之前和太太來飲過茶,品嚐過這裏的點心,甚有好感,特別是這店的流沙包,真是非常懷念,所以這晚特地訂位,好待一家人共同分享美食。為免老爸太晚回家,準六時到達,就開始點菜開餐,當然一早預訂了美味的明閣流沙包作為甜品,而臨場就點了五餸一炒飯,六個人食,最初還怕不夠食,結果卻是人人都飽到捧着肚子走。明閣八小碟,黑椒牛舌,夠淋夠香,入口鬆軟,略輕的黑椒味剛好蓋過牛舌的羶,但卻同時帶出牛舌的鮮味,達致美味香濃的標準;百靈菇,揀選了菇身中段部位,炆淋切成方粒狀,醮上日式芥辣醬油食,入口滑而爽口,噬落有點像海棉般榨出汁液,味道十分鮮甜;椒鹽炸豆腐,其貌平凡,但咬落就外香內滑,味道清淡,卻有濃濃的豆香味;叉燒,算是夠軟淋,但可惜太瘦,個人喜歡略帶半點肥肉,可教這店一向以注重健康和合適老人家用膳見稱,所以叉燒也不帶肥;四喜烤夫,入口味道濃郁,但略嫌汁醬遍甜了一點,口感淋韌有噬頭;手拍青瓜,口感爽脆,味道略帶半點醋酸而清香,是極佳的餐前小食;海蜇,用麻油略為撈過,入口清爽,在淡淡中散發着半點幽幽麻香,真令人食慾大增;豬腳仔,鹵得非常入味,同時皮下脂肪被處理得近乎完全消失,入口鹵水味香濃,豬仔腳口感皮爽肉淋,滋

送上檯時廚房未有在表面灑上黑魚子,經理發現到,立即指示店員送回廚房處理,極具水準的管理由此可見一斑,海蝦與圍蝦的分別就是海蝦的爽口彈牙是無法代替,正如此菜的海蝦,入口鮮甜彈牙,混入黑魚子,味道更見鮮美,加上嫩滑的炒蛋白,口感上確有多番變化,既爽亦滑。

基本上賣相已相當搶鏡,上檯時火熖烘烘,待應交待要待火熄滅後才打開錫紙品嚐,當打開錫紙後,聞到醬汁味道類似醬燒骨一類,外貌也跟醬燒骨差不多,入口味道香濃,紅酒經過燒煮後,散發着濃濃的酒香,入口味道偏咸但略帶甜酸,肉質口感鬆軟,有噬口的同時肉汁也豐盛,就只是味道偏咸半點而稍為失分。

椐稱是得獎菜式,做法用黑松露和馬蹄混入免治雞肉內打勻成膠狀,再以類似煎魚鬆餅的方式原件煎好後切方件,底墊一件南瓜上檯,確實是一道功夫菜式,食時如整件入口,咬到的南瓜是比較硬身的口感,而上層的雞肉件就有三分似日式免治雞肉棒的和三分像香煎魚餅的口感,而味道也有點像日式免治雞肉棒,但更具黑松露的香,味道清爽香甜。

外表與普通叉燒炒飯差不多,內裏加入了鵝肝,入口多了一份香味,也不覺肥膩,炒飯夠乾身,口感甚佳。

其實這天到明閣食晚,最終極目的就是要食他們的流沙飽,,他們的流沙飽能真正做到"流"的感覺,入口味道鮮美,飽身鬆軟,口感綿香軟俱全。
