隱一段時間之後,不久前在太子重整旗鼓,東山再起。這一晚,我便與太太前往,到容哥的新店捧場。 雖然餐牌中有不少容哥的拿手好戲,好像「容哥第一嘴」、「容哥鐵板原條茄子」、「天下第一雞」與「招牌沙拉骨」等,當中最吸引的仍是容哥最享負盛名的「脆皮燒腩仔」。化名為「揚名國際燒肉」脆皮燒腩,大的賣 $168,細的就只是 $78,這夜我只得太太與我一起用餐,細的已經足夠。 這細燒腩份量一點不少,足有12 件之多,排得齊齊整整的燒腩仔肥瘦比例均勻,由頂至底層層相間,皮和肉清晰可見,外皮香脆非常,咬下去卜卜有聲,肉汁澎湃,肉味甘甜,如果滿分是十分的話,就算不給十分,九分或九分半絕對走不掉。 「金蒜蒸龍躉件」($168/例牌)味道甚好,魚肉蒸得火候剛好,入口滑而不嚡,又是另一水準之作。 「容記小炒王」($88)材料挺多,韮菜花嫩而無渣,腰果脆而不腍,加上蝦仁、蝦乾、魷魚、彩椒等物,份量十足。這菜式味道雖稍稍偏鹹,佐飯仍佳,要是配以啤酒的話,更是如魚得水。兩盅足料靚湯「蟲草花煲雞腳」味道不錯,濃而好喝,才 $38一盅,已是物有所值。

這夜的我,雖然吃的菜式不是太多,但每道菜式,都有中上水準,尤其是那簡直可給滿分的「脆皮燒腩仔」,更是沒有可挑剔的地方。難怪用膳當天,整間店舖全場滿座,看來識貨的知音人可真不少呢!
