野川拉麵元朗店牛舌豬頸肉真係無得頂!講起野川,好多人衝住佢哋個濃湯拉麵去,但識食嘅老饕入到元朗分店,實會先點兩樣嘢:「厚切炭燒牛舌」同「秘製燒豬頸肉」!唔係誇張,食過真係返唔到轉頭㗎~ 厚切炭燒牛舌:咬落去會「跳舞」!一上枱就聞到陣炭火香!師傅專揀牛舌芯位,厚過手機殼,表面燒到微焦帶脆,咬落去呢——外脆內彈牙,肉汁多到爆出嚟!最驚喜係個口感,唔會韌到扯牛皮咁,而係「啵啵聲」爽中帶嫩,好似塊牛舌喺舌尖跳舞!簡單撒點岩鹽同黑椒,已經帶出濃濃牛香,食完一塊即刻想encore!秘製燒豬頸肉:邪惡得嚟好高級!以為豬頸肉平平無奇?野川嘅版本絕對係「心機作」!佢哋用秘製醬汁醃過夜,甜中帶微微蒜香,燒到邊位焦脆似薯片,中間保留豐腴油花。一啖咬落去——脆皮「咔嚓」聲,裡面軟嫩爆油香,肥而不膩!最正係面頭嗰pat自家調芥末蛋黃醬,微辣解膩,同油潤豬頸肉夾到震,食完連竹籤都想舔埋!趁熱食! 燒物一凍咗油香會減分,上枱5分鐘內KO係王道。
